    Ultraviolet is the kind of travel experience you talk about 10 years later. French chef Paul Pairet first dreamed of a multisensory dining adventure in 1996, but it took until May 2012 to open this transcendent restaurant. There’s room for only 10 diners to experience the 20-course meal at one time, and the dining room is a theater with HD screens for walls. With every course, the sounds, sights, and even smells change to complement and amplify the menu. The sublime sea bass Monte Carlo—sea bass with fresh mozzarella and sun-dried tomatoes inside a baguette—is served to the sound of Debussy, and as you eat you’ll notice a vibrant aquarium has appeared right in front of you.

Okra soup and banku is a traditional recipe from western Africa and is most popular in Ghana. Banku is made from partially-fermented ground maize and grated Cassava. We met the Okra Lady in Mallam Atta market (also known as Malata market). If you want a true local market experience, you’ll find it here. In the three hours we were there we didn’t see any other tourist and you won’t find African masks or other tourist handcrafts at this market.

    With his high-concept McCrady’s and his more rustic Husk—both in Charleston—chef Sean Brock transformed perceptions of Southern cooking from heavy, simple fare to a culinary tradition that is rich, complex, and filled with history. He worked with experts to resuscitate countless heirloom vegetables and grains lost to the agriculture industry, many of which reflect the region’s deep immigration roots (rice varieties from China; spices from Africa). He also changed the game with this simple rule: No ingredient north of the Mason-Dixon may enter the kitchen. Husk Nashville, which Brock opened in 2013, applies the same philosophy, but this time the menu is a nod to the bounty of inland Tennessee. In a 19th-century former residence in downtown Nashville, the James Beard Award–winning chef serves up his modern spin on classics such as pimento cheese, paired here with benne wafers, pickled jalapeños, and chipped beef. The Tennessee-raised pork prime rib, paired with cabbage, pecan butter, and molasses vinegar, is impossibly tender. Leave room for the vegetable plate, which highlights the best of the season’s produce.

    While hiking in Cape Town, there are plenty of moments when you’ll stop for a water break, wipe the sweat from your brow, and ignore those voices inside yourself saying you can’t possibly take another uphill step. This moment is fleeting, however, and always superseded by the lasting memories of when you feel like you’re on top of the world at the end of your hike. Silvermine Nature Reserve is 20 minutes from the city center and the part of Table Mountain National Park that covers the Cape Peninsula near Kalk Bay and Muizenberg. The Echo Valley hike can be approached from the Silvermine entrance on top of Ou Kaapse Weg (one way), or, from the entrance on Boyes Drive in Kalk Bay.

    A few years back, when Lima’s Central Restaurante was closed because of zoning issues, Peru‘s celebrity chef, Gastón Acurio, was one of many who petitioned for it to be reopened. I knew that meant the young chef at Central, Virgilio Martinez, must be doing something truly special. Virgilio’s restaurant is located in Lima’s hip Barranco neighborhood. I stopped in solo one afternoon for lunch and was dazzled by the dishes his servers put in front of me: charred purple corn with scented octopus, lentils, yuzu, and bok choy; “mask of the suckling pig” (or pig face) with tart green apple, baby tomatoes, and galangal; and suckling goat with chickpeas, goat cheese, and lemon verbena. Each course was plated like a work of art and was a beautiful riddle on the palette. My enthusiasm for my food earned me a tour of the open kitchen and the rooftop garden, where servers pluck flowers or clip herbs for dishes like the citrus gelée with edible flowers (pictured above). Chef also gave me a tour of his incredible chocolate cellar, where he shows off his favorite chocolate bars from around the world.

In Switzerland’s sunny and steep-sloped Italian-speaking Canton Ticino, locals and visitors alike love a bracing dip in the cool mountain water—and there’s no better place to witness this than at the historic Ponte dei Salti (Jumping Bridge), a double-arched bridge across the Verzasca River where bronzed young Ticinese plunge into the river’s lustrous emerald depths. From the city of Locarno, the intense hike to the ancient Roman relic hugs the Verzasca River and passes through chestnut groves, vineyards, fragrant pine forests, and the iconic Contra (or Verzasca) Dam where scenes from the James Bond thriller GoldenEye were shot. If your time is limited, take the 45-minute PostBus to the bridge (included with a Swiss Travel Pass) and walk down. Or take the bus all the way to the end of the road in the Alpine village of Sonogno, where a jade-colored waterfall pool, the river’s source, awaits.

    Although the Smoking Goat is credited with pioneering a culinary renaissance in a once-sleepy corner of North Park, nothing else about chef Fred Piehl’s flagship restaurant screams “culinary vanguard”—and that’s precisely what devotees love about the place. Regulars come here for the reliably exquisite staples: French onion soup with what’s essentially an open-face grilled cheese sandwich afloat in rich veal broth; duck fat truffle fries with pecorino romano and mustard aioli; beef cheeks à la Bourguignonne with carrots, cioppolini onions, cherry tomatoes, mashed potatoes, and braising jus; and other creations that blend traditional French tastes with sustainable, organic San Diego–sourced ingredients. While dinner at this rustic, romantic spot is hardly the time to eat lightly, if you want to go vegetarian, opt for the indulgent raclette au gratin with fingerling potatoes, cornichons, and toast, along with a salad of poached and raw pears with mixed greens, pistachio pesto, and champagne vinaigrette. And as befits the restaurant’s caprine theme, the goat cheese cheesecake with poached peach and whipped cream is a favorite dessert.

