Old Québec can be a little hard on the wallets of budget travelers. Try the restaurant’s rendition of a milkshake, or lait frappé, spiked with Baileys, Kahlua, or whiskey if you are in the mood for something stronger.

When you tire of swimming with the fishes, dry off with a short walk to the historic site of Fort St. Catherine. Its eastern location makes Tobacco Bay a prime sunrise spot. Located along the island’s western side in Southampton, Church Bay is a local favorite for snorkeling. Tucked into a small cove within cliffs of coral, the reefs are close to shore and offer lots of small hiding spaces in which to discover tropical sea life. Just watch out for the jellyfish. Youngsters will enjoy exploring the tidal pools formed by the many rocks. Forget to pack your snorkeling gear? No problem. Fortunes and friendships change quickly in D.C., but the Dupont Circle Hotel has yet to go out of style. Set right on the roundabout itself, the eponymous hotel assumes a place of pride. Within, the site’s Martin Brudnizki–designed restaurant, The Pembroke—with its coral velvet banquettes, marble tables, and expansive outdoor terrace—has birthed a scene. Thanks to its location around the corner from Embassy Row, everyone from tony locals to visiting diplomats gather here to enjoy its mid-Atlantic-inspired menu, while the walnut-and-brass-clad Doyle is a whiskey bar fit for Ireland (home base of the Doyle Collection).

The 327 sleek guest rooms take similar advantage of their surroundings, most with large windows overlooking the circle. Upstairs, Irish designer Clodagh refreshed the penthouse suites, where spaces for relaxing include deep soaking tubs and private terraces with sun loungers. Clodagh also redesigned the lobby, which has the look and feel of a high-end apartment, thanks to details like a cozy fireplace and a look-through bookcase with brass accents. An often overlooked fishing village located just 10 miles south of Negril, Little Bay’s small, crescent-shaped shores and white sands will tug at your inner beach bum. There are a couple of local guesthouse options in these parts, and not much else happening within walking distance—except a slice of daily Jamaican life and some sea activities such as kayaking and snorkeling off the nearby reef. Bob Marley loved Little Bay so much, he had a house here and wrote lyrics from this beach. It’s an easy day trip from Negril and a nice spot for shutterbugs.

Kalk Bay Expresso is just one of several coffee shops in the quaint seaside town of Kalk Bay. The repurposed train car, which dates back to 1914, sets this restaurant apart. The cafe serves both sweet and savory crepes, making this the perfect stop for a mid-morning or afternoon snack en route while driving to see the sights on the rest of the Cape Peninsula.

Not all the fun happens below the sea here. For fun atop the water, head to Lac Bay, the largest bay in the ABC Islands (Aruba, Bonaire and Curaçao, for the uninitiated). Kayaking through the resident mangroves, you’ll see all manner of birds and fish—particularly if you rent a glass-bottomed kayak. Meanwhile, the combination of consistent trade winds and sheltered shallows makes for some of the world’s best windsurfing—even if you’re new to the sport.

A popular and new cultural attraction in Montego Bay, the Rastafari Indigenous Village offers a fun and insightful day of Rastafari history, music and food to anyone interested in immersing and learning about this unique group. The day begins with a hike to the village, reached by spelunking across a river, and a medicinal plant tour. It continues with various activities, including culinary demonstrations of Rasta “Ital” or organic, vegetarian dishes, drumming circles and stories on the evolution and struggles of Rastafari culture in Jamaica. It’s an easy reach—about 20 minutes from Montego Bay—and a good pick for those short on time.

It’s a weekend ritual for my cousin and his friends to pop into either The Loading Bay or Origins Roast right next door for breakfast. With a gorgeous view of the mountain, both cafés have coffee to die for and stellar food. This particular beauty of a breakfast was from The Loading Bay; banana topped with walnuts accompanied with creme fraiche, served on top of toasted rye and drizzled with honey. Both venues are open for breakfast and lunch; the Loading Bay is also open for burger night, on Thursdays, served with their famous fries (sprinkled with truffles).

In 2008, chef Olivier Roellinger stunned the culinary world by shuttering his famous three-Michelin-starred restaurant to focus on more relaxing endeavors. This was good news, however, for guests of Château Richeux, his picturesque hotel in St-Méloir-des-Ondes. Set on a cliff overlooking the sea, the 1920s villa offers views of Mont St-Michel across the bay, and a serene space where guests can completely unplug.

Without TV or Wi-Fi, you must find entertainment in Château Richeux’s elegant, antique-strewn interiors and beautiful grounds, complete with terraced gardens and a blind for birders. Relax in one of 11 sophisticated rooms with ocean vistas, cozy up in an armchair with a hot toddy, or linger in the living room over a book about the region. Come dinnertime, book a table at the hotel’s singular Restaurant La Coquillage, where Chef Roellinger’s mastery is on full display in dishes of local seafood, produce, and spices. A breakfast of homemade pastries on the ocean terrace is another rare treat.

A marine sanctuary in northwest Maui, Honolua Bay delights snorkelers and surfers alike. The right side of the bay boasts dense, showstopping coral that attracts vibrant fish, while the shallower left-hand side features lava caves, archways, and sea turtles in the summer months. Come winter, some of Hawaii’s most beautiful barrel waves start peeling around the point, drawing only the most experienced daredevils. Note that fishing here is forbidden and parking can be tricky—visitors often have to park along the cliffs and hike down through a magical, Robinson Crusoe–type forest to the rocky shoreline. When approaching the bay, watch for mile marker 32. Just past it, you’ll find stairs down to Mokuleia Beach.

At Mosquito Bay Beach—also known as Starfish Beach—on Vieques Island in Puerto Rico, you’ll find tons of colorful starfish. While the beach itself is small, it’s still beautiful and perfect for a scenic walk. You won’t get bored searching for sea creatures in the water.

This is a peaceful spot to land when you want to soak up the tranquil breezes off the Chesapeake Bay. Head down south and enjoy a quaint stay in this hopeful little town still showing forth the glory of its historic roots. Grab a bicycle from the Hope & Glory Inn’s bike stand and head on over to their namesake vineyard. Taste a few of the delicious wines and dine at the Inn’s restaurant where the grub gives ‘country’ food a new meaning.

With its domed greenhouses of epic proportions dotted across some 100 hectares (250 acres), the sustainable Gardens by the Bay are educational and fun. The Cloud Forest is a misty, 42-meter-high (138-foot-high) “mountain” that re-creates tropical highlands; visitors use ramps to explore around and through them. A biosphere of Mediterranean and desert plants, including huge baobab trees, makes up the Flower Dome. Outdoors, guests walk on suspended walkways between steel-frame “Supertrees” that are covered in solar-powered lights.
