    Downtown Bryson City is home to the welcoming Everett Hotel and its restaurant, the Bistro. Although famous for its crepes, the Bistro’s mountain trout preparations rival the finest riverside camp cooking, including, notably, the trout cakes, a highlight of the Southern cuisine–driven tapas menu. Ingredients are sourced locally and seasonally, and many are organic. Although the rustic, candelabra-lit atmosphere is relaxed, reservations are recommended, especially during summer and on weekends. Guests at the Everett enjoy complimentary breakfast and weekend brunch, and many eat here multiple times during a visit to the Smokies.

    Set in the UNESCO World Heritage-listed Banff National Park, the year-round Fairmont Banff Springs was the brainchild of Sir William Cornelius Van Horne, president of the Canadian Pacific Railway. On arrival at Banff, the tourism visionary made the canny observation, “Since we can’t export the scenery, we’ll have to import the tourists;” thus, he set about building a string of great railway hotels across Canada. The original wooden hotel that opened here in 1888 burned down in 1926, but was replaced two years later with the grander castle-meets-baronial-Scottish-hall structure that exists today. The public lobby spaces are vast, and there are countless nooks to curl up in with a book where guests will remain undisturbed. With its signature stone walls, turrets, and winding staircases, Van Horne’s gambit paid off: The Fairmont Banff Springs feels for all the world like an elegant and ancient castle, albeit one with all the modern conveniences.

    Rooms in the main building come with quirky period details such as chandeliers and crown moldings, while those in the Stanley Thompson Wing (the old staff quarters) are more spacious and a solid bet for families—who will also enjoy the kids’ club packed with activities such as campouts, science projects, and arts and crafts. The hotel also has 11 different restaurants, cafés, and bars, with the choices so diverse—from sushi, fondue, and Italian to Canadian steakhouse and southern U.S. barbecue—that guests are issued a food guide upon check-in to help them make the most of the hotel’s offerings. Of course, there are also a wide array of activities to help round out your time between meals, from skiing and rounds on the resort’s 27-hole championship golf course to downtime in the expansive Willow Stream Spa, which features indoor and outdoor whirlpools, a European-style mineral pool, and 23 rooms for therapeutic treatments.

    The Review:
    Located in Singapore’s civic and cultural district, the Capitol Kempinski Hotel is a modern-day union of two historical landmarks: The Capitol Building and Stamford House. Reimagined by late interior designer Jaya Ibrahim and his team (now part of BLINK Design Group), the property stays true to its roots with a colonial-meets-Art-Deco design, including high corniced ceilings, dramatic archways, and grand windows that reveal sweeping city views. Equally elegant are the 157 guestrooms, which boast Chengal wood flooring, custom lacquered Indian rosewood furniture, and cornices resembled fish scales—a reference to the Merlion, Singapore’s official mascot.

    The hotel takes pride in its culinary programming, placing a heavy emphasis on high-quality ingredients and a carefully curated wine selection (reflecting the Kempinski brand’s origins as a 19th-century wine merchant). Nowhere is this more evident than at signature restaurant 15 Stamford, where three-Michelin-starred chef Alvin Leung serves reinterpreted Asian classics like Assam suckling pig with fresh fig and Hokkaido scallops with shiso and soy jelly. For something more casual, sample the specialty rums and chocolates at The Bar at 15 Stamford; take your afternoon tea at The Lobby Lounge; indulge in German breads and pastries at Berthold Delikatessen; or fill up on German-Austrian fare at Frieda. When you need a break from all that eating, pay a visit to the outdoor saltwater pool or spa, where the team performs calming treatments with award-winning products from Gaylia Kristensen.

    There was some trepidation among locals when Rosewood first announced its plans for this 13 plus–acre resort—the largest in the UNESCO World Heritage Site’s cobblestone historic center. But it didn’t take long for both residents and repeat guests to embrace it. The property evokes an authentic sense of place, with buildings made with the limestone used to build parts of the old town, decor crafted by local artists and artisans, and the same beloved ladies making fresh tortillas and sopes at breakfast since the hotel was under construction. Designed to feel like a hacienda, the 67 rooms and seven multibedroom townhouse residences—some of which are available to rent—are scattered around intimate courtyards and gardens, many featuring art and sculptures; a large outdoor pool, rotating indoor art gallery, and spa featuring treatments inspired by indigenous healing traditions are also on-site, while programs such as the Art Concierge help engage guests with the destination. The cuisine is also a big draw: Savor reimagined Mexican flavors and learn about regional wine at the gourmet restaurant; try a tequila tasting at the bar, which turns into a sushi-and-craft-beer spot on the weekends, or join locals for the popular Sunday brunch.

    Opened in 2010 by a Dutch couple, Baoase Luxury Resort is an intimate spot with fewer than two-dozen rooms. Despite its size, however, it has all the amenities of a larger property, including a spa, health center, boutique, and more. A 10-minute drive from the center of Willemstad, the Balinese-style spot feels secluded and tranquil, especially when swimming off the lagoon-like beach or sitting next to the banyan tree in the lantern-lit garden.

