    When famed chef and restaurateur José Andrés opened this Mexico City restaurant in 2015, it was his first franchise outside of the U.S. and Puerto Rico. J by José Andrés is located inside the W Hotel in the upscale neighborhood of Polanco, and the interior design would be a satisfying experience even if the food wasn’t absolutely fantastic. All reds and yellows and just short of over-the-top elements (e.g. dozens of tassels) evoke Spain and bullfighting, but in a way that’s totally contemporary and delightfully playful—much like Andrés himself. (If you really want to play, there’s a foosball table in one of the rooms in the restaurant.) Thankfully, the food is fantastic, too. Like the decor, the menu evokes Spain, with classic recipes like ham croquettes alongside dishes that incorporate Mexican elements. Think traditional paella, but garnished with squash blossoms.

    My CIA educational experience continued in one of the culinary world’s most famous classrooms. Named after France’s greatest chef, Paul Bocuse, the restaurant utilizes modern cooking techniques on classic traditional French fare. The multi-course meal we shared, prepared and served by aspiring young chefs was truly a delight. They showed off their skills first with an apple squash soup with mushroom foie gras ravioli followed with an entrée of strip loin of beef with oxtail bordelaise, marrow-encrusted endive, smashed fingerling potatoes, chanterelles, and gruyére foam ending with a chocolate molten cake with vanilla ice cream.

    The W Vieques Island is a luxury boutique waterfront hotel located on pristine Vieques Island, located eight miles off the southeast coast of mainland Puerto Rico. What’s interesting about the island is that despite being so close to the mainland, it still has a very raw, untouched feel, with tourism weaving itself into the landscape instead of taking it over. Guests of the hotel can explore ecotourism on the island through kayaking tours of the bioluminescent bay, beach trips, scuba diving, mountain biking, fishing, horseback riding, outdoor yoga, farm-to-bar social hours at sunset, and visits to the the local farm to see where the restaurant’s ingredients are sourced and even to create a meal for themselves. There’s also a sumptuous spa. Inspired by the holistic nature of the surroundings, the spa seems to blend into the landscape, with rivulets and canals flowing throughout the space, front-row views of the Atlantic Ocean, vine-covered treatment rooms, a reflection pool, and a spa pavilion surrounded by lush gardens.

    There is something truly distinctive yet quirky about staying in a former fine department store. Situated in a plum spot on West Broad Street, a convenient 30-minute ride from the Richmond airport, is the Quirk hotel, which is part of the Destinations Hotel Group. This is the labor of love of owners Katie and Ted Ukrop, who spent more than 10 years transforming a 100-year-old department store into a 75-room hotel with a rip-roaring rooftop bar scene, arguably the finest in the city. You’ll sleep on cushy beds made with joists salvaged from the former store, and bathe in the Barbie-like aura of the “love and happiness” rooms (incidentally, Sherwin Williams has a paint swatch by that same name). Rooms have lovely details like scallop-patterned nightstands, Tivoli radios, generously sized bay windows, and well-worn floors that look vintage. You can slake your caffeine addiction at the chic coffee bar in the lobby, or do a bit of retail therapy in the “Gallery” boutique off the lobby. It sells branded pink-and-white plaid pajamas and items like custom Na Nin hand-poured double-wick candles, crafted by Richmond resident Kate Jennings. The coffee for sale comes in brightly patterned signature rose tins that won a packaging award. “There’s no decade or theme to this gallery,” one employee assured me, but the vibe is decidedly mod-chic and whimsical, befitting the hotel’s name. The communal-style restaurant, Maple & Pine, is situated right in the middle of the lobby and is truly convivial. The culinary program is headed by chef David Dunlap, who was formerly with the Ashby Inn. Room rates from $225.

    It’s a little strange to find yourself in an Italian restaurant in Merida, when your focus should be the local Yucatean cuisine. But when a young, and talented chef like Stefano Marcelletti decides to cook for you at his brand new restaurant, it’s 100% worth the detour. We had the best seats in the house, right in front of the kitchen, which is separated by a large glass wall from the dining room. The flurry of activity inside was infectious, and the incredible dishes they churned out for us, one after the other, left our rambunctious crowd speechless and in awe. It was a real journey for the senses. Simple plates, such as a caprese salad, made our taste buds explode. At the end we all felt it was a good break from our intense foray into Yucatean food over the past few days. The restaurant’s interios is modern, perhaps even a little bit industrial in style. It looked like mostly locals ate here, as we didn’t spot a other tourists. If you’re ready to take a break from Mexican food, or simply in the mood for some scrumptious Italian fare, this is your place.     Chef Peter Merriman’s flagship restaurant in Waimea is known for some of Hawaii’s best farm-to-table foods. At the forefront of the local menu movement, his award-winning dishes include Bulogogi Spiced Kauai Prawns, Hirabara Farm Earth Grown Lettuce, and an Original Wok Charred Ahi that can be paired with a carefully selected wine from a global list of vineyards. But, for the most authentic flavors, check out seasonal Hawaiian choices that could include a Waipio Taro Enchilada or mahi mahi served with mushrooms from the Hamakua region on the Big Island. When you’ve finished exploring, go grab breakfast and a strong coffee at one of the nearby trattorias. If you’re a real foodie, consider exploring Rialto Market with a local guide who can delve into the history and also introduce you to Venice street food.

    Located a few steps away from the Ponte Vecchio in what was at one time a medieval palace, this restaurant serves a traditional menu of dishes made with regional ingredients. Their beef is sourced from a farm in the Maremma countryside and the wine list highlights Tuscan producers. Even the restaurant’s name is a nod to the local culture—orafo means “goldsmith,” and this neighborhood was where gold workshops were once located. Start with Tuscan white beans drizzled with olive oil, with a serving of fennel salami, then move on to the pasta course. (The taglierini ai piselli freschi, pasta with fresh peas, is particularly good in season.) For dessert, try the pear slow-cooked in wine or cantucci cookies dipped into vin santo, a strong sweet wine.

Enjoy an upscale meal at Oak, a beer at the Meddlesome Moth or Texas Ale Project, a cold treat at Pop Star Handcrafted Popsicles, or a cooking class–meets–dinner party at The Cookery. Keep an eye out for Eagles co-founder Don Henley, who built a private recording studio in the area.

    The setting at Coyaba, which sits among the palms at the Caribbean Paradise Inn, is hardly shabby, but this restaurant stands out for its excellent food and very creative menu. The creation of Chef Paul Newman (no relation to the actor), the menu changes daily but always includes unique appetizers and entrees that mix locally sourced ingredients with international flavors with delightful taste. Try the lobster thermidor, which comes with a Dijon-mushroom cream sauce, and melts in the mouth. Or the crispy, whole, yellow snapper fried with Thai spices for a less heavy but equally tasty entrée. The appetizers could be turned into a meal as well, as these also show off Newman’s culinary skills and creativity. The coconut-shrimp tempura is excellent on the appetizer menu, as is the guava-and tamarind barbeque ribs. Oh and make sure to leave room for dessert. The homemade chocolate fondant and lemon meringue pie are both standouts.
