    Chef Nyesha Arrington’s personality may have won her fans on Top Chef years back, but it’s her talent in the kitchen that shot her to success at various Michelin-starred restaurants. With Native, which opened in late 2017, she brings together Los Angeles’s diverse influences and cultures through food. Pastrami from local Langer’s deli inspired her roast duck breast with pastrami jus and marble rye tuile; her Wagyu beef tartare seasoned with Aisoon sauce was named for her Korean grandmother. Enthusiastic waiters—many of whom go the extra mile by getting to know diners by name—may suggest favorites such as chestnut spaghetti with shiitakes and burrata, or even a secret item like a super-tender steak when available. As with Arrington’s cuisine, the 95-seat restaurant is approachable yet elevated, with rich honey-hued wood, brass, and a touch of marble.     Nestled in scenic parkland near the northern section of Lago Maggiore, Giardino Ascona is an intimate retreat. The hotel’s 72 rooms and suites are spacious and decorated with chic, modern furnishings set against bright, breezy color schemes. Balconies or terraces offer great views of a water-lily-filled pond and the nearby Ticino Mountains., and all rooms include conveniences such as minibars, flat-screen TVs, and DVD players. Bathrooms come with Dipiù cosmetics as well as bathrobes and slippers. As gorgeous as the rooms are, you may find yourself outside most of the time, sunning by the pool, getting pampered in the spa, or exploring the olive and lemon trees of the Mediterranean-style garden. There are also two excellent restaurants, one with two Michelin stars, and frequent wine degustations in the wine cellar.

    Noma, consistently ranked as one of the world’s best restaurants, closed in 2016, but its impact on dining in Copenhagen has been profound. Many chefs who worked there have since launched their own restaurants, including two who opened Bror. It’s a small space with big ambitions—expect astonishing food made from the best local produce. The five-course menu costs 625 kroner ($100), with wine pairings an additional 450 kroner ($72). There are also some memorable snacks. Don’t miss the bull testicles with tartar sauce or the cod head with cabbage wrap.

Given the Netherlands’ proximity to the North Sea, the menu leans heavily on seafood—Zeeland oysters and mussels are particular standouts—but its chef, Joris Bijdendijk, also has a way with vegetables, bringing out their full flavor in dishes like spit-roasted celeriac or a beautifully composed tribute to Dutch beans. There’s a six-course tasting menu priced at €67.50 (around $80) and an abbreviated three-course lunch menu for €37.50 (around $45). Reservations are recommended.

    Following a complete overhaul of a deteriorating multi-tenanted building two miles west of Osaka Castle, Rock Star Hotel opened in December 2013. Its stark white entrance belies vibrant interiors that showcase rock ‘n’ roll art, expanding on the owner’s belief that art is hope. Each room has a killer Geneva sound system, comes in generally dark and moody tones, and is themed after an iconic global rock artist or group. These include the Jam, Prince, Guns ’N Roses, the Beatles, David Bowie, Jimi Hendrix, and Kiss. Small details, like room keys shaped like guitar picks, further reinforce the overarching theme.

    The name Nude Espresso might suggest something more racy than you find when you enter this Brick Lane coffee shop. However, if a perfect cup of coffee does it for you, then your pulse may race anyway. And not from the caffeine. Nude takes the creation of a good cup of coffee very seriously so this is the kind of shop for true connoisseurs, not those simply in need of a fix. From the website, “Obtaining the finest coffee is a labour of love. We scour the World hand selecting only the fittest, ripest green beans [...]. We grade them by eye and sort them before putting them through their paces [...]. Only then can they be tasted, blended and packaged, creating the perfect ingredient for a sublime sensory experience.” I couldn’t have said it better myself. Indeed, a cup of coffee at Nude lives up to the promise of being a sublime sensory experience. Nude really stands for stripping out anything unnecessary from the process of providing a truly excellent cup of coffee, and in simplicity that satisfies, Nude Espresso truly excels.

    The second location of the Sydell Group’s New York flagship, NoMad Los Angeles embraces its past as the Bank of Italy—imposing columns and all. In the lobby of the landmarked building, much of the original Neoclassical style, such as the Doric columns, coffered ceiling, and marble floors, was preserved, complemented by the addition of floral textiles in rich jewel tones. Even the original vault, which once housed 12,000 safety deposit boxes, and its 50-ton door were kept intact. The color palette across the 241 lavish rooms draws from the exquisitely maintained gold-and-blue Italianate lobby ceiling, with custom furniture, original artwork from design studio be-poles, and freestanding bathtubs in most rooms adding to the luxurious feel. Details like nightly turndown service, marble bathrooms, and custom linens by Bellino mean a five-star stay is all but guaranteed.