    Privacy and a high level of service are very important here. Only during low season are non-guests welcome at the resort, and even then, they must have a reservation for a beach-day pass. All rooms come with outdoor space overlooking the gardens or pools, and half feature private plunge pools. For something even more discreet, book the exclusive island in the Spanish Water Bay, which features its own four-bedroom retreat. When not relaxing in your room, you can ask the hotel to arrange a motorboat and permit to use during your stay, or visit the on-site restaurant, which is known for beachfront fine dining and a weekly Asian cuisine night. If all the privacy leaves you feeling extra romantic, you can even have the restaurant set up a picnic dinner to enjoy on the beach or under a gazebo.

    In October 2014, Chef Enrique Olvera opened his much-anticipated New York restaurant Cosme, which offers an inventive dining experience in the Flatiron District. The spacious restaurant is a short walk from Langham Place, Fifth Avenue, and features modern Mexican dishes with locally sourced ingredients and housemade tortillas. But guests should not come expecting standard chips and guacamole, Chef Olvera is known for utilizing creative and sometimes surprising ingredients in his dishes. Menu items include burrata, salsa verde and weeds, and occidental purple corn pozole, pork jowl, lettuce, radish, Mexican oregano. The eclectic menu items are meant to be shared, and certain Mexican specialties, like dried chiles, beans and heirloom corn are imported from Mexico. Chef Olvera’s Mexico City restaurant Pujol has gained world fame for his fresh take Mexican food, and Cosme offers more stellar options. The bar also pours a wide variety of mezcals and tequilas.     Years ago when Mexico City’s southern neighborhoods were in fact small, independent cities, the quarter known as San Ángel Inn was a sylvan getaway for well-heeled urbanites. No longer an inn, the area’s namesake—a former Carmelite convent from the eighteenth century—persists as an iconic, country-club-style restaurant and lounge. Its venerable walls, gardens, and fountains call up colonial gentility and ward away the urban chaos just outside the door; strolling mariachis are the sole “disruption.” Sip what many believe is the city’s best margarita amid an impeccable, songbird-serenaded garden.

    This used to be a hacienda, but it was turned into a restaurant almost 50 years ago. The food is phenomenal and the margaritas are famous—in fact, they’re my favorite thing on the menu. There is always a band or a pianist playing.

    At the end of a secluded peninsula, right on Coco Point, which is Barbuda’s southernmost tip, Coco Point Lodge is one of only a few modern hotel resorts on the island. Although not five-star fancy, this all-inclusive property, is plenty comfortable offering a mix of rooms and private cottage rentals in small buildings scattered across the grounds. Bordered by some 2.5 miles of gorgeous white sand beach and safe, reef-protected swimming in the clear turquoise waters of Cocoa Bay, it is a good choice for active types as included activities feature everything from sailing to snorkeling, waterskiing to windsurfing and sea kayaking. Deep-sea, reef or bone fishing expeditions can also be arranged, as can day trips to the Frigate Island Sanctuary for birds.

    Don’t be fooled by the simple-sounding menu at this top-notch Portree restaurant. The dishes here are complex but well balanced, featuring the soils and foams that have come to define haute cuisine. Chef Calum Munro uses local, seasonal products like freshly caught seafood and Glendale lettuce to create his modern Scottish cuisine, with dishes ranging from cod with lemon butter, cod’s roe, and caviar, to venison with red cabbage, juniper, and chestnut. For pairing with the menu, Scorrybreac also offers a varied selection of wines, Scottish single-malt whiskies, and local, artisan-roasted coffees, best enjoyed while gazing across the harbor to the dark, rocky cliffs in the distance.

    Designed by Fuster + Architects, an award winning firm located in San Juan, Puerto Rico, El Blok takes its visual cues from the surrounding light, land and sea. In addition to being a playful structure, it is highly functional and built to withstand storms and hurricanes (a big plus anywhere in the caribbean!). It is located at the beach, at the start of Esperanza’s sleepy malecon, with its low-key seaside huddle of restaurants, bars, and stores, most of them back open after hurricane Maria’s devastating sweep of the island.

    I loved my room, one of the spacious corner suites. The way the space captured the light was uncanny, every time I got back to my room, a new play of light beams and shadows was waiting for me. The restaurant downstairs serves up amazing food, hands down the best I had on island. Executive Chef, Carlos Perez. brings to the table a delicious, fresh take on Puerto Rican cuisine, centered around their bayahonda mesquite fired grill and Rotisol rotisserie. Just don’t expect much of a breakfast at the hotel. I took a short walk each morning to some cafés nearby, to grab a coffee and omelet. El Blok’s rooftop bar was ‘the’ place to hang in the evenings with locals and travelers alike, while listening to amazing music. When we were there, the duo Más Que Dos was playing and it made for an all around perfect sunset.

    El Blok currently has 22 rooms and is adding another 11, slated to open in summer 2019. We were warned about construction noise between 8am and 2pm, but I can honestly say it didn’t interfere at all with my stay. It’s of course when you’re supposed to be out and about anyways, exploring the island!

