    The best time to hit the mineral-fed pools at Indian Springs is just before closing, right around 9:30 p.m. Grab a float noodle, place it behind your neck, float on your back in the 102-degree water, and look up at the stars. No matter how cold the air might be, you will immediately relax. The Calistoga resort has been offering guests a similar experience for more than 150 years, though recent renovations have modernized the offerings and brought a new level of luxury and sophistication. The main attractions are the pools: one for all ages and another only for adults. Elsewhere on the property, an expansive spa offers massages and mud treatments; a restaurant—dubbed Sam’s Social Club—serves healthy California cuisine along with house-brewed beer. Accommodations vary widely, ranging from two-room cabins and expansive one-bedroom suites to multi-room bungalows and full-scale houses. Once you’ve had your fill of shuffleboard and bocce, walk into downtown Calistoga to shop at the local boutiques, or take the short trail to the top of the hill for a stellar view of the north end of the Napa Valley.     Visitors flock to Búzios for the simple pleasure of strolling up and down the Rua das Pedras, the main cobblestone street, as well as the promenade named for Brigitte Bardot, where they can admire fishing boats and pleasure craft in the small bay. The town overflows with historic homes and fine chapels such as Nossa Senhora Desatadora dos Nós (Mary, Untier of Knots) by Praia de Geribá, or Geribá Beach, as well as the spare 17th-century Igreja de Sant’Anna (Church of Sant’Anna), which is on a hilltop.

    In the 1770s, at a time when islands were changing hands dozens of times, both the French and the British gave Tobago something every island needed—forts overlooking bays. Today, the cannons at Fort King George, constructed by the English, still point out to sea. Visitors enjoy the site, high on a hill over Scarborough, for its marvelous views. The restored stone structure that was once a barracks now houses the Tobago Museum, with exhibits of military relics, maps and pre-Columbian artifacts.

  • Running approximately half the length of Half Moon Cay, Bonefish Lagoon measures just over 280 hectares (700 acres). This protected saltwater bay is where Holland America Line offers many of its water sports activities on the island, including kayaking and the Aqua Trax Adventure. Since it’s encircled by the island on all sides except for an entrance to the sea at its northeastern corner, the water here is calm, making it an ideal place for novices to try out a new activity. As for its name, there’s a population of bonefish here, and fishermen can cast a line to land one.

    You know there’s something worth checking out when this in-town farm attracts farmers from farther afield to come learn best practices. Not only is this urban goat dairy a working farm, it also offers field trips, tours, summer-camp programs, cheese-making classes, and an oft-sold-out goat yoga (yoga with goats) session. (And to guard the goats, there’s a llama.) With all those Zen goats, there’s plenty of milk flowing, and in addition to the goat cheese, the farm sells shares of the goat herd for access to the raw goat milk. It’s located on the historic Long’s farm property along with a local community garden manager, Growing Gardens.

    People in tiny towns deserve great food as much as city folk do, but it’s still a surprise when a town of fewer than 9,000 residents can sustain a restaurant as good—excellent, really—as Ludvig’s Bistro. Open daily during the summer months and for plenty of special occasions off-season, the restaurant has been one of Alaska’s best for more than a decade. Chef/owner Colette Nelson puts a Mediterranean spin on all the local ingredients she can get her hands on. The restaurant is all bright pops of color, too. Even Southeast Alaska’s rainiest days can’t knock the happy off of Ludvig’s. Don’t you dare show your face without making a reservation first—even if Sitka weren’t one of the world’s most magical little towns, Ludvig’s would make it a worthy destination.

    Healthy, organic food can be difficult to come by in Gatlinburg, making this natural food store and café a staple for locals and travelers seeking a nourishing or vegetarian-friendly option. Burgers come in the form of ground salmon or lentils (in a sprouted grain bun), washed down with the fresh-pressed juice of the day or a “wellness shot” of wheatgrass, ginger, or turmeric. Built in a rustic stone-and-wood cabin, the café is small but cozy, and during summer, the exterior is cheered by blooming daisies and echinacea. With 200,000 people descending on the market every weekend, it’s best to come early, and perseverance can uncover a veritable treasure trove of collectibles ranging from beautiful ceramics and handicrafts to exquisite jewelry.

    Nestled within a landscape of moss and lava less than an hour from Reykjavik, the Ion Adventure Hotel is one of the few true luxury hotels outside of Iceland’s capital. Under the careful eye of owner Sigurlaug Sverrisdóttir, a no-frills barracks for geothermal power plant workers was transformed into a concrete-and-glass Nordic-modern showpiece that wears its reverence for the natural setting on its sleeve. Sverrisdóttir is committed to using local products—everything from the artwork to the bath products to the food are sourced from the area—and the hotel’s sustainable materials and practices, like using geothermal cooling for power, have earned it a number of awards. Plus, all 45 of the sleek but comfortable rooms feature fair-trade organic linens and floor-to-ceiling views of Lake Thingvellir or Mount Hengill, an active volcano. The glass Northern Lights Bar juts out toward the horizon, providing a perfect viewing spot when the aurora borealis appears; beneath it sits a large rectangular hot tub adjacent to the spa. As for adventure, the hotel is happy to arrange any number of excursions, including fly-fishing, horseback riding, kayaking and, for the truly bold, snorkeling in the Silfra fissure.

    A five-year restoration and renovation project transformed a factory on the Williamsburg waterfront, originally built in 1901, into the stylish but laid-back Wythe Hotel. This property has a distinct Brooklyn stamp, from the Brooklyn-made wallpaper to the Brooklyn-sourced minibar. The little details here stand out, including concrete floors with under-floor heating and the use of reclaimed wood (from the former factory) in the ceilings. The spacious lofts are particularly noteworthy for their floor-to-ceiling views of the Manhattan skyline and standalone pedestal tubs. Visitors and New Yorkers mingle over cocktails on the rooftop bar as well as at the spacious restaurant, which was recently taken over by restaurateur Jon Neidich and his team at Golden Age Hospitality (owners of popular New York spots ACME, Slowly Shirley, and The Happiest Hour).

The queen-bee hostess and waitstaff make sure every diner feels special, with plenty of talk about what’s fresh this season—and what’s so good it’s about to run out. Items on offer cover everything from refined versions of street classics to exquisite, almost exotic, wild-game preparations whose recipes come from some of Mexico’s remotest corners. Live music and an excellent mezcal cart sweeten the already delicious deal.

While you’re there, stop into Hell’s Gift Shop to browse the quip-covered stickers, mugs, and T-shirts (HAVING A HELL OF A DAY!), and send loved ones postcards from Hell’s one and only post office. You’ll be greeted by an octogenarian Lucifer, aka Ivan Farrington, who’s been dressing the part for decades—as he’ll happily demonstrate with his 1980-something star turn on Inside Edition (rest assured—he’ll have the tape all cued up in the VCR in anticipation of your arrival).