    Built in the Roaring Twenties, the Royal Hawaiian ushered in the glam age of Waikiki Beach. The so-called Pink Palace, a Spanish Moorish–style confection set on bright-green lawns was, at the time, the priciest hotel project in the Pacific and a fast favorite of Hollywood royalty and East Coast blue bloods (who, in those early years, arrived by steamship, along with their piles of trunks and chauffeured cars). For those first few decades, anyone who was anyone, it seemed, stayed at the Royal Hawaiian; on any given day, you might see the likes of Spencer Tracy autographing a coconut or Joe DiMaggio surfing off the hotel’s beach. Once other luxury hotels sprouted up on Oahu, the Royal Hawaiian’s star faded some, but after a massive renovation in 2008, it became a member of Starwood’s Luxury Hotel Collection and, once again, one of the top spots on the island. The makeover managed to keep those graceful old bones and art deco flourishes (miles of tile, sweeping arches), while giving the whole place a long overdue upgrade. Genteel surroundings aside, the hotel is as lively as ever. But at night, when the oceanfront Mai Tar bar is rocking, guests can still scope out quiet corners. Retreat to the gracious portico lined with rocking chairs or the garden pathways dreamily lit by torches, and you’ll discover that the romance of old Waikiki lives on.

Of special note is the Myna Bird cocktail bar, inspired by Don the Beachcomber, the joint that kicked off the 1960s tiki craze. Expect rum, pineapple, and little paper umbrellas, of course, but also fusion touches like mezcal! Save space on your camera, as bartenders don’t hold back on the presentation. Strong, thoughtfully balanced drinks roll out in everything from cantaloupes to conch shells. Don’t miss the two-person, crowning glory of the Pacific Rim section: the Abandon Ship! It blends together two rums, chai tea, passion fruit syrup, Benedictine, and lemon.
  • This, the bar lauded for the city’s best sliders, has just added another star to its menu: Neapolitan pizza. Regulars are mighty keen on “carbo pepe,” by Chef Miwi (at the helm in this kitchen as well as at acclaimed hipster-heaven Belmondo, both in Roma). Félix remodeled a porch into a garden where they’ve got salads, pastas, and the aforementioned pies. These and other dishes took the chef to Italy, for expert education, leading to experimentation and that perfect dough. Super-chill and friendly, yet the service could hardly be improved.

    Since its opening along a dazzling stretch of sand known as Cabbage Beach in 1962, The Ocean Club on Paradise Island has been the preferred stay of old-money patriarchs and traditionalists. Though much at the serenely posh resort has remained unchanged, the 105-room property has been modernized to meet today’s standards with spa-sized marble bathrooms, sweeping WiFi, and a restaurant run by star chef Jean-Georges Vongerichten. But it’s the feeling of a privileged, unhurried yesterday that continues to draw an appreciative upper-crust crowd. An on-site tennis pro provides tips for improving your backhand, Versailles-inspired gardens complete with a 12th-century Augustinian cloister offer moments of quiet contemplation, and rounds of golf end with martinis at the resort’s bar. These details, plus knowing that a personal butler and afternoon champagne and strawberries are included in the price, keep guests returning year after year.

    Running three miles along the Tulum coastline, this massive beach has some of the Riviera Maya’s best conditions: soft white sand, waves tame enough for a calm swim, plus incredible shades of turquoise water. The stretch is chockablock with restaurants and beach clubs offering on-the-sand food and drinks. Along the main coastal road that runs parallel to the shore, you’ll find rustic cabins and luxurious hippie-style hotels with plenty of amenities, whether you’re looking for a bed for the night or just somewhere to grab lunch. After dark, Tulum Beach has some of the region’s best stargazing due to its secluded location and absence of city lights.

    The most luxurious way to experience Dubai’s desert may smash an entire holiday budget, but a stay in the Bedouin-inspired tented suites at Al Maha might well be worth it. It’s one of the best places to see desert conservation in action: Al Maha is in the heart of the Dubai Desert Conservation Reserve, home to the UAE’s largest free-roaming herd of Arabian oryx, a species brought back from extinction in the wild through rehabilitation initiatives. Guests should keep their eyes peeled for gazelles, too—300 Arabian and 100 sand gazelles inhabit the dunes, and the more inquisitive ones often come right up to the 42 tented accommodations. Water recycling, biodiesel, and solar panels all contribute to Al Maha’s efforts to tread lightly on the fragile desert ecosystem.

    Some say that Keller’s second restaurant in Yountville is even better than his flagship, the French Laundry. The rest of us may never know. But Bouchon is open until midnight seven days a week, and you can grab a seat at the bar without a reservation and spare yourself the theatrics of the more formal dining. Champagne, oysters, and French fries are a fine first course, and the bar also makes a mean martini.

    Bouchon is a Thomas Keller star (at a third the price of French Laundry). which serves unpretentious, French fare with a Keller twist. From Croque Madame to steak and roasted chicken, the kitchen puts out classical French bistro fare. Try sitting at the marble-topped bar with a Pastis in one hand and a spoon for mussels in the other. Not only is it quite affordable, but if you are lucky enough to snag an outdoor seat, you may also sit, Paris-style, all afternoon chatting with friends (and I dare you to resist walking into the Bouchon bakery two steps away to complete your meal- or grab a foie treat for your dog!).
