Near the rural town of Matamata—itself a destination for its LOTR-inspired visitor center and a selfie-ready statue of Gollum along the main street—the re-created sets of Hobbiton offer a detailed and fascinating glimpse of the hobbit holes, meadows, and gardens of Bilbo and Frodo. An essential conclusion to the tour is quaffing an only-available-in-Hobbiton Oatbarton Ale at the leafy lakeside Green Dragon Inn.

Located on Front Street, above the Docksider Pub & Restaurant, Rosa’s overlooks Hamilton Harbor. Rosa’s features all of the traditional Mexican menu staples you would expect: tacos, fajitas, quesadillas, burritos, and the like. While not as large as other ancient Mayan cities in the region, Tulum draws in visitors for its stunning setting of centuries-old temples perched on a cliff by the Caribbean Sea. You’ll pass a large market with souvenirs, a casual Mexican restaurant, and even a Starbucks before reaching the entrance, where a train can take you to the site if you’re not up for the 10-minute walk. It’s advisable to hire a guide to fully understand each structure’s significance and the history behind the ruins; informative signage is all but nonexistent. Don’t forget to bring your swimsuit, as the site encompasses a white-sand beach with soothing waves and beautiful rock formations that’s reached by a long wooden staircase.

Near the base of the landmark Rialto Bridge, the historic Rialto Market is well worth a wander. Seek it out in the early morning when it provides an authentic local experience (and awesome social-media ops), with fishmongers hawking their fresh seafood catches and local produce merchants setting out seasonal fruits and vegetables. When you’ve finished exploring, go grab breakfast and a strong coffee at one of the nearby trattorias. If you’re a real foodie, consider exploring Rialto Market with a local guide who can delve into the history and also introduce you to Venice street food.

My first visit to The Lazy Fish was for a wedding and I simply wish I could have stayed longer. This is not your usual guesthouse; for a start you can only access it by boat and at the end of the private jetty where you disembark is an old style telephone box - that actually works! The Lazy Fish is secluded in the Marlborough Sounds at the top of the South Island. Perfect for a real ‘getaway’ the serenity is amplified by the native birdlife and the gentle washing of water on the pebbled shore. There is a beautiful native garden you can walk through, complete with large palms, and on those rare occasions where the weather isn’t the best you can simply pick up a book and relax inside on one of the most comfortable chairs in the world!

It may be only 22 miles west of San Juan, but Dorado Beach, a Ritz-Carlton Reserve feels a world away. The resort has a spectacular location on a three-mile stretch of beach on Puerto Rico’s north shore, where Clara Livingston once ran a sugar plantation—and Amelia Earhart visited before departing for her fateful world tour. In 1958, Livingston sold the property to Laurance S. Rockefeller, who turned it into the first of his legendary Rock Resorts. Known for his green streak, he designed the hotel to respect the local beauty, mandating that buildings could not be taller than the surrounding palm trees.

The Ritz-Carlton—which reopened in October 2018 after a meticulous restoration following Hurricane Maria—pays homage to that original vision. Here, every room is beachfront, with floor-to-ceiling sliding doors that disappear into ocean views, plus deep soaking tubs, outdoor showers shaded by gardens, and either spacious balconies or private plunge pools. As part of the property’s renovation, rooms were refreshed with a color palette that amplifies the natural beauty just beyond the doors. Additionally, the grounds showcase 3,000 new plant species, the spa is offering new locally inspired treatments and cuisine, Encanto Beach Club Bar & Grill features a refreshed dinner menu, and the Positivo Sandbar debuted an omakase and ceviche bar directly on the sand. There’s even an entirely reimagined signature restaurant, Coa, which serves farm-to-table fare cooked on the grill. Still standing strong on the verdant, 1,400-acre grounds are the five 18-hole championship golf courses. The biggest challenge is pulling yourself away from the luxury of the resort to tee up a shot.

The setting at Coyaba, which sits among the palms at the Caribbean Paradise Inn, is hardly shabby, but this restaurant stands out for its excellent food and very creative menu. The creation of Chef Paul Newman (no relation to the actor), the menu changes daily but always includes unique appetizers and entrees that mix locally sourced ingredients with international flavors with delightful taste. Try the lobster thermidor, which comes with a Dijon-mushroom cream sauce, and melts in the mouth. Or the crispy, whole, yellow snapper fried with Thai spices for a less heavy but equally tasty entrée. The appetizers could be turned into a meal as well, as these also show off Newman’s culinary skills and creativity. The coconut-shrimp tempura is excellent on the appetizer menu, as is the guava-and tamarind barbeque ribs. Oh and make sure to leave room for dessert. The homemade chocolate fondant and lemon meringue pie are both standouts.

Climb the grand baroque staircase and pass the Jesuit church, cross Gundulić Square, and follow the COLD DRINKS WITH THE MOST BEAUTIFUL VIEW signs. Then, yes, walk through the walls. Buža translates to “a hole-in-the-wall,” and a hole-in-the-wall it is, one that leads to a cliffside ledge with a bar on it. From the moment you order a cool beverage off a simple menu, you begin to unwind. The backdrop to your drink is stunning: a sky-high stone parapet on one side and nothing but the blue sea between you and the horizon. This is the ideal spot for swooning over Adriatic sunsets.
