  • No visit to Ambergris Caye is complete without an afternoon at the Palapa Bar. Situated at the end of a dock surrounded by turquoise waters and cool breezes, Palapa Bar attracts a mix of locals, travelers, and some of the coolest bartenders on the island. On a warm day, eschew the barstools and opt instead to float in inner tubes beside the dock; you can even have cold buckets of Belize’s Belikin beers lowered down to you. In addition to beer and standard cocktails, fun creations like Scotty’s Palapa Punch (three different types of rum, triple sec, mango, pineapple, and a squeeze of lime) offer some island-inspired refreshment. Up in the palapa, recommended items from the menu include sausage dip, pulled pork sandwiches, and the immense half-pound burger. Palapa Bar is 1.5 miles north of town and easily reached by golf cart, taxi, bicycle, or water taxi, which drops you right off at the dock.

    In the heart of old town Kapaa, the Olympic overlooks Main Street with laid-back Hawaiian style. Upstairs in an old building that’s been converted into a collection of ragtag shops, the cafe has a commanding presence. Park and wander along the street to make your way to the stairs leading up to the bar and cafe. No pretense upon arrival. The tables lining the open windows in front are choice for people watching and catching the breeze from the prevailing trades. Late afternoon sun streams in and heats things up but is a welcomed delight. There’s always something cold close by to help with the temperature regulation. The bar is a mix of locals and tourists. Happy hour is a draw from four to six with discounts on drinks and select appetizers. I’m a big fish fan when near the source and the fish tacos at the Olympic take the gold. Dressed with a mango salsa and sides of beans and rice, they use two kinds of fish to keep your tastebuds guessing. There is a good selection of island beers and all the fruity umbrella drinks you can imagine. It’s right on the Kapaa multi-use path, so you can cruise in on your beach bomber for a refreshing break. Staff are friendly and service is casually good. Worth a stop when trolling around Kauai for someplace to take a break from vacation.

    Deep within Grand Cayman, one finds another restaurant on the water. Be careful not to sit too close to the edge on the deck, however, the breeze might blow you right off. Inside the restaurant is a different story. All the tables and chairs are close together, making your dining experience intimate yet open to that of your neighbor and you can’t help smiling at those sitting next to you. Written on a savvy chalkboard one finds the specials of the day, of which you will find rarities like chicken liver pate and ceviche. The food is fantastic and the drinks are phenomenal. I personally recommend anything with mango in it. Once you’re good and full it almost feels necessary to sit and talk with the wait staff before leaving. The close knit environment makes it all the more friendly. Calypso Grill is definitely one of my favorite restaurants in Grand Cayman and I definitely recommend it to seafood lovers or just food lovers in general.

    The Heladería de Lares, a 45-year-old family business, sells about 50 unusual flavors of ice cream up in the mountains. Salvador Berreto, known to the locals as Yinyo, founded the shop to commemorate the Grito de Lares, a battle for freedom that had taken place exactly one century before. Yinyo started with corn, a flavor at the heart of the Puerto Rican diet and the current bestseller. Other flavors are cod, coquito (the Puerto Rican version of eggnog), and rice and beans. Fortunately, you can taste two flavors before deciding what to buy, and the ice cream is cheap, so you can stock up. Every weekend, people form what locals like to call lines, but are really boisterous blobs extending half a block down from the shop’s entrance. While eating, people skim through newspaper clips about when Denise Quiñones, a girl from Lares, won a Miss Universe pageant, or study photos of the 1945 Fuego de la Candelaria (a fire in Lares). After reading about the history behind Lares’s anthem and running their hands over the guiro (a musical instrument played by scraping its serrated surface), people often wander outside to the Plaza de la Revolucion. Here, on a typical Sunday, artisans sell paintings of the three magi (the Puerto Ricans’ second Santa) and of flamboyanes (the national trees with orange flowers). If you have doubts as to whether it’s worth it, just ask Bill Clinton and his daughter Chelsea. In 2008, Clinton forced $100 into the hands of Yinyo’s son for a mango ice cream.

