    When Fairmont Century Plaza first opened in 1966, this luxury hotel on a former backlot of 20th Century Fox Studios became the first hotel in the U.S. to have color televisions. The hotel was also of the site of President Nixon’s Dinner of the Century honoring the return of the Apollo 11 astronauts, and it hosted the 10th Grammy Awards when the Beatles won Album of the Year for Sgt. Pepper’s Lonely Hearts Club Band. Today, it sits in the epicenter of Hollywood biggest talent agency offices and a chic shopping destination.

    The building itself is a midcentury work from Minoru Yamaski (designer of the original World Trade Center). A $2.5 billion dollar reimagination in 2021 by studio Yabu Pushelberg brought an updated elegance that redued the number of guest rooms from 720 to 400 larger accommodations. The cool-toned rooms and 85 terrace-studded suites are adorned with digital paintings and landscape photographs and outfitted with Le Labo amenities. The outdoor pool is an oasis between office towers. The expansive 14,000 square foot spa, one of LA’s largest, offers a range of futuristic treatments including biohacking (which involves infrared technology, neuroscience, and meditation) and an “anti-gravity chair.” Celebrity trainers work with the hotel and Techno gym bags with weights and equipment can be delivered to rooms.

    Lumière is the hotel’s modern brasserie serving a California spin on French cuisine that leans on seasonal ingredients. And in keeping with the hotel’s star-spangled entertainment legacy, in the soaring, sandy-hued lobby, The Bar doubles as a drinking den for meticulously crafted cocktails and live music venue. Elton John and Mariah Carey have played here, and now a next-gen lineup of artists play neo soul, jazz and other styles five evenings a week.

Eagles members have denied “Hotel California” is anything other than a metaphor, but that’s never stopped visitors to the Baja California town of Todos Santos from assuming its Hotel California gave name to the song. Regardless, the hotel and Todos Santos itself remain fascinating places to visit. Among fun facts: The hotel was the first place in town to serve ice cream.

    Arriving at Viceroy Los Cabos (formerly Mar Adentro) is like getting a glimpse into the future of hospitality. Linked by a seemingly boundless plane of water, a series of minimalist white cubes—housing a rooftop bar, spa, world-class fitness center, movie theater, and more—rises from the desert landscape like a mirage, the work of Mexican architect Miguel Angel Aragonés. The view is memorable at Nido, a ceviche restaurant that sits under a nestlike dome of twigs. Equally striking are the 104 modernist guest rooms. Unlike the region’s traditional stucco and terra-cotta haciendas, they’re serenely spare, with floor-to-ceiling windows overlooking the Sea of Cortez and tablets that guests can use to create their own lighting concept.

    Hotels often say they’re “steps from the sand,” but here, it’s actually true. Location is everything at Malibu Beach Inn; it’s right on the water, with all of the 47 guest rooms and suites overlooking the crashing surf from private balconies, and a few hundred meters from the historic pier. There are about eight steps from the hotel’s restaurant terrace to its private stretch of beach underneath, where guests can order a chicken club sandwich or a glass of wine from the extensive list to enjoy on loungers.

    The hotel changed hands in 2015 and has since been re-imagined by L.A.-based interior designer Waldo Fernandez; rooms and communal spaces alike feature purpose built, hand-made white oak furniture and furnishings that make clever use of space. Our suite had custom built liquor shelves tucked into a tiny corner alcove. Across the hotel, artworks include prints by Donald Sultan and Jasper Johns.

    The rooms are designed to evoke a private beach house. And as you drift off among Italian linens, gazing at the stars and lulled by the white noise of never-ending waves, it’s easy to dream.

    About an hour’s flight from Panama City is David, the capital city of Chiriquí province. From there, it takes another hour by boat through lagoons, mangroves, wetlands, and estuaries to reach Cala Mia’s dock on the island of Boca Brava. Upon arrival, guests find a low-key resort, where 11 bungalow suites feature modern amenities like air-conditioning. Also on site are thatched-roof “ranchos” with hammocks and cushioned seating for unwinding in view of swaying palm trees and the nearby shoreline. The resort’s Point Sur restaurant offers a four-course meal each evening that revolves around local fish and seafood, including lobster caught just off the premises. During the day, guests can take guided hikes in the nearby forests to see howler monkeys and tropical birds, or go island-hopping with a boat captain in search of white-sand beaches.

    When Domingo Ghirardelli immigrated to the United States in 1849, he planned to strike it rich in the California Gold Rush. Unsuccessful, he opened a store in Stockton selling supplies and some confections to other hopeful miners. Flash forward a few years (and failed businesses), and Ghirardelli opened another confectionary company called Ghirardely & Girard, which would lay the foundation for today’s Ghirardelli Chocolate Company.

    Chocolate was made on San Francisco‘s northern waterfront for many years but eventually moved out of the city. Luckily the buildings still stand, including the historic power plant with clock tower. Two floors were added to a warehouse in 1923, and atop those the famous 15-foot-high letters spelling out “Ghirardelli.” Though the company continues to make chocolate, it is no longer owned by the Ghirardelli family.

    Still, there are plenty of reasons to visit the brick buildings that have been transformed into a thriving marketplace with restaurants—including our favorite, an upscale dim sum restaurant, Palette Tea House—, art galleries, shops, a winetasting room, and of course, a place to taste and buy Ghirardelli chocolate, a true San Francisco original. The square also hosts some popular San Francisco events, including an annual Christmas tree lighting and a chocolate festival held each September.

