    Before becoming a small tavern, this hole-in-the-wall spot served as a cooper’s workshop that made barrels for the local winemakers. Today, its modest confines have been made cozy with a few wooden tables (actually former workbenches), a smattering of candles, and old tools from the workshop. Its appeal lies not just in the convivial atmosphere that comes from being a family-run restaurant since 1992, or the fact that strangers eat in close quarters, but also in the hearty menu, which offers classic dishes from Baden and the Pfalz region like Schäufele (pickled and slightly smoked pork shoulder), Saumagen (sow’s stomach stuffed with meat and potatoes), schnitzel, and deliciously creamy Käsespätzle. The wines are also excellent, meaning Schnitzelbank is usually packed. Arrive early for a better chance at a table.

Chef Arnaud Dockele’s passion for the region is evident in each bite—and Michelin inspectors have given three stars to the kitchen to reward his creativity in dishes like spider crab in a citrus bath; a verbena-infused bouillon; and abalone served with locally grown onions. Pastry chef Guillaume Godin picks his inspirations from nearby orchards with desserts based on apricots and almonds and local lemons that make the perfect end to a meal under the stars.

Inside the shop, floor-to-ceiling shelves display bottles from a variety of Italian regions and vintages, with options in every price range. Glasses of red or white wine, dispensed from taps, can be enjoyed at the narrow bar. Or linger a little longer: Ask for a seat at one of the sidewalk tables, then order a glass of Chianti and a snack of chicken liver pâté (made from Nonna’s recipe) served on grilled Tuscan bread.

The result is Villa Spiza, a countertop spot within the palace walls, where she and her sister serve up Dalmatian soul food made with fresh, local ingredients. The menu changes daily depending on what’s available at the market but always features regional specialties like seafood risotto, fried calamari, and just-caught fish. For its comforting fare and low-key vibe, the restaurant is beloved by everyone from bohemians and backpackers to tried-and-true locals—which is always a good sign when searching for somewhere to eat. Service is friendly, but come prepared to wait—Villa Spiza doesn’t do fast food.

Before sitting down for your meal, enjoy a drink at the bar, which offers views of the kitchen as well as the sun setting through a picture window. Then dig into creative dishes like roasted beef with lemon-glazed shimeji mushrooms, and pork belly with carrot-ginger sauce. The menu changes seasonally, but guests can always expect a life-changing meal.

    The Black Forest, Schwardzwald in German, is a gorgeous pine-wooded mountain range in Baden-Württemberg with a number of historic towns. If the numerous Michelin star restaurants in this area (think black forest ham and black forest cake) aren’t enough to get you there, the numerous long footpaths will. The region includes part of the E1 European long-distance footpath, which passes through neighboring countries and always has plans for expansion. Its highest peak is the Feldberg, at 4,898 ft. But this area is not just for long trekkers, a variety of short walks are possible too. Stop in towns like Freiburg and Calw, and Gengenbach. Don’t miss the All Saints and Triberg waterfalls.

Try the time-tested caldo mayo, a house-specialty beef broth that’s a perfect hangover remedy, especially with spicy salsa de ají, or hot pepper salsa, on top. Members of the Chilean judiciary are often seen here having a tintito, a dainty glass of red wine, before beginning the day’s proceedings. El Rapido opened in the thirties and has been operating ever since—don’t miss this quaint and tasty bit of history.

    American sommelier Brian Patterson, his wife, Jenn, and their massive Leonberger-Retriever mix, Bear (the Beartender!) are the consummate hosts at Lisbon’s newest, most interesting, and surely smallest wine bar. Located on pretty Praça das Flores in Principe Real, Patterson curates his all-natural wine list with a laser focus on small producers from around Portugal. He sources his finds on reconnaissance drinking missions around the country, including some of Portugal’s more underdog wine regions. His updated-daily chalkboard menu includes a half dozen or so offerings by the glass (€3.50-7) along with two batch cocktails, as well as intriguing bar snacks to accompany (his hummus is destination-worthy in and of itself). The bar doubles as a bottle shop; rightfully so, there is only room at the bar for about 11 provided everyone is sucking in their wine guts. File under: Wine Revelation.