    While locals are committed to keeping Austin weird, there’s nothing strange about the new East Austin Hotel, a soon-to-be hipster haunt where millennial pink accents and midcentury chic mix with details that embody the city’s independent spirit. Here, guests find a variety of accommodations to suit all types of travelers, from cabin rooms with shared bathrooms to poolside suites with private balconies, but all feature Scandi-inspired furnishings and quirky touches like turtle-shaped ottomans, Moroccan pillows, and retro Victrola radios.

    Vintage pendants hang over the bar at on-site restaurant Sixth & Waller, a self-described “global diner” that serves international comfort food like family-style latkes, chicken-fried steak, and mango cream pie. Equally stylish is The Upside, a rooftop bar with cocktails inspired by the Caribbean and Central and South America, and Pool Bar, which welcomes both guests and locals with frozen drinks and Instagram-friendly dishes like gochujang queso and jackfruit bánh mi. The hotel also boasts a stylish gift shop with local gifts like handcrafted ceramics and leather goods, but if you’d rather venture out, stop by the concierge desk and grab a curated map that highlights neighborhood hotspots with live music, authentic food, and more.

    Book a horseback-riding tour along Provo’s white-sand beaches with Provo Ponies, which is owned by the affable Camille Slattery and located on the southeast end of the island. They offer two guided rides Monday through Friday (one in the morning, the other in the afternoon), while Saturdays are reserved for lessons on their properties, and horses get the day off on Sundays. Book well in advance during the busy season (December to May), as this is a highlight of many people’s holidays. Note this place can be hard to reach, so if you don’t have a car rental, choose their transport option from Grace Bay Beach for an extra $10 per person. Also expect to spend about three hours on the horse.

A trip here involves all the senses: sights, sounds, vibrant colors, and, most intoxicating of all, the combined aromas of spices, coffee, and just-baked bread. Along this stretch, shoppers can find fresh fruits and vegetables, eggs, fish, seafood, meats, cheeses, pastries, homemade pasta, ice cream, chocolates, and tea.     New York is definitely one of the food meccas of the world, every restaurant, a living proof of the fusion of cultures that make up this amazing city. One thing you will find here is that some of the best restaurants are not obvious to the eye. Many have hidden entrances or disguised doors. While La Esquina is also an evident fast food restaurant, the real treasure lays hidden in the basement underneath. Behind a door labeled “employees only” a set of stairs takes you down to much larger room with rustic decoration and attractive murals that evoke the Aztec theme and welcome you to your next best meal! The food is a testament of the fusion of flavors of Mexico... the tostadas (bite size crisp tortillas) de pollo and cangrejo with the spicy mango relish or the taquitos are a great way to start! Then go for the juicy marinated Carne Asada with a hint of garlic and the classic mojo or the Camarones a la Plancha and pair them with the green beans and the rice for a meal to remember!!! and please... leave room for dessert, the Crema Cocida, a velvety panna cotta with a mexican twist, or the Torrejas Brulee, a moist bread pudding with bits of pinnaple, give you the perfect level of sweetness to end a superb meal! If you go with large group (>9) they will require you to do a family style menu for a fair value, which I highly recommend!! Trust me, there will be plenty of food and I promise, it will be a feast you will never forget!

    Each evening as the sun sets, Stone Town’s Forodhani Gardens park transforms into an open-air food market. Skip the fish kebabs and head straight to the vendors selling urojo, a thick mango-and-tamarind soup served alongside chickpea fritters, boiled potatoes, cassava flakes, chutney, and as much hot sauce as you dare. Follow it up with hand-pressed sugarcane juice with ginger and lime.

