While the original owners were focused on growing cotton, their great-grandsons, who now own and operate the property, turned the 350-year-old farmhouse into a luxurious boutique hotel, complete with 15 guestrooms done up in lace-print wallpaper and elegant furnishings. All rooms feature marble bathrooms with walk-in rain showers and balconies with epic valley views, while superior options also boast outdoor Jacuzzis. Three additional suites even include original stone walls, columns, and Maltese tiles, plus extras like a separate seating area, free-standing bathtub, and decorative fireplace.

Elsewhere in the hotel, guests will find a rooftop pool with scenic vistas and an indoor-outdoor restaurant and bar, which serves a large breakfast spread each morning, lunch a few days a week, and dinner nightly. Holbox is becoming more and more popular, thanks to its chill vibe, powdery beaches, and relative privacy compared to Tulum. Among the island’s best places to stay is this family-run retreat, just a few blocks from the shore. Here, the unique geometric design features 12 whitewashed, thatch-roofed cabanas surrounding a flooded central deck-cum-pool. Each room opens directly onto a private plunge pool that connects to the main one, creating the feeling of an overwater bungalow.

Guest room interiors are carved from sustainable cedar wood, lending a rustic air that melds perfectly with Holbox’s laid-back, eco-conscious atmosphere. There’s not much in the way of furniture beyond a few shelves and a bed clad in organic sheets, but that helps keep the focus on the fragrant cedar. Lodge rooms can accommodate up to four; suites feature sliding barn doors that separate the bedroom from the living area, which includes a queen sofa-bed and cast-iron fireplace; and large one- and two-bedroom hillside villas can fit up to six people. The onsite tavern serves the same impressive menu as the restaurant but in a more casual setting, plus there’s a bar in the pool area for sandwiches and snacks. There’s also a huge game room with billiards, shuffleboard, and a climbing structure as well as nightly s’mores by the fire.

An antidote to hectic modern life, Travaasa Hana, on Maui’s remote eastern coast, feels like a step back in time. There are no televisions, radios, clocks, or air-conditioning (ceiling fans and panoramic sliding doors capture ocean breezes) in nearly all of the 70 cottages and suites, but you won’t miss them. Your days will be spent soaking up Hawaiian culture, whether that means fishing with throw nets, making traditional ti leaf leis, or enjoying an open-air ukulele lesson. Of course, no visit to these parts is complete without a journey along the legendary Road to Hana, which lies to the north and west and promises primordial views of waterfalls, gardens, and secluded swimming holes. Upon your return to the resort, savor the fresh-caught specialties at the Preserve Kitchen & Bar, overlooking Hana Bay.

This Palm Beach resort lets type A vacationers make the most of every minute of their trip. For adults, the jam-packed roster of activities ranges from cardio kickboxing and archery to salsa workshops and lessons on how to make your own aloe scrub. Another grown-up perk: every 50-minute spa treatment and dinner for two comes with complimentary child care. Don’t let Portland’s low-key, outdoorsy-hipster vibe fool you: the Heathman Hotel is as grown-up and refined as they come. Opened in 1927 as an expansion of one of the city’s grande dame hotels, the Heathman continues to set the standard for classic luxury in the City of Roses. Rather than rest on its laurels, though, the hotel has consistently upped the ante, collecting a museum-worthy array of modern art (including a handful of Warhols alongside works by acclaimed local artists), boasting one of the most impressive collections of autographed books in the world, and offering guests a choice of mattress in the sumptuous rooms. Indeed, so famously decadent and romantic is the Heathman, with its award-winning restaurant and almost-nightly live jazz in the bar, that it was used as the setting for several of the rendezvous in E.L. James’ infamous Fifty Shades of Grey—although, for most guests, the original crystal chandeliers and marble fireplaces inspire magic enough.

A stay at this resort offers the best of many worlds: easy access to San Antonio and its airport, proximity to scenic Hill Country and its wineries, and plenty of on-site amenities to encourage you to hang around. Spread over 600 acres, the property includes an 18-hole golf course, a nine-acre water park (with a winding lazy river and 650-foot rapid river ride), hiking trails, and a 30-room spa, where treatments incorporate Texas-grown ingredients like lavender and sassafras. The facilities fan out from the LEED-certified main building, which houses 1,000 warm, comfortable guestrooms, many of which look out onto the main pool. There are also enough restaurants to warrant a multi-day stay, from an organic-focused spa bistro and a sports bar with local brews, to a Texas-inspired main restaurant and a fine-dining steakhouse set among the golf greens. Each spot uses ingredients sourced within a 150-mile radius of the hotel, and aims to highlight Texas wine and beer. While the kids are off enjoying the water park or video game arcade, adults can take a tequila tasting class or settle into a rocking chair with a good book—then everyone can meet around the indoor or outdoor fireplaces to trade stories.

Occupying three whitewashed colonial buildings sheltered from the bustling streets of Old Town Cartagena, Casa San Agustín sits on the site of a former aqueduct and channels its heritage with a swimming pool that tunnels through its stately remnants. Inside, common spaces feature a mix of Colombian art and artifacts with contemporary wicker furnishings and marble floors. The 20 rooms and 10 suites are cozy and a bit more polished than those found at other historic properties nearby: Units feature 200-year-old wood-beamed ceilings and iron canopy beds topped with Frette linens; some have patios with hot tubs or brick terraces with views of surrounding buildings. But there’s plenty of space to unwind throughout the property, namely a library with original frescoes and a lounge with a long wooden bar and ceiling-high wine cabinet. It’s a good idea to make reservations in advance for dinner at Alma, considered among the city’s best restaurants, where the upscale international cuisine includes fresh ceviche and dry-aged beef cured on-site.

It’s not that newer is necessarily better—Antonio Obrador, the hotelier and designer of famously luxurious retreats like Mallorca’s Cap Rocat, would hardly choose a neoclassical, turn-of-the-century palacio for his latest project, were that the case—but when a hotel gets the kind of buzz that the Urso Hotel & Spa got when it opened in the fall of 2014, there’s usually a reason.

In the hip, up-and-coming Salesas neighborhood, across the street from the recently reopened (and equally lively) Barceló food market, Madrid’s first five-star boutique hotel looks, from the outside, like many grandes dames: ornate, decadent, and just a bit over-the-top. Inside is another story; while many of the original details (hand-painted azulejo tiles, grand marble staircase, stained-glass windows, windowed wooden elevator) have been painstakingly restored with the help of local craftsmen, the style is undeniably contemporary, with even a hint of Scandinavian-inspired minimalism to offset the pull of the antique. This devotion to design alone would have merited the aforementioned buzz, but Obrador and his team didn’t stop there, throwing in one of Madrid’s most innovative restaurants, most soothing spas, most understatedly cool bars, and, of course, the superlative service required of any five-star stay.

If your dream vacation involves the ultimate in luxury, the St. Regis should be at the top of your list. The 151 rooms feature hand-crafted chandeliers, original artwork, and macassar ebony furnishings, as well as Italian marble bathrooms that have soaking tubs and TVs hidden in the mirror. But the real draw is the service: All guests have access to the butler desk, which can fulfill requests both big and small, from unpacking your suitcase to delivering the morning newspaper, and designated pool chamberlains mist guests with Evian and deliver frozen-fruit skewers and coconut water at the 40,000-square-foot Pool Piazza, complete with red-striped chaises and waterside bar. While the promise of massages in the Remède Spa and afternoon tea in the English-style Astor Court make it hard to leave the resort-like premises, the hotel’s location a five-minute walk from the Buckhead shopping complex may sway you. And if you need help hauling your spoils to your room, remember there’s a butler waiting just around the corner.
