    According to legend, Nashville-style hot chicken began in the 1930s when Thornton Prince’s girlfriend dumped cayenne on his fried chicken to get revenge for his cheating ways. But he loved it instead, and eventually opened up a hot chicken shop of his own. The Prince family carries on the tradition today at their simple strip-mall space. Customers place their orders at a kitchen window for varying levels of heat, from mild to extra hot. The spicy paste is applied after the fried chicken comes out of cast-iron skillets, and then the bird is placed on white bread and served with pickles. The addictive combo of tastes has since spawned hot chicken joints and special menu items across Music City and beyond.

    After the Grand Ole Opry left the Ryman Auditorium, country legend Roy Acuff said the redbrick building with its Gothic arches and stained glass windows might as well be torn down. The Ryman had been home to performances and broadcasts since the 1940s, but it was in poor condition and lacked air-conditioning and proper dressing rooms. Fortunately, its legacy as “The Mother Church of Country Music” prevailed and, after years of sitting practically empty, the auditorium was renovated and began hosting shows once again. Originally built as a church, the grand hall has spectacular acoustics and a lingering magic in its pews from all those years spent witnessing country music history. A trip here is practically obligatory when visiting the Music City.

    With his high-concept McCrady’s and his more rustic Husk—both in Charleston—chef Sean Brock transformed perceptions of Southern cooking from heavy, simple fare to a culinary tradition that is rich, complex, and filled with history. He worked with experts to resuscitate countless heirloom vegetables and grains lost to the agriculture industry, many of which reflect the region’s deep immigration roots (rice varieties from China; spices from Africa). He also changed the game with this simple rule: No ingredient north of the Mason-Dixon may enter the kitchen. Husk Nashville, which Brock opened in 2013, applies the same philosophy, but this time the menu is a nod to the bounty of inland Tennessee. In a 19th-century former residence in downtown Nashville, the James Beard Award–winning chef serves up his modern spin on classics such as pimento cheese, paired here with benne wafers, pickled jalapeños, and chipped beef. The Tennessee-raised pork prime rib, paired with cabbage, pecan butter, and molasses vinegar, is impossibly tender. Leave room for the vegetable plate, which highlights the best of the season’s produce.

The central location makes it an easy walk to Ryman Auditorium, the Broadway strip, and the Frist Art Museum, but do hurry back before dark. The hotel has six splashy dining and drinking options, including the brasserie-style Stateside Kitchen, a late-night sandwich shop, a DJ-fueled nightclub, and a dimly lit cocktail bar serving local craft beers and inventive libations into the wee hours.

    Originally operating as a motor hotel in the 1920s, this Poncey-Highland property reopened in 2018 under the ownership of Oliver Hospitality, the same team behind hip locales like The Fairlane (Nashville) and Station House Inn (Lake Tahoe). New York-based studio Reunion Goods & Services spearheaded the design, imbuing the space with modern-day details while reviving its retro vibes with bespoke murals, custom wallpaper, and vintage-inspired artwork. Walls get a particularly feminine makeover within each of the 95 guest rooms, thanks to Atlanta artist Sharon Shapiro’s colorful depictions of women in everyday life. While the hotel caters to solo travelers and couples aplenty, it’s fun to bring a group: 15 bunk rooms welcome the cool kids here, and each of them sleeps up to four. Bring that crew downstairs for dinner at Tiny Lou’s, where executive chef Jeb Aldrich puts forth French-American fare like Tennessee rabbit cassoulet and black cocoa foie gras.

    The Review:
    From the team behind the recently refurbished Hotel Clermont in Atlanta and the design-forward Fairlane Hotel in Nashville, The Oliver shares the same dedication to historical preservation and cool, minimalist design as its sister properties. It’s also extremely convenient, with a location near Knoxville’s popular Market Square and some of the most beloved restaurants in the city. The circa 1876 building was home to a bakery, a drug store, and a dancing hall before becoming a hotel in time for the 1982 World’s Fair. When two young developers took control of the property in 2011, they set out to create a hotel that honored that history but also offered the modern amenities guests crave. Their success is your gain at this boutique stay, which features 28 elegant rooms filled with regional art, handcrafted furniture, and fixtures created by local artists.

    Dining options include Oliver Royale, which uses ingredients from local farms and purveyors in its elevated comfort food, and an outpost of the popular farm-to-table Tupelo Honey café, where guests can enjoy lunch, dinner, and weekend brunch just steps from the hotel lobby. Most notable, however, is the much-buzzed-about Peter Kern Library, with its speakeasy vibe and craft cocktails. Now that the word is out, patrons line up under the red lamp in the alley that marks the secret entrance, but hotel guests can just stroll in through a door in the lobby like they own the joint.

    Perched over the river that runs through downtown Chattanooga, the Tennessee Aquarium offers a novel way to discover the magic of sea life. Exhibits here trace the path from mountain streams to the sea, showcasing aquatic animals in representations of their natural habitats. In the ocean display, visitors can see exotic fish gliding over multicolored coral reef formations, but the most popular attractions are the river otters cavorting in cascading waterfalls, and the penguins diving in and out of their cold-water habitat. The aquarium also features thousands of insects that flutter from flower to flower in the butterfly garden, as well as a gigantic IMAX 3-D theater that screens fascinating movies about nature and science.

    The charming little town of Lynchburg is home to Jack Daniel, the most famous distillery in all of Tennessee. Take a quick stroll around the town square before crossing a short bridge, which will lead you over a creek that flows from the same spring that provides fresh water for Jack Daniel’s delicious whiskey. Upon arrival at the distillery, you’ll find a modern visitor center where you can learn about the history of Jack Daniel’s as well as the process of making Tennessee whiskey, including the extra step of charcoal mellowing that differentiates it from bourbon.

    It’s remarkable to consider that every drop of Jack Daniel’s served at bars all over the world comes from this lovely hamlet down in the hollow—in fact, visitors are likely to see delivery trucks carrying pallets of bottles back up the hills to parts unknown. Should you want to dive deeper into the whiskey-making process, take a guided tour through the various stages of production, beginning at the source of the springwater and continuing through distillation and finally the rickhouses, where the whiskey ages for years in oak barrels until it’s ready for bottling.

    After studying the time-honored traditions of whole hog barbecue from old-timers in West Tennessee, Pat Martin brought the craft to the Nashville area. He opened his first joint in a repurposed auto-body shop in Nolensville, but now has achieved barbecue-empire status with multiple locations. The grandest branch, in downtown Nashville, includes a terrific backyard beer garden, with an open skeleton of steel beams overhead, the surrounding brick walls covered with bright murals and bric-a-brac from old license plates to portraits of Daisy Duke, and everywhere the perfume of pit smoke. It’s hard to make a poor choice from a menu that includes smoked wings in Alabama white sauce, pulled pork over hoecake with slaw (called the Redneck Taco), and simple slices of beef brisket.

    John Besh, the acclaimed chef and New Orleans restaurateur, has opened his first Nashville outpost on the ground floor of the Thompson Hotel in the Gulch neighborhood. He brings with him a love of fresh seafood and the distinctive taste of New Orleans—including his mother’s gumbo recipe—through dishes like red snapper court bouillon. The menu includes options from land, too, such as duck confit dirty rice, a Tennessee pork chop with collards and grits, and Mississippi rabbit over hand-cut pappardelle with wild mushrooms. The restaurant, accented with deep blue and touches of Nashville-casual denim, has a relaxed bistro vibe and a menu for every meal of the day.