    It’s as powerful an artistic representation of a country and its people as I’ve ever come across anywhere – Le Negre Marron, or in Creole, Neg Mawon. Translated into English, it’s The Black Maroon. In any language, it’s simply amazing. Commissioned by the Duvalier government to commemorate the landmark slave revolt against France that won Haiti her freedom in 1804, the statue was produced by Haitian sculptor/artist Albert Mangones in the late-1960’s. It’s an extremely moving piece – the left leg extended with a broken shackle at the ankle denoting the hard-fought freedom, a machete in the right hand showing the strength to fight, and the conch shell at the lips harkening to the old and oft-used method of alerting the masses. What makes the statue even more significant today is the fact that it survived the devastating earthquake of January 2010 completely intact. Even as major buildings like the National Palace crumbled all around it, Le Neg Mawon stood firm, resilient in the face of tragedy much like the people of Haiti have for hundreds of years. Le Neg Mawon is located in downtown Port-au-Prince, just a few short blocks from the Marriott Port-au-Prince, the country’s newest and most modern hotel.
  • There aren’t too many opportunities in the Caribbean to ride on horseback to a cave. In Los Haitises National Park, located three hours west of the resorts of Punta Cana, Fun Fun (pronounced “Foon Foon”) Cave is officially known as the largest cave in the Caribbean. Though the cave itself is in the National Park, access to the land goes across a private ranch and requires a guided tour. While the nearly three-hour drive from the resorts of Punta Cana is a lengthy, bumpy, journey into the interior, the scenes from the window provide an authentic glimpse into rural Dominican life. Sugar cane sways, schoolchildren wave, and mangoes drip from the trees. Upon reaching the ranch where you begin the tour you are shimmied into a jumpsuit and saddled onto your horse. A 45-minute ride through the shaded forest brings you to the edge of the National Park. From here it’s another 30 minute walk through sun-swallowing trees until you reach the entrance of Fun Fun Cave. Sliding into a harness and climbing gear, entering the cave requires a 50 ft. repel into a tiny hole which can barely fit your shoulders. Once at the bottom, it’s a one hour slog through the depths of the darkness before reaching the other exit. Inside the cave, stalactites and stalagmites pepper the areas which fall in the beam of your flashlight, and at some areas you are forced to swim through the soothing, subterranean waters. Here, a lone rope helps guide visitors through the hidden recesses of the cave.

The best stands are located close to Carrot Bay, where you can find steaming pockets of fish cooked in foil and fresh-squeezed mango or guava juice.

    In a new(ish) location overlooking the bay, this perennial Big Island favorite weaves local, organic, and free-range produce into culinary alchemy. Deceptively simple dishes dance on the taste buds; the rich umami of the mushroom potpie and the spicy ahi poke do a particularly fabulous fandango, along with the jalapeño-hamachi-belly sushi roll. The peppered beef carpaccio has a dedicated following, pairing soft grass-fed beef with sea salt and fried capers—as does the half-pound burger that comes topped with Gorgonzola. Even vegetarians can indulge here, starting with the cauliflower grilled with black-garlic aioli and moving onto a taro-quinoa veggie patty beside hand-cut fries. Make sure to save room for the legendary chocolate lava cake!

    From mid-May through early October, an Asian-inspired street market springs up in the Lower Mainland on Friday, Saturday, and Sunday nights—and holiday Mondays, too. Just steps from the Canada Line’s Bridgeport station, the market also offers more than 1,000 free parking spots. Adventurous eaters can graze from 100-plus food stalls, serving everything from poutine and spiral-cut “potato tornado” on a stick to creamy octopus takoyaki (a circular-shaped Japanese snack). Finish with Mango Yummy’s shaved ice desserts or a box of Dragon Beard candy—similar to floss halva and spun sugar—to take home. Then, shop over 200 retail stalls or hit the carnival rides and live entertainment.

    Offering traditional Peruvian dishes as well as others with more of a gourmet-fusion twist, this restaurant is an object lesson in using a country’s gastronomical variety to the very fullest. In particular, it’s one of the best places in Cuzco to try alpaca steak, which is grilled to perfection and served with a variety of sauces such as mango and ginger, mushrooms, or good old salt and pepper. A lovely rooftop terrace with fabulous city views is a great spot to try some mighty tasty pisco cocktails. The bar also features a plethora of infused piscos (think fruits, spices, and even chili peppers), which are great fun.
