One of the most romantic drives in Jamaica takes you just outside Ocho Rios and onto the A3 highway, through “Fern Gully": a stunning three-mile gorge surrounded by sky-scraping, 30-foot fern trees. You’ll feel as if you’re on a completely different island as you pass through this natural, green tunnel, once a riverbed. Pull off to the side where possible to stop and take in the views, and even a walk. Because this is a road often taken by visitors and is one of Jamaica’s natural wonders, there are vendors lining up the road, but not so many that it spoils the view. Keep an eye on the road at all times—there might be a man on leaf-adorned stilts appearing before you. Never a dull moment in Jamaica.

Located in the 160-year-old Leinster Hall, The Stack has to be seen to be believed. Its recently refurbished interiors are both outrageous and sublime, with emerald and sapphire walls, a leopard-print couch, and a rainbow of velvet chairs. There’s a beautiful garden out front, a brasserie and bar downstairs, and a private club on the top floor. Dining here feels like you’ve gained entry to a private, Old Cape Town world, but with a modern menu. Standout dishes include the duck rillette and the onion tart with king oyster, shiitake, and shimeji mushrooms.

Named after a famous escaped slave, this steep staircase carves into a high plateau. On your way up, stop at the farmhouse and donate $5 per person to the local family that maintains the vertiginous track, or hire a guide to enrich your experience. At the bottom, you can cool off in a tributary, then walk along the Layou River. Once you reach the Bells Schoolhouse, head left to the road where the hike began.

Outside of Carnival time, you’ll find very little in the Caribbean that’s actually open 24/7. Major hotels and resorts are the exception, of course, though even they don’t usually offer much of anything to eat that doesn’t come by way of room service.

Salamander Resort & Spa has one of the best equestrian facilities in the U.S. Horse lovers can book a stay in one of the hotel’s 168 rooms, but the facilities are also open to the public. The 340-acre resort has a 22-stall stable and nine paddocks. Professional riders and former Olympic horsemen are amongst some of the instructors who give lessons and hold clinics. In partnership with the Four Seasons Rancho Encantado, the new groundbreaking equestrian program EQUUS practices a decade-old field known as equine integrated learning. The theory is that, as our animal companions since ancient time, horses can teach us about us—participants spend quiet time moving among horses in a corral, interacting with them, and reacting to them, and, through this, learn about nonverbal communication and setting boundaries, thus gaining confidence, inspiration, and strength. At these stables in the foothills of the Sangre de Cristo Mountains, guests harness the power of the herd to gain (often very emotional) insights into themselves.

If you’re looking for a break from the beach and the noise, head to Konoko Falls Park (formerly known as Coyaba River Garden) for a quiet picnic, swim, and nature walk through beautifully manicured gardens. The Mahoe tiered waterfalls—a smaller, just-as-picturesque version of Dunn’s River Falls but rarely crowded—cascade through the park, and an on-site museum showcases the history of Jamaica’s first inhabitants, the Taino. The park offers gorgeous views of Ocho Rios’s bay below. Climbing and swimming in the falls, at your own pace, is great fun.

Or, simply walk a few hundred feet to the winery next door, Beringer, for a sampling of their world-renowned wines. Whatever you choose to do—be it lounge with a glass of wine at the new poolside bar, or retreat for a massage in the on-site spa—you can’t go wrong at this beautiful Napa wine country resort.

Stroll 15 minutes through a lush rainforest to this gorgeous 40-foot waterfall grotto, located deep within the World Heritage site of Morne Trois Pitons National Park. Railings and a broad, well-maintained trail make the trip accessible even to non-hikers, though the tree-fringed pool—which is open to swimmers—gets unpleasantly packed when cruise ships pull into port. Serious photographers should haul along tripods and cable or remote shutter releases to capture the low-light, but oh-so-lovely scenery, which has become one of Dominica’s top attractions.

Are there any nobler or more beautiful horses in the world than the gray-white Lipizzans who wow audiences with their high stepping at the Spanish Riding School? In the 16th century, the Hapsburg empire used Andalusian horses to create the breed in Lipizza (located in Slovenia). Riders still wear the traditional uniform of bicorne hats and tailcoats, part of the reason UNESCO granted the Riding School its Intangible Cultural Heritage status. In addition to watching the performances, visitors can also tour the stables and sit in on morning training sessions set to classical music.
