Why we love it: A grand resort with subtle style and top-notch amenities

The Review:
There’s a tendency among high-end hotels in the Middle East to overwhelm guests with bling. The Kempinski Hotel Ishtar, the grandest of all the Dead Sea resorts, does things a little differently, impressing visitors with its architecture instead. The hotel’s Babylonian-style buildings loom large, but inside the decor is dialed back to the point of almost minimal. Walls disappear into expanses of glass, framing dramatic views over the sea, while shady balconies and sunken baths keep ostentatiousness at bay. There are plenty of pools, lagoons, and waterfalls of course, plus a private beach, a luxurious spa, and a handful of restaurants, but your first impression, as someone hands you a glass of cold hibiscus juice at check-in, is that this is a hotel that gets the details right.

The undisputed grande dame of Filipino hospitality, the Manila Hotel has so many tales to tell that even Hemingway was impressed. “If the story’s any good,” he’s reported to have said, “it’s like Manila Hotel.” The Nobel laureate was but one in a series of visiting dignitaries, from military brass (General MacArthur took up residence in 1935 and left shortly before Japanese troops occupied the property in the ’40s) to Hollywood A-listers (including Douglas Fairbanks, Jr. and Sammy Davis, Jr.) to rock stars (when the Beatles notoriously snubbed Imelda Marcos by accident in 1966, they stayed here). The hotel has had plenty of cosmetic work done as well, including a dramatic renovation for the 2012 centennial festivities. So while you can still stay in, say, MacArthur’s quarters (known as the MacArthur Suite), the bathrooms now come with Bulgari toiletries and the bedrooms with HDTV. There was little the hotel could do to improve upon the already amazing bay views, as you’ll see from the suite’s dining room windows.

We were lying in the sand in Vieques. We’d been told to watch out for horses, but nothing could prepare me for this. What a majestic experience to see wild horses free on the sands of Sun Bay Beach.

Hout Bay is basically Eden. This ecological utopia has everything a nature lover could want, from imposing mountains and miraculous views (check out the Twelve Apostles range) to World of Birds, the largest bird park in Africa, home to 3,000 birds and over 100 walk-through aviaries. On weekends, you can shop for food and crafts at the lively market at the end of the harbor road. Besides Chapman’s Peak Drive, there are two other roads into Hout Bay, one from Constantia and another that passes the gorgeous surfer beach of Llandudno—also the exit for Sandy Bay, a nudist beach.

Nearby reefs and big boulders keep Bermuda’s beaches calm and colorful for snorkelers and swimmers. Both Tobacco Bay & Church Bay offer great snorkeling conditions along beautiful shorelines. With one in the east and the other in the west, you could combine a day of snorkeling and sunrise/sunset viewing. Tobacco Bay is located on the northeastern side of the island near St. George. This small cove of calm water protects a variety of parrot, clown, and other tropical fish. Tobacco Bay has a snack bar and equipment rentals, restrooms, showers, and changing rooms. When you tire of swimming with the fishes, dry off with a short walk to the historic site of Fort St. Catherine. Its eastern location makes Tobacco Bay a prime sunrise spot. Located along the island’s western side in Southampton, Church Bay is a local favorite for snorkeling. Tucked into a small cove within cliffs of coral, the reefs are close to shore and offer lots of small hiding spaces in which to discover tropical sea life. Just watch out for the jellyfish. Youngsters will enjoy exploring the tidal pools formed by the many rocks. Forget to pack your snorkeling gear? No problem. You can rent equipment from Church Bay Beach Rentals during the summer months. Sunset seekers should not miss this beach.

What started as a simple hat shop has grown over the years to a full-scale boutique with a wonderful range of women’s clothing from local designers. And you’ll find accoutrements such as scarves, gloves, bags, and umbrellas, stationery sets, coffee table books, cute odds and ends for the home, as well as children’s books and clothes. However, the hats still reign supreme—with fedoras, cloches, caps, and berets from hatmakers like Bailey, Christy’s, and Goorin Brothers.

