    Gaa is located directly opposite Gaggan, Bangkok’s most famous eatery, which was named the best restaurant in Asia in 2017. The brains behind the venture is Garima Arora, former sous chef at Gaggan and chef de partie at Noma. A native of Mumbai, Arora doesn’t shy away from her Indian roots. They are balanced, however, by international influences, including prominent Thai flavors. As you would expect from someone with her pedigree, Arora gives full rein to her creativity throughout the tasting menus (10 or 14 courses), with dishes such as grilled pork ribs marinated with split-pea miso and served with chopped shallots, spring onions, and pomegranate seeds showcasing her talent.

The restaurant has large windows overlooking the ocean and island and seats just 16 guests for a four-course dinner. The menu changes nightly, based on what’s available and in season, and each dish prepared by chef and native son Ruairí de Blacam has just two elements, a unique dining experience indeed. Open from April to the end of September.

    At Graycliff Chocolatier on Nassau, you can do more than just taste delicious, gourmet chocolates—you can learn how to make them yourself with the help of Graycliff’s master chocolatier. The chocolate-making experience is part of the chocolate factory tour, in which guests learn how the chocolate goes from raw cocoa beans to a rich liquid that can be poured into molds. Then you’ll have the chance to mold your own chocolate bars. Of course, if you’d rather taste it than make it, you can purchase a selection of chocolate and truffles, or join one of the chocolate and spirits tasting sessions to learn how to pair gourmet chocolates with spirits like rum, whiskey, and port.

    This intimate, bistro-like 16-seat restaurant in the heart of Pest’s trendy Jewish quarter brings a dash of Scandinavian cuisine (and Scandi decor) to the Hungarian capital. Chef Gábor Fehér spent time in Copenhagen mastering Nordic cuisine, which here comes as mini-courses (they’re flavorful but small, so the kitchen recommends ordering at least four for a meal). Hungarian and even French culinary influences aren’t ignored, either— Fehér studied at Le Cordon Bleu in Paris. There’s a huge variety of Hungarian wines on offer, and the regular crowd is artsy and cool. By the way, “Esca” means “food” in Latin, and it’s easy to see what’s most important here.

    GoBananas on Baina Beach is India’s first and only facility offering underwater sea walking, the latest trend in aquatic adventure sports. After some brief instruction and a crash course in sign language, a boat ferries participants to Piccanye, an uninhabited island offering tame and clear waters. Walkers are set up with equipment that includes a fiberglass helmet and a four-kilogram lead waist belt before sinking three meters below the surface and effortlessly walking along the seabed, exploring coral colonies, schools of fish, and other marine life. Sessions last 20 minutes and no swimming experience is required! Note: Though considered zero-risk, underwater sea walking is not recommended for those suffering from claustrophobia.

    The always-packed third outpost of the much-heralded Uchi (after Austin and Houston) continues the tradition of serving authentic, beautifully presented Japanese dishes in a simple, refined setting. The menu changes four times a year, based on the season, but always includes sushi and sashimi options, makimono hand-rolls, grilled yakimono dishes, tempura, and a six-course omokase tasting. It’s all crafted with products that are sustainably and responsibly harvested, from the fresh produce from local farms to the seafood that’s flown in daily from the Tsukiji and Fukuoka fish markets in Japan. A full vegetarian menu is also available (including for the omokase), as are Sake Social happy hours. Snag a seat at the counter for a front-row view of all the kitchen action.

    Goldeneye, to be clear, is not an easy place to leave. The land—the former home of Ian Fleming, where he wrote each of the 14 James Bond thrillers that would cement his place in literary and cinematic history—sits next to the tiny town of Oracabessa, on the northern coast. A warm, blue-green lagoon curls from the ocean around a small island and then lets out into a bay. You can look one direction and see a jungle, then turn around and see pristine white sand.

    Blackwell bought the property in 1976 as a vacation home and a space to entertain family and friends but later he decided to transform it. In 2016, Goldeneye debuted a jumble of new huts, arranged around a small cove, a short walk from Fleming’s house and the resort’s original villas. The huts vary in height, designed to capture cooling breezes and allow guests to forgo air conditioning. And, crucially, they’re much cheaper to book than the Villas. Which is key because, up until this point, if you wanted to plan a visit to Goldeneye, you needed to either know Blackwell personally or have the excess capital to shell out potentially five figures on a vacation. (Part of the resort’s enduring gravitational pull is that many of the celebrity guests check both boxes.) With the beach huts, Blackwell has expanded, once again, the ambition of his famous resort.

Located in the heart of the historic city, on the picturesque Herengracht canal, the color palette that runs throughout the four eateries (one of which received two Michelin stars within seven months of opening) and the 93 refined rooms were lifted straight from Vermeer’s famous Girl With the Pearl Earring painting. Soothing shades of lapis lazuli and ochre harmoniously complement the views through the large, white-framed windows, whether of the canal or the lush interior garden. The Waldorf also brought the brand’s signature superlative service and decadent spa, guaranteeing that the Amsterdam iteration would be just as beloved by the international elite as the original New York hotel.

The chef is fanatical about sourcing the freshest seafood. If you haven’t booked a table in advance, try going early and score a seat at the bar. The bartender will insist you have a glass of white wine with your oysters (try the briny Marennes). And don’t miss the excellent razor clam with maltbread, fennel, tarragon and dill.
