    This Nashville institution often has a line out the door and wrapped around the building. (“It moves fast!” everyone will tell you.) Once inside, the scene is no-frills, but it’s not the atmosphere you’re here for—it’s the people, the tradition, and the pancakes, of course. You can choose from flavors like traditional buttermilk; Caribbean with shredded coconut, banana, and powdered sugar; Swiss chocolate chip; sweet potato; and many, many more. Everything is made from scratch, including non-pancake dishes like omelets, sandwiches, and salads.

    O’Donoghue’s Bar, which dates back to the eighteenth century, is arguably the most famous pub in Dublin for traditional Irish music. The bar is lively, rammed with a mainly—but by no means exclusively—local crowd, and has a great, welcoming atmosphere. There is a huge beer garden, and on busy nights there will be someone serving the tables outside. The main draw, of course, is the live traditional music, which kicks off mid-evening seven days a week. Unlike many other venues that boast live trad and there is no sense that the music at O’Donoghue’s is a performance put on for the tourists. In fact it’s quite the opposite: you get the feeling the musicians are playing solely for themselves, and don’t care whether you listen or not. Which is lucky, really—the night we were there the bar was so crowded, and the conversation so raucous, that you had to get really close to hear the music. If you’re a fan of, or curious about, traditional Irish music, O’Donoghue’s is definitely a place to check out. And make sure to keep your eyes open as well as your ears: such local musical luminaries as the Dubliners and Christy Moore have been known to swing by in the past!

    Set high above the tiny capital city of Tórshavn, Hotel Føroyar blends the best of modern Faroese art and style with tradition. Danish firm Friis & Moltke A/S designed the sleek interiors, which feature original pieces by Edward Fuglø. Outside, however, a traditional grass roof and grazing sheep evoke more typical images of the Faroe Islands. High up as it is, the hotel is a bit of a walk (about 35 minutes) from downtown, but the sweeping views of the harbor make the distance worth the effort.

    Le Bernardin, on 51st Street between Sixth and Seventh avenues, is one of the handful of New York restaurants that is regularly awarded four stars by the New York Times (it is also one of five restaurants in the city with three Michelin stars). Chef Eric Ripert’s specialty is fish, and the menu is divided into three categories: “almost raw,” “barely touched,” and “lightly cooked.” If you like your tuna cooked medium, this isn’t the right place for you. Ripert often finds his inspiration in Japanese cooking, with his sashimi and light broths, and adds some Latin American influences, in his ceviches and some other dishes. The fish is always allowed to take center stage, and typically any sauce is merely intended to accent its flavors. The dining room has an understated, contemporary style with light-wood walls and high ceilings. Unlike some celebrated chefs, Ripert has chosen not to build a restaurant empire, increasing the odds that on any visit he will be at Le Bernardin, presiding over its kitchen and dining room.

Upon entry, guests are greeted by a traditional Portuguese taberna, where cheese, charcuterie, and Avillez’s take on traditional petiscos (finger foods) fuel a festive atmosphere. Further inside, you’ll find Páteo, a seafood-focused food court for classic Portuguese dishes, and Beco, a hidden restaurant that offers a gourmet menu alongside sexy cabaret shows. Plan to spend the night here.

    Uformel is run by Kristian Arpe-Møller and Rune Amgild Jochumsen, who are the minds that brought Copenhagen formel B, one of the city’s most popular Michelin star restaurants. Uformel describes itself as Formel B’s “cool and edgy younger brother”. The restaurant is run by sommelier Martin Iuel-Brockdorff Bek and head chef Frederik Alexander Rudkjøbing. Martin served as sommelier for formel B since 2003 and Frederik has served as sous chef at formel B for more than two years. While this restaurant is born out of the New Nordic tradition its menu is not strictly confined to Nordic Cuisine.

The oldest retail quilt company in Hawai‘i, it has catered to local royalty, as well as Hollywood stars, and pioneered the islands’ fabric-art tradition in Japan. Its instructors offer lessons and demonstrations at Waikiki’s Beach Walk every Tuesday from 10 a.m. to noon, as well as at the Big Island’s Queens’ Marketplace every Sunday from 1–3 p.m.

    Are there any nobler or more beautiful horses in the world than the gray-white Lipizzans who wow audiences with their high stepping at the Spanish Riding School? In the 16th century, the Hapsburg empire used Andalusian horses to create the breed in Lipizza (located in Slovenia). As they have for centuries, the Lipizzans perform their acrobatic haute école dressage in the Hofburg Palace’s Winter Riding School arena, an all-white baroque hall designed by Fischer von Erlach. Riders still wear the traditional uniform of bicorne hats and tailcoats, part of the reason UNESCO granted the Riding School its Intangible Cultural Heritage status. In addition to watching the performances, visitors can also tour the stables and sit in on morning training sessions set to classical music.
