But it’s the inspiration from far-flung places that puts the delicious finishing touches on dishes such as wahoo in a ponzu sauce served over basmati rice, and sautéed veggie or tuna sashimi paired with sesame seeds, soy sauce, dragon fruit, ginger, scallions, radishes, and pumpkin seeds.

  • Nosy Anko, Madagascar
    The biodiversity of Madagascar is staggering: It’s home to more than 11,000 plant species, and close to 90 percent of the wildlife in this African island nation can be found nowhere else. Even the top eco-lodges here were rough around the edges until the arrival of Miavana, a private island resort off the northeastern coast. Miavana is undeniably over-the-top (the sustainably designed villas start at nearly 5,000 square feet), but the wildlife encounters are the real draw. Along with snorkeling and marine safaris, the resort offers guided treks to see native species such as jeweled chameleons and silky sifaka.

Linnèa Sjögren and Jonas Petterson wanted to spend more time outdoors and explore their interest in the wild, Swedish seaweed as culinary raw material, so they opened Catxalot in Havstenssund. Catxalot organizes seaweed workshops, seaweed safaris, cooking courses for both professionals and interested amateurs, and has in just a few years, gained a reputation on the Swedish culinary scene. Joint them for an interesting day by (and in) the sea to learn more about the different kind of seaweed that grow on the coast, and finish the day by cooking dinner, with dishes like salmon, salad or chocolate cake all made with — you guessed it — seaweed
  • Tsavo, Kenya
    Tsavo East National Park was created in 1948, making it one of the oldest National Parks in Kenya. Situated in the east of Kenya, halfway between Nairobi and the coast, this is a beautiful, wild and hot place (the heat rises as you lose altitude coming from Nairobi) that retains a lot of its original splendour. One of the most special reasons to visit Tsavo East is for sights of the soil-covered, rusty-red elephants playing in the shady Galana River waters. Some of these were once orphans at the David Sheldrick Wildlife Trust and have now been released back into the wild.

    While filming And God Created Woman here in 1956, French superstar Brigitte Bardot made Ramatuelle’s Pampelonne Beach a summer icon. Today, the beach and neighboring St. Tropez continue to draw celebrity jet-setters like Elton John and Kate Moss, who arrive in luxury cars and yachts to see and be seen on 100-euros-per-day loungers at Le Club 55. More adventurous visitors can tour the coast with a pair of wheels from Vélorama, or a kayak or stand-up paddleboard from Pep’s Spirit (which may be the smarter choice given the endless traffic along the local roads).

    Scrub Island is one place where being shipwrecked might actually be a good thing—pity that dockside boat slips abound. Located on a volcanic speck just 75 miles east of Puerto Rico, Scrub Island Resort is the ultimate tropical idyll, with a spa, marina, and three restaurants. Its 52 suites and villas sit on 230 pristine acres, complete with neutral, colonial–style interiors (think four-poster beds, marble baths with soaking tubs, and floral curtains) that intensify the ocean views. Charter a boat to explore hidden coves or test your nautical skills at the resort’s sailing school. You can always forget what you know once the time comes to lift anchor and head for the mainland.

    Rugged Monhegan, aka the Artists’ Island, lies about a dozen miles out to sea, and is reachable only by passenger ferries. About 60 hardy souls live here year-round, most making a living from the sea. If you get a sense of déjà vu when visiting Monhegan, it’s likely because so many of the island’s icons and vistas have been painted by American masters, including Robert Henri, Rockwell Kent, Jamie Wyeth, George Bellows, Edward Hopper, James Fitzgerald, Andrew Wyeth, Alice Kent Stoddard, Reuben Tam, and William Kienbusch. Artists and art lovers come in summer; bird-watchers flock here in spring and fall. Hiking trails access remote rocky beaches and craggy headlands. Go for the experience, the art, and the hiking, and don’t miss the museum at the lighthouse.

    A hot lobster roll from Neptune Oyster is summertime heaven on a butter-soaked brioche, and bivalve lovers queue up daily to sample the two dozen varieties of oysters chilling in the front window of this diminutive North End restaurant. Fresh-off-the-boat fish and creative takes on New England seafood are the draws here—the clam chowder is made to order, the fish-and-chips uses Acadian redfish (not cod), and it’s probably the only place in town where you can get lobster tacos. Yeah, it’s pricey—hot or cold, the lobster roll will set you back around $30—but share the Neptune Plateau raw-bar plate with your friends and you’ll truly feel like the king of the sea.

