This little village fuels many a Chilean’s vision of the south—Germanic towns nestled among sapphire-hued lakes—and is often synonymous with summer vacation. Frutillar, just north of Puerto Varas, seems to be straight from Bavaria with its majestic “casonas,” built in the German tradition—a nod to the strong ancestry and settlement in the region. Frutillar’s lakefront has black-sand beaches, the shimmering lake dotted with white swans, magnificent views of the Osorno volcano, manicured lawns, and darling boutiques and cafes along the town’s streets. During the last week of January and first week of February, music lovers flock to Frutillar for the classical music festival where maestros from all over the world play in the Teatro del Lago, with some of the best acoustics in Chile. Ranked as one of New Delhi’s top (and priciest) restaurants since 1977, the legendary spot—now located at the ITC Maurya hotel—celebrates India’s rugged North West Frontier region in both its décor and menu. Though the faux-rustic design seems a bit like that of a theme restaurant (think cracked stone walls, low seating, lots of wood beams and clay pots), the cuisine is legit. The dishes of the Frontier region tend towards the warm, hearty, and comforting, crafted using tandoor clay ovens and wood fires, so expect staples like marinated kebabs, rich lentils, fluffy bread, and lots of meat; the signature Sikandri Raan mutton leg, burrah (lamb) kebabs, and off-the-menu Chicken Khurchan are particular favorites, along with overflowing shareable platters. Reservations are recommended as the place does gets packed.

Kenya’s Mathioya, Tana, and Athi rivers offer some excellent white-water rafting opportunities. Rafting the Athi is considered one of the top 10 river trips in the world and includes steep rapids, giant waterfalls, and stunning views of wildlife along the route. Savage Wilderness, a company in the Sagana region, offers exhilarating and well-guided white-water excursions (as well as rock climbing, archery, and more) and is an easy day trip from Nairobi. At some points of the year, the rivers around Sagana can be too low to raft on, but a range of other activities, from swimming to attempting to kayak through a 50-foot waterfall, are available.

Located just outside of Santa Cruz in the heart of the Colchagua Valley, Clos Apalta Residence (formerly Lapostolle Residence) is known for its premium Chilean wine. In 2005, the Marnier family opened the stunning property on a steep hillside in the micro region of Apalta. In addition to a state-of-the-art, gravity-fed winery, they built four villas, giving wine lovers a unique place to stay. Today, Clos Apalta functions as a Relais & Chateaux luxury hotel, complete with beautiful views of the valley and its surrounding mountains. Guests can relax on their private terrace, in the lodge, or by the infinity pool, sipping house wines while enjoying the vistas. They also have exclusive access to the dining room, where chefs use produce from the hotel’s own organic garden, and tours of the owners’ wine cellar during visits to the winery.

Café Café got its beginnings as a coffee roaster and then went on to become a coffee shop offering different blends of organic coffee from a few regions of Oaxaca. They hope to encourage the consumption of locally produced quality coffee, and they also function as a gallery, providing a space for local artists to display their work. The company has a project to support the education of young indigenous women. Order a suspended coffee: the coffee shop will match the amount you pay, and the funds will go to the Fondo Guadalupe Musalem which provides scholarships for young Oaxacan women to pursue their education.

The province of Quebec is notorious for its quaint, picturesque villages. The compact forests and the thousands of lakes in the Laurentides region certainly make for the picture-perfect Canadian postcard, including the beautiful lakeside chapel in Saint-Alphonse or the wholesome locals of Old-Town Saint-Sauveur. On the other hand, the rolling hills of the Eastern Townships are as bucolic as it gets: villages like Hudson, with its gourmet market, microbrewery and century-old houses have a slight England feel, as does nearby Sutton. However, the ultimate wintery escape from Montreal surely is Quebec City, with the snow-capped Château Frontenac, 400+ year old historic center and festive winter Carnival every February.

Tennessee has thousands of caves and Chattanooga itself is full of them. One such is Raccoon Mountain, a family-run cavern and campground that was discovered by Leo Lambert, the same man who turned Ruby Falls into the region’s most recognized tourist attraction. Raccoon Mountain is significantly more understated, located on the other side of Lookout Mountain, and hosts families in the summer. The caves are over 5 miles long and their Crystal Caverns tour will give you a taste. Their Wild Cave expeditions allow you to get down and dirty, exploring even more of the cave system. You can even arrange to stay underground overnight.

The Roscioli family, famous for their nearby bakery Antico Forno Roscioli, opened this restaurant/wine bar/gourmet shop in 2005. Book several days in advance for lunch or dinner and be sure to request a ground floor table near the back of the dining room, the best of the available dining areas. Start with a selection of cured meats and a plate of burrata, then move on to spaghetti alla carbonara, one of the best in town, therefore the world. The wine list is outstanding and has surprisingly affordable labels from every Italian region. If you can’t snag a table, pop in for an apertif before dinner service.

The walls are adorned with colorful masks and wall murals. The displays include rustic kitchen utensils and chunky hand-crafted jewelry. A trip to the Pune Tribal Museum opens up a window into the vibrant cultures of the tribes that live in the state of Maharashtra. This isn’t the biggest museum in Pune (the Raja Dinkar Kelkar Museum has a huge collection of artifacts from the region), but each tribe—such as the Warli, Bhil, Gond, Koli, and Kolam, to name but a few—represents a unique cultural and socio-economic heritage, and that is what makes the Tribal Museum such an interesting visit.