    I love all of the McMenamins properties I’ve stayed at over the years on travel through the Pacific Northwest, but I may have a new favorite: McMenamins Edgefield in Troutdale, right at the western mouth of the Columbia River Gorge. As always, the hotel honors the past of the building it now resides in, it has great food and drink, and every inch is covered in whimsical art that demands you have a good time. Historic Edgefield was built in 1911 as the county poor farm, and it’s now a 74-acre hotel and playground, home to award-winning farm-to-table cuisine, a winery, a brewery, three pubs, movie theater, golf course, you name it. With 100 guest rooms and hostel accommodations, the instant you step on the grounds you’ll be able to tell that community and creativity are cherished here. If you’re traveling solo or out on a long trip and looking to save some money on the hotel part, I’d encourage you to look at their rooms that don’t have a private bathroom en suite. Instead, you head to the large, comfy, and private communal restrooms to get cleaned up. Brilliant. This is a great spot to launch your explorations along the Columbia River Gorge, and if you live in the Portland area, it’s a great place to gather for a weekend bike ride, grub with fellow friends, and a few cold pints around the outdoor fire pits when things get cold. With films and live music nightly, it’s hard not to want to just live here forever.

    New York, Tokyo, and other major cities are home to startling numbers of authentic Neapolitan pizzerias, many with ovens handmade by Neapolitan craftsmen. In those places, pizza making is definitely considered an elevated craft. Perhaps Neapolitans do not think of their cooks as artists because so much of the city’s cuisine is rooted in cucina popolare, or people’s food. What strikes me most about the food of Naples is the uniformly high standards in even the humblest restaurants. That goes for pizzas as well, which makes it impossible to single out one pizzeria. Or so I thought until I visited La Notizia, located up in the hills on the edge of the gritty working-class borough of Fuorigrotta (too far from central Naples to be reached on foot). Owner-chef Enzo Coccia is as obsessed with the details of materials and technique as any Neapolitan tailor.

    From my first bite, Coccia’s pizza struck me as something categorically different and decidedly better than anything I had tasted in Naples—or anywhere else in the world. It was feather light but still chewy, the way Neapolitan pizza should be. The thin middle crust didn’t dissolve into a soupy blend of cheese and tomato. When I asked Coccia about his technique, he formed two small test rounds of dough. He flattened one by hand; the other he rolled out with a can. He threw them both into the wood-burning oven and pulled them out 30 seconds later. The hand-formed dough was light and airy. The can-leveled dough was dense. “I prepare my dough at seven in the morning,” said Coccia. “It needs 14 to 16 hours to rise. I make only 300 pizzas’ worth of dough, and when that’s done, we close. Of course it takes the best and freshest ingredients—artisan mozzarella and local extra virgin olive oil—but it’s more than that. You need a passion for the traditional way.     This Lisbon restaurant, more than 30 years old, is known for its creative take on Portuguese gastronomic traditions. An extensive wine list represents the many regions of the country offering opportunities to explore by simply ordering a glass. Other bonuses: the restaurant’s glorious views over the river and its location, behind the Santa Apolónia train station, less than five minutes from the National Pantheon.

    Why we love it: Tanzania’s first Design Hotel delivers eco-chic 20 miles off the coast

    Highlights:
    - A very haute take on African village architecture with 56 thatched bungalows, suites and villas
    - The sight of dhows (traditional wooden sailboats) silhouetted at sunset
    - Lush tropical landscaping with a spice garden flourishing over a quarter of the 32-acre grounds

    The review: Set on the equator, Zanzibar glows with color from the pearl-hued beach to lush vegetation and the turquoise Indian Ocean. “Zuri” means “beautiful in Kiswahili, the island’s language, and the hotel delivers on this promise at every turn. Of especial note: the carved doorframes, contemporary African art and locally made furniture, often crafted from old dhows. Enjoy nice upcycled touches too like the rainbow of hanging lamps in the open-air Peponi bar, made from old bottles.

    Tucked on a west-facing slope, most of the accommodations face the sapphire Indian Ocean, and all have large terraces with bold-colored hammocks and wicker furniture. They also boast outdoor showers, where concrete floors contrast with curtains of paper beads, handmade by artisans at the female-led social enterprise Chaka. Inside, the warm tones of Tanzanian teak and eucalyptus compliment the nyasi (grass) thatch from the mainland. Make sure to veil your bed with the mosquito net, which contains an energy-efficient cooling system!

    Bungalows can sleep up to two adults and some have hot tubs. Suites step things up with larger terraces, living rooms and private outdoor Jacuzzis. Or really splash out with an exclusive oceanfront villa that can host up to six adults, complete with an infinity pool and private swathe of sand.

    Guests can dine on the shore, at the pool or in one of the beachfront restaurants. Expect a fusion of African, Indian and Arabian cuisine, though European and Middle Eastern elements come into play as well. Zuri Zanzibar is especially strong on shisha (hookah) offerings and sugar-cane cocktails, along with dishes like beef samosas, coconut-milk ceviche, octopus-tentacle salad and pilau rice with kachumbari (a tomato-onion salad popular in the African Great Lakes region).