    The name lets you know what you’re in for, but it doesn’t capture the scope of the canyon or the sheer number of ferns. Shooting up from a creek, the canyon walls are 50 feet high in places and completely covered in ferns and mosses, some of which are species that have been on Earth for hundreds of millions of years. And if it feels like you’re walking through Jurassic Park, that’s not just the prehistoric foliage: Part of The Lost World: Jurassic Park was shot here. Fern Canyon has also been home to a number of other dinosaur specials made for the BBC and IMAX. Compounding the whole otherworldly vibe, you might even spot a giant salamander! Fern Canyon is located in Prairie Creek Redwoods State Park, which adjoins the two other state parks and the Redwood National Park. It can only be this green with lots of water, so expect to get wet, though there are footbridges in the summer. You can hike in-and-back, or do a full loop up and out of the canyon.

    John Gaw Meem is considered one of New Mexico’s most influential architects—and that fact alone makes this ranch, designed in 1932 by the so-called Father of Santa Fe style, worth a visit. But Meem isn’t the only big name associated with the property: Landscape architect Rose Greeley designed the gardens and artist Peter Hurd painted a mural on the property. The hotel is set on 25 acres of lavender fields, first planted in 1999 and now used for a line of in-house spa products. There are organic gardens, too, which provide the kitchen with Chimayo chilies, casaba melons, big cheese squash, and other seasonal produce. The look here tends toward clean lines, neutral hues, and quiet elegance over fussiness, though the historic rooms tend to have a bit more New Mexico flair—kiva fireplaces, exposed ceiling beams, local art—than the newer farm rooms. The latter are located in 1930s-style dairy buildings, carefully constructed to feel both of the era and of the place.

You can take a tour for $2 and it is still a working Mission, so if you’re Catholic (or not) you can attend Mass.

    With its world famous pier, bustling beaches, and chill, but lively nightlife scene that draw eight million visitors annually, Santa Monica can feel a bit crowded in the summer high season. But not at Oceana Santa Monica. Set within the posh neighborhood of Wilshire Montana, the hotel is located across the street from Palisades Park, a peaceful municipal outdoor area dotted with fig and palm trees that runs alongside the Pacific Ocean. Just stepping into the lobby feels like a world away from the hustle and bustle of the Santa Monica pier.


    Formerly known as the Oceana Beach Club Hotel, the property debuted in 2019 after it was purchased by Hilton’s upscale LXR brand and underwent a $25 million transformation. The 70 apartment-style guest rooms—most of which feature ocean views—are situated around a heart-shaped pool. Each suite has a separate living room and bedroom, Loro Piana bedding, large bathrooms, and walk-in closets. For even more space, there are two-bedroom suites with ensuite kitchens and balconies.The interior design is by Anna Busta of Busta Studio; expect moody blue couches and gold and wood design accents throughou the space that echo the Pacific Ocean.



    Though Santa Monica’s dynamic culinary scene sets a high bar, Oceana Santa Monica’s Sandpiper stands up. Seafood-forward menu items include chilled prawns served with summer melons, pan roasted sheepshead fish plated with littleneck clams, and chopped salads with asparagus, broccolini, and zucchini garnished with watermelon radish, corn, and red onions. Pair the meal with a house cocktail like the Stan Laurel (named after the actor of Laurel and Hardy fame who once called the Oceana home), composed of Empress gin, cointreau, lavender syrup, and lemon juice.

    Sutter’s Fort State Historic Park is what remains of the first settlement in Sacramento. John Sutter was given a land grant from the Mexican government in 1839 (when California was still part of Mexico). He used this land to develop agriculture and set up the first non-Native American settlement in the Central Valley of California. Now Sutter’s Fort sits right in the center of Sacramento, surrounded by Midtown apartment buildings and restaurants, but offers a place to see a bit of California history. The large white fort has been restored to look as it did in the 1840s. Original rooms include a kitchen, stables, store, carpenter’s shop, mill, doctor’s office, and other places that served the small local community at that time. A free audio tour is available. The grounds of the park include the California State Indian Museum and a small but nice area to walk with ponds, fountains, and heritage trees. Sutter’s Fort is open 10:00 a.m. to 5:00 p.m. daily. Entrance fees are $5 for adults and $3 for kids over five. Street parking is available, and free street parking can be found one to two blocks south on 27th Street.

    Carmen lies at the crossroads where quality, creativity, and sustainability (plus every other big-city culinary trend) meet. The namesake proprietress, alongside musician husband Rob Pevitts (both San Francisco Cordon Bleu graduates), is the genius who imported the restaurant’s California-sybarite style to Cartagena. She also brought a passion for everything that comes from the sea, and even imported her father, who’s responsible for serving up crab, lobster, fish, and octopus in line with standards he picked up on his many travels in New York and Japan.

    Just inland from Ensenada, Baja California exists a wonderland of fine wine, haciendas and Provencal restaurants. There is an energy here that is worth dawning the bullet proof vest and heading a couple hours south of the Mexican boarder to check out the excitement and culinary innovation. In the Valle de Guadalupe wineries and restaurants are redefining where fine wine comes from and what Mexican cuisine can be. The Valle de Guadalupe sits in a valley that warms through the day and is cooled every evening by the onshore flow off the ocean, allowing perfect conditions for grape growing; which has been going on here for over a hundred years. Additionally, the valley is a source of fine olive oil, locally grown herbs and produce, local farms and seafood from the nearby ocean. The best way to experience this culinary movement is to stay at a winery like Adobe Guadalupe or Vinedos Malagon in the heart of the valley. These wineries offer more than just wine tasting and luxury, they offer activities, ranging from horseback riding to cooking classes, deep sea fishing or dirt biking. The best part of it all is you can still fill up on classic Mexican tacos and mariscos when the fine dining and wine becomes too much.
