The journey begins with the story of how gin was invented to save the citizens of London from their contaminated water supply, fizzes through Jean Jacob Schweppes’s invention of carbonation (five different levels for different digestive ailments), and ends with modern mixology. Those who don’t care for history lessons might be swayed simply by the menu’s drink descriptions.