An often overlooked fishing village located just 10 miles south of Negril, Little Bay’s small, crescent-shaped shores and white sands will tug at your inner beach bum. There are a couple of local guesthouse options in these parts, and not much else happening within walking distance—except a slice of daily Jamaican life and some sea activities such as kayaking and snorkeling off the nearby reef. Bob Marley loved Little Bay so much, he had a house here and wrote lyrics from this beach. It’s an easy day trip from Negril and a nice spot for shutterbugs.

Kalk Bay Expresso is just one of several coffee shops in the quaint seaside town of Kalk Bay. The repurposed train car, which dates back to 1914, sets this restaurant apart. The cafe serves both sweet and savory crepes, making this the perfect stop for a mid-morning or afternoon snack en route while driving to see the sights on the rest of the Cape Peninsula.

Not all the fun happens below the sea here. For fun atop the water, head to Lac Bay, the largest bay in the ABC Islands (Aruba, Bonaire and Curaçao, for the uninitiated). Kayaking through the resident mangroves, you’ll see all manner of birds and fish—particularly if you rent a glass-bottomed kayak. Meanwhile, the combination of consistent trade winds and sheltered shallows makes for some of the world’s best windsurfing—even if you’re new to the sport.

A popular and new cultural attraction in Montego Bay, the Rastafari Indigenous Village offers a fun and insightful day of Rastafari history, music and food to anyone interested in immersing and learning about this unique group. The day begins with a hike to the village, reached by spelunking across a river, and a medicinal plant tour. It continues with various activities, including culinary demonstrations of Rasta “Ital” or organic, vegetarian dishes, drumming circles and stories on the evolution and struggles of Rastafari culture in Jamaica. It’s an easy reach—about 20 minutes from Montego Bay—and a good pick for those short on time.

It’s a weekend ritual for my cousin and his friends to pop into either The Loading Bay or Origins Roast right next door for breakfast. With a gorgeous view of the mountain, both cafés have coffee to die for and stellar food. This particular beauty of a breakfast was from The Loading Bay; banana topped with walnuts accompanied with creme fraiche, served on top of toasted rye and drizzled with honey. Both venues are open for breakfast and lunch; the Loading Bay is also open for burger night, on Thursdays, served with their famous fries (sprinkled with truffles).

GoBananas on Baina Beach is India’s first and only facility offering underwater sea walking, the latest trend in aquatic adventure sports. After some brief instruction and a crash course in sign language, a boat ferries participants to Piccanye, an uninhabited island offering tame and clear waters. Walkers are set up with equipment that includes a fiberglass helmet and a four-kilogram lead waist belt before sinking three meters below the surface and effortlessly walking along the seabed, exploring coral colonies, schools of fish, and other marine life. Sessions last 20 minutes and no swimming experience is required! Note: Though considered zero-risk, underwater sea walking is not recommended for those suffering from claustrophobia.

A marine sanctuary in northwest Maui, Honolua Bay delights snorkelers and surfers alike. The right side of the bay boasts dense, showstopping coral that attracts vibrant fish, while the shallower left-hand side features lava caves, archways, and sea turtles in the summer months. Come winter, some of Hawaii’s most beautiful barrel waves start peeling around the point, drawing only the most experienced daredevils. Note that fishing here is forbidden and parking can be tricky—visitors often have to park along the cliffs and hike down through a magical, Robinson Crusoe–type forest to the rocky shoreline. When approaching the bay, watch for mile marker 32. Just past it, you’ll find stairs down to Mokuleia Beach.

At Mosquito Bay Beach—also known as Starfish Beach—on Vieques Island in Puerto Rico, you’ll find tons of colorful starfish. While the beach itself is small, it’s still beautiful and perfect for a scenic walk. You won’t get bored searching for sea creatures in the water.

Just to the north of Galley Bay Resort, you’ll find one of my favorite beaches on the island and maybe even the entire Caribbean: Deep Bay. The ruins of Fort Barrington keep watch over this incredible, crescent-shaped slice of paradise, just adding to the beauty of its turquoise, flat waters. Swimming here is like splashing in the largest, most pristine, natural pool you’ve ever imagined. As an added bonus, there’s a hundred-year-old sunken wreck, a barque from Trinidad named the Andes, out in the middle of the bay. It’s an easy swim from shore and accessible to snorkelers. Beaches really don’t get much better than this... anywhere.