    Street-food markets are all the rage the world over, and in Vienna you have the chance to visit one that’s been around for many centuries. Built literally over the channeled Vienna River, just beyond the Ringstrasse, the Naschmarkt is devoted to what its name happens to sound like in English: noshing. Whether you order a spicy wurst, browse the fish and cheese stalls, or purchase local products like pumpkin-seed oil and apple vinegar, the Naschmarkt is one of the city’s most enjoyable simple pleasures. In recent years, some gastronomic and ethnic food stalls have expanded into full restaurants. For decades, 400 dealers have set up their Saturday flea market next door, where shoppers hunt for bargains among books, record albums and CDs, and antiques.

    This intimate, bistro-like 16-seat restaurant in the heart of Pest’s trendy Jewish quarter brings a dash of Scandinavian cuisine (and Scandi decor) to the Hungarian capital. Chef Gábor Fehér spent time in Copenhagen mastering Nordic cuisine, which here comes as mini-courses (they’re flavorful but small, so the kitchen recommends ordering at least four for a meal). Hungarian and even French culinary influences aren’t ignored, either— Fehér studied at Le Cordon Bleu in Paris. There’s a huge variety of Hungarian wines on offer, and the regular crowd is artsy and cool. By the way, “Esca” means “food” in Latin, and it’s easy to see what’s most important here.

    Mexico City has no dearth of luxurious boutique hotels, but Las Alcobas is a special option. Designed by famed firm Yabu Pushelberg, the hotel is full of gorgeous details, from hand-stitched leather wall coverings to a spiral staircase that surges up from the lobby. Upon arrival, guests enjoy a welcome drink as a bellman leads them to their room; explains the technology that controls the light, sound and temperature; and offers them a selection of handmade soaps. Once settled in, they can lounge in plush robes on their goose-down comforters while sampling snacks from the minibar. For a heartier meal, Las Alcobas offers two excellent restaurants. Just outside the hotel’s front door, there’s also Presidente Masaryk, Polanco’s main avenue full of restaurants and high-end boutiques.

    As if the Montreal restaurant scene weren’t exciting enough, 125 restaurants decided to come up with a special fall menu and draw people out of their houses in defiance of the weather. The concept behind Restaurant Week is fairly simple but oh-so-fantastic: 125 restaurants, one pre-set menu, and 3 price points ($19, $29, or $39 per head). This is a great way for Montrealers to experience restaurants that they wouldn’t be able to afford otherwise, and a way to discover new flavors. Make sure to look at the event’s website to consult the menus and pick your favorites. Reservations are strongly recommended. Also good to know: Many restaurants offer a special $19 menu for late-night orders, after 9:30pm. Bon appétit!

    Ka’ana is described as a “boutique resort,” and it appeals to guests who want a sense of being in the Belizean rain forest while also enjoying the comforts and amenities of a full-service resort. Rooms and villas here seem to blend into the jungle, but it’s clear that all is carefully tamed to ensure that guests don’t feel overwhelmed by the wildness. Rooms are decorated in earth tones, with textiles and design accents all locally crafted. Furniture is sturdy local hardwood. Master suites have outdoor showers, and there are two spacious, private villas, each with its own plunge pool, garden, and outdoor terrace, among other luxuries. Staff can arrange land and sea excursions to the country’s most popular cultural, historic, and natural sites.

    In October 2014, Chef Enrique Olvera opened his much-anticipated New York restaurant Cosme, which offers an inventive dining experience in the Flatiron District. The spacious restaurant is a short walk from Langham Place, Fifth Avenue, and features modern Mexican dishes with locally sourced ingredients and housemade tortillas. But guests should not come expecting standard chips and guacamole, Chef Olvera is known for utilizing creative and sometimes surprising ingredients in his dishes. Menu items include burrata, salsa verde and weeds, and occidental purple corn pozole, pork jowl, lettuce, radish, Mexican oregano. The eclectic menu items are meant to be shared, and certain Mexican specialties, like dried chiles, beans and heirloom corn are imported from Mexico. Chef Olvera’s Mexico City restaurant Pujol has gained world fame for his fresh take Mexican food, and Cosme offers more stellar options. The bar also pours a wide variety of mezcals and tequilas. At Sitka & Spruce, chef Matthew Dillon features a rotating menu of hyper-local Northwest cuisine in shareable small plates and mains. The artfully arranged charcuterie platter is a must-try, and don’t skip the bread — the Columbia City sourdough loaf with whipped butter is a local favorite. Just want a snack? Try Bar Ferd’nand next door, also co-owned by Dillon, for a glass of wine and simple bar snacks, or take home a bottle.