    Built in 1703, Heidelberg’s oldest and most famous tavern has certainly had some illustrious patrons. Mark Twain, Marilyn Monroe, and John Wayne are just a few of the celebrities who drank and dined here—a fact that’s proven by the many photos of famous faces hanging on the walls. Notable clientele notwithstanding, Zum Roten Ochsen is all about simplicity. Still run by the same family that opened it hundreds of years ago, it serves rich local dishes, from goulash soup and bratwurst to Swabian Maultaschen (meat-filled ravioli) and Käsespätzle (cheese-covered noodles), as well as fresh herring, boiled beef, and several vegetarian options. Also on offer is a drinks menu heavy on regional wines and local Heidelberg beer, all of which are complemented by the restaurant’s old-fashioned interior, friendly service, and live piano player in the evenings.

    Built between 1715 and 1718, the Baroque Karlsruhe Castle served as the residence of the electoral princes and grand dukes of Baden for more than two centuries. Designed by Jakob Friedrich von Batzendorf, the palace exterior is especially pleasing—not least because it was planned as the focal point of the city, with streets radiating out from all sides like wheel spokes (which in turn inspired Pierre L’Enfant, planner of Washington, D.C.). The castle also features picturesque pavilions and ornate wings, but for many the real highlight is the Baden State Museum inside. Opened in 1919 and generally regarded as the best in the region, the museum spans pre- and early history, with exhibits on the Ancient Greek and Roman eras as well as sculptures from the Middle Ages, a particularly celebrated art nouveau collection, and an impressive range of 17th-century Ottoman handicrafts.

    A tribute to the zinfandel grape, which originated in Croatia, this restaurant and bar features a zin-centric wine list but also showcases regional favorites like Plavac and Dingač. Of its 100 wines, it offers about 30 by the glass, encouraging guests to taste their way through Croatia’s wine heritage. Pair your drinks with one of the restaurant’s three-tiered platters, which come loaded with Dalmatian bites, then settle in on the terrace for some live music. If you’re hungry for a full meal, opt instead for the five-course “Taste of Dalmatia” menu, which includes everything from seared Adriatic tuna and homemade oxtail ravioli to calamari stuffed with ricotta and sun-dried tomatoes. Come morning, Zinfandel also serves breakfast, which diners can pair with champagne or fig-flavored travarica, a local herb grappa.

Rebuilt by Justinian as a typical five-aisle basilica in 565, the Church of the Nativity has subsequently expanded into the sprawling complex it is today.

Designed by interiors maven Rooj Changtrakul and renowned Thai architect Ongard Satrabhandu (who happens to be Changtrakul’s stepfather), the 24-room boutique hotel is inspired by 15th-century Lanna and features crisp white walls that offset Chinese antiques, vaulted wood ceilings, and colorful Thai silks. Serene courtyards give way to a library, an art gallery, and a poolside massage pavilion for low-key relaxation. Even the restaurant is primed to make you feel at home, serving regional comfort food like Burmese curry in an alfresco setting that reminds you why you booked here in the first place.

    Hernán Cortés built a summer home here on top of the ruins of a pyramid. Over the next few centuries, Mexico City‘s political and economic elite and movie stars--and even the Shah of Iran--took up residence in this town. Cuernavaca--with its stately mansions and haciendas and blooming gardens--became known as Mexico City’s more glamorous and beautiful sister. Nowadays, an ever-increasing population means Cuernavaca has lost some of the mystique from its heyday, but its lovely gardens and Spring-like climate (and the fact that it is only an hour south of Mexico City) still make it a perfect getaway from that bustling megalopolis. Be sure to check out the Palacio de Cortés and Jardin Borda while you’re there. The former is Cortés’ old digs, and it now houses the Museo Regional Cuauhnáhuac, which, over two floors covers Mexican history from pre-Columbian times to present. The latter is a grand Versailles-inspired mansion and garden which will give you a wonderful view into how Mexico’s aristocracy lived in the 18th century.