    In the tiny village of Hesdin-l’Abbé, not far from the bustling centre of Boulogne-Sur-Mer, you’ll find the Chateau Cléry. This 18th century Chateau was once the summer home of nobility, but now you can be treated like a royal at the Cléry Hotel. The Chateau has retained some of its period charm, particularly in the common areas. The rooms are modern and spacious with luxuriously large bathtubs. Guests can choose from saying in the chateau itself or one of the many cottages and out-buildings surrounding it. There is also a modern gym and spa facility on-site and the restaurant is so good, I’ve given it its own highlight! Take time to stroll through the kitchen garden and wooded parkland, say hello to the friendly ducks, and relax with a drink on the sunny lawn.     This five-star beachfront hotel toes the line between being a hub of activity and a luxurious, only-in-Southern-California hideaway. For restoration, head to the sprawling spa for a customized wellness-oriented treatment or a meditation class. Mind cleared, make your way to the on-site outfitter Compass Sports—where staff will coordinate local mountain biking, paddleboarding, hiking, and surfing expeditions—or to the palm tree–lined, mosaic-tiled pool. Big ocean views and a light, airy design define the 250 rooms; for guests seeking extra solitude and space, there are bungalow suites, which are essentially private beach houses. At the hotel’s three eateries, it’s all seasonal all the time, from the fresh morning juices to evening cocktails. That ethos peaks at the fine-dining restaurant Studio, where executive chef Craig Strong creates elegantly plated French-meets-California dishes using locally sourced fish and meat, along with vegetables picked from the hotel’s 1,000-square-foot garden. Pro tip: In a setting this transporting, you almost want to break into song. Good news—the hotel will rent out mini guitars to guests for the duration of their stay.

    There isn’t much to do in Laborie, but the colorful spot on the southwestern coast offers visitors the experience of an authentic St. Lucian fishing village. The point is to slow down to local speed. Enjoy the views of the white-sand shore lined with pirogues, the traditional fishing canoes. Walk around the village, where plywood homes and ancient churches exist alongside newer structures. Whet your appetite with a trip to the open-air market, where you’ll spot green figs (bananas) and cassava bread for sale. Settle in for a grilled lobster lunch with a side of breadfruit at Mama Tilly’s. Then walk north along the water to Rudy John Beach Park, a shaded stretch of sand ideal for an afternoon nap and sunset.

    Barbuda is famous for its mysterious caves, many of which are hidden so well that a guide is necessary to find them. But in Two Foot Bay National Park, on Barbuda’s wild northeastern coast, a visit to Indian Cave does not require any outside help. The entrance is at the top of a small bluff to the opposite of a stone ruin in the national park. Carved into the cliffs, the three-chambered cave features Arawak petroglyphs and a bat chamber, as well as stunning views of the ocean as you climb up through the cave to its “roof.” The caves can also seen as part of a day-trip run by the Barbuda Express ferry company.

    One of the perks of staying at the St. Kitts Marriott Resort is the opportunity to test your skills at the Royal St. Kitts Golf Club, an 18-hole, par 71 course laid out along the island’s Caribbean coast. If you’re not a Marriott guest, however, head to the Irie Fields Golf Course at Kittitian Hill, where organic farms fringe the fairways. Designed by World Golf Hall of Famer Ian Woosnam, the course is maintained without pesticides or chemicals—if you see a herd of sheep grazing on the back nine, let them play through.

    From October to February, sperm whales, humpback whales, and pilot whales make their way from the cold Atlantic to the warm waters of St. Lucia to breed and mate. Whale-watching tours leave from Castries and some of the other towns on the west coast and sail north to south to spot the whales, breaching and spouting, from a safe distance. Over the last few years, sperm and pilot whales have more frequently been spotted than humpbacks. It’s not unusual to see schools of spinner and bottlenose dolphins along the journey. Some whale-watching trips offer lunch as well as a chance to snorkel and swim, so shop around for the excursion you want.
