The glass Northern Lights Bar juts out toward the horizon, providing a perfect viewing spot when the aurora borealis appears; beneath it sits a large rectangular hot tub adjacent to the spa. As for adventure, the hotel is happy to arrange any number of excursions, including fly-fishing, horseback riding, kayaking and, for the truly bold, snorkeling in the Silfra fissure.

Toro Toro by Chef Richard Sandoval is a new 300-seat restaurant and bar that combines culinary flavors of Asia and Latin America. During a recent trip, we sat down in the main dining room to sample the award winning arepas corn cakes, small plates and handcarved steak entrees. The Toro Toro brand originated in Dubai where Sandoval has showcased his homemade empanadas to tens of thousands of diners. The bar is lined with toffee-colored banquettes and stone bull statues. Be sure to try the “Machu Picchu” cocktail consisting of pisco, St-Germain and fresh jalapenos. For groups, create a multi-venue event for 300 pax with the Olay breakfast restaurant next door. Table 40 is the private dining room located inside InterContinental Miami’s contemporary kitchen. Available for group events and intimate dinner parties, Table 40 seats 14 for a luxurious dining experience featuring cuisine by InterContinental Miami’s corporate chef, Alex Feher. “We try to enrich one’s experience at the InterContinental,” says Kovensky. “Whether it’s the level of service, the artistic presentations or the F&B.”

The Rosedeer Hotel is one of the first buildings you see in Wayne, sitting squat on a narrow piece of land between the railroad tracks and the hills behind. It looks like a movie set, and has been. Running Brave, Shanghai Noon, and In Cold Blood were shot here along with numerous commercials and music videos. A ten-gallon hat riddled with bullet holes wouldn’t look out of place. Don’t expect fancy cuisine—burgers are the norm, and if you want a steak, you’ll be delivered the meat and instructions on how to use the BBQ out back. But people don’t come for the food. Wayne is an authentic Western outpost, built before the road and at one time a thriving town, thanks to the nearby Rosedeer Coal Mine. People come in now for photo ops, for a chance to see one of the few remaining holdouts of the Wild West, and because the 100-year-old hotel and adjacent saloon are said to be haunted. But owner Fred Dayman, who was born and raised in the hotel, won’t talk about it. Book a room, if you dare, and find out for yourself.

A stone’s throw from downtown Split, Marjan is a hilltop park about the same size as New York City’s Central Park. Known as “the lungs of the city,” it’s the ideal urban escape, offering places to run, bike, swim, and even rock-climb. Inside a vast Lastarria mansion, this imaginary state unites lands in southern Peru and northern Chile, in obeisance to a sole monarch, pisco. The bar features a good 100 labels and cocktails like “Pisco’s in the Air,” made with lime juice, raspberry, papaya and basil; plus a full range of what are among Santiago’s best traditional sours. Standout food include the crunchy-seafood saltado (marinated and grilled beef strips), with mango, served on a sizzling grill; the joint’s star sandwich, El Presidente, is a solid slice of roast beef, fried egg, and shoestring potatoes. To avoid any sovereignty disputes, Chipe Libre flies its red-and-black, center-starred flag as the republic’s national colors.

In December 2017, one of the country’s oldest Ritz-Carlton properties was rebranded as The Whitley, and though the name may have changed, the property’s high standard of elegance endures. The 507 stately guest rooms—which start at a spacious 720 square feet—are currently undergoing a refresh (but still include comforts like high-thread-count sheets and Nespresso machines), and the restaurant and bar have been reimagined as Trade Root, a Mediterranean-meets-Southern lounge featuring house-made pastas, an extensive selection of cheese and charcuterie, and craft sodas and cocktails. Guests can avail themselves of the indoor lap pool—a top-floor beauty with a stunner of a glass roof—as well as a fitness center and spa, or indulge in a little retail therapy in the neighboring shops of Buckhead. No doubt further renovations will ensure that this hotel remains an icon well into the next generation.
