    Just inland from Ensenada, Baja California exists a wonderland of fine wine, haciendas and Provencal restaurants. There is an energy here that is worth dawning the bullet proof vest and heading a couple hours south of the Mexican boarder to check out the excitement and culinary innovation. In the Valle de Guadalupe wineries and restaurants are redefining where fine wine comes from and what Mexican cuisine can be. The Valle de Guadalupe sits in a valley that warms through the day and is cooled every evening by the onshore flow off the ocean, allowing perfect conditions for grape growing; which has been going on here for over a hundred years. Additionally, the valley is a source of fine olive oil, locally grown herbs and produce, local farms and seafood from the nearby ocean. The best way to experience this culinary movement is to stay at a winery like Adobe Guadalupe or Vinedos Malagon in the heart of the valley. These wineries offer more than just wine tasting and luxury, they offer activities, ranging from horseback riding to cooking classes, deep sea fishing or dirt biking. The best part of it all is you can still fill up on classic Mexican tacos and mariscos when the fine dining and wine becomes too much.

Exiting the vehicle you hear the playful singing of goats in the distance sensing the arrival of someone new. On a fall day the blue Okanagan Lake and the autumn colours create a visually robust cornucopia and you can’t do anything but drink it in. The gift shop is similar to an old fashioned western candy store as the entire building is a converted farmhouse. To my right is a display of local olive oils and vinegars. To my left is an enticing display of house made goat cheese gelato and before me is an array of goat cheeses that I didn’t know existed. From goat cheese with delicious ribbons of mouldy blue, a goat cheese that mimics a camembert and a yogurt cheese ideal for spreading there is a cheese to match all tastes.     I don’t know whether it was the early morning fog, the rolling hills surrounding the vineyard, or the grapes themselves that made me do a double-take: Was I really in Chile’s Colchagua Valley, or was I back in California’s Sonoma Valley? With its intoxicating location and old world charm, Casa Silva (the colonial-style inn that sits in the midst of the family vineyard) has the best of both. It’s a place to relax, tour the surrounding vineyards, and – naturally -- drink their own varietals (especially the Sauvignon Gris, Sauvignon Blanc, and Petit Verdot). With only seven rooms, Casa Silva sits somewhere between a B&B and a guest house, with shabby chic rooms that are a throwback to Chile’s colonial era. We snagged room no. 4, with high ceilings and a comfy four-poster bed as well as an oversized bathroom. While the inn itself is special, the restaurant is worth a visit on its own. It has a clubhouse feel, overlooking the family polo field, but with unique and breathtaking views of the Andes. Hotel guests can take a leisurely 20-minute walk through the vineyard to the restaurant, which features Chilean specialties like conger eel, queso fresco, and tuna ceviche in one of the most dramatic settings I’ve ever enjoyed. (And don’t pass up the mote con huesillos, aka “wheat berry peach dessert.”) Finally, not to be missed: the tour of Vina Casa Silva, which houses one of Chile’s most up-to-date wine facilities and the family’s collection of perfectly restored antique cars.

    Wine, as they say, belongs at the table. Yet most tasting rooms offer only the wine. For a richer experience, seek out wineries that offer food pairings or, better yet, an entire meal. At Robert Sinskey winery, cookbook author and Chef Maria Helm Sinskey pairs bites made with ingredients from their garden with the new releases of Pinot Noir and the excellent Abraxas, a blend of Pinot Gris, Pinot Blanc and Gewurztraminer. Round Pond Estate takes it a step further — the four-course lunch served on the terrace uses all biodynamically farmed produce, vinegar and honey from the estate as well as olive oil that is crushed by stone just a stone’s throw from the winery.

    Around since 1692, Spier is one of the oldest and best-known wineries in Stellenbosch. Not only does this historic estate continue to receive accolades for its wine, it’s also become a hot spot for travelers thanks to its family-friendly atmosphere. Visitors can easily spend anywhere from a couple hours to an entire day enjoying all the activities Spier has to offer, from picnics on the lawn overlooking the Eerste River to self-guided walking tours of the property. This dark but fascinating history is explored in this atmospheric 1822 town house, which was once the home and shop of Louis J. Dufilho, the first licensed pharmacist in the city—and hence in the country. Exhibits include apothecary jars, tools of the trade, and leeches. (Yes. Leeches.)
