    September 2,1935, Labor Day - a hurricane hit the Florida Keys and was the first Category 5 Hurricane to make landfall in the United States. It was devastating! It struck at night and was terrifying as was recorded by any survivors.185 mile sustained winds fed the storm.The storm surge was 18 -20'. It destroyed everything in its way. Most buildings in Islamorada were leveled. The ramshackle camps of the railway workers in Windley Key and Lower Matecumbe Key were swept away. About 200 WW I Vets at the camps were killed. Henry Flagler’s dream of a railway that would connect the Keys to the mainland died that night. The railroad was torn up and was never rebuilt. A roadway -The Overseas Highway, US 1- was constructed in its place. The Keys were accessible by the road and its bridges. Only Gilbert (1988), and Wilma (2005) have surpassed the strength of the 1935 storm. The monument at MM 82 in Islamorada was unveiled in 1937 and about 4000 persons attended the dedication. The stone crypt in front of the marker holds the victims’ ashes from the makeshift pyres after the storm. In 1995, the memorial was added to the United States National Register of Historic Places. Locals, hurricane survivors, and descendants of the victims care for the monument. I stopped to visit the site. I stood there picturing the howling winds, the wall of water and recalled the stories and photos from that September, 1935. So many lost their lives and so many survivors’ lives changed overnight.

    New Mexico has an official state vegetable: the chile pepper. (In case you’re wondering, only 13 out of the 50 states even have such a designation.) And the self-proclaimed chile capital is the tiny agricultural village of Hatch--population 1600. But every year, on Labor Day weekend, up to thirty thousand people converge here to celebrate the hot pods during the annual Hatch Chile Festival. Climate and soil here converge for optimal pepper-growing. If you can’t make it to the Rio Grande Valley in early September, don’t worry about the flavor running out--roasted then frozen or canned, or dried and powdered, Hatch chiles can be had year-round. At Pepper Pot, a family-owned restaurant on what passes for the village’s main drag, try them stuffed--the chile relleno--or in sauce form, over enchiladas, burritos, huevos...And when it comes to which sauce to choose, New Mexico has an official state question: “red or green?” The local (and tastiest) way to answer is “Christmas,” and you’ll get both. This is down-to-earth terroir... Incidentally, several years ago, Anthony Bourdain passed through here and proclaimed Pepper Pot’s red enchiladas to be the best he’d ever had. Come judge for yourself. Open for breakfast and lunch, this converted home is a cash-only restaurant. The borders of both Texas and Mexico are only an hour away, and it’s a favorite with local farmers and bikers passing through; if you decide to eavesdrop, you’ll be hearing trilled Rs and twangy English.

    Antonio de Montesinos held it down in the New World and defended the rights of the indegenous people. He was truly ahead of his time. This statue located in Santo Domingo’s colonial section is dear to my heart. I used to go play and ride my bike there all the time. The stone and bronze statue was a gift from Mexico and was made by artist Antonio Castellanos in 1982, a year before my birth. Below is Montecino’s famous quote, which as you could imagine enraged the Spanish King and all of the aristocracy at the time. #Legendary. “Tell me by what right of justice do you hold these Indians in such a cruel and horrible servitude? On what authority have you waged such detestable wars against these people who dealt quietly and peacefully on their own lands? Wars in which you have destroyed such an infinite number of them by homicides and slaughters never heard of before. Why do you keep them so oppressed and exhausted, without giving them enough to eat or curing them of the sicknesses they incur from the excessive labor you give them, and they die, or rather you kill them, in order to extract and acquire gold every day.”

    It’s not quite Providenciales’s celebrated Grace Bay—the Atlantic surf rolls in with a little too much force for that—but North Beach, on remote, undeveloped Salt Cay, is one of the prettiest stretches of sand in all of the Turks and Caicos. Salt Cay also has the advantage over its more famous counterpart in that just about the only thing on it is the tiny Castaway, whose guests almost always have miles of pure white sand and turquoise ocean entirely to themselves. About a mile and a half from “town” lies a scattered settlement of fewer than 150 people who make up most of the island’s residents. Castaway, which consists of four suites in two beachfront cottages, offers a Crusoe-like experience, except with private dining and Wi-Fi. Each suite has a king bed, to which two more single beds can be added, a full kitchen, and a deck where in season it is possible to watch migrating whales parade by.

    You wouldn’t know it from walking the streets of Hongkou today, but this Shanghai neighborhood once was home to more than 20,000 Jewish refugees fleeing Nazi-occupied Europe. Shanghai before and during World War II was a safe harbor for European Jews, although by 1943, with the city under Japanese control, most were forced to live in what was called the Restricted Sector for Stateless Refugees, aka the Shanghai Ghetto. The Shanghai Jewish Refugees Museum is on the site of the former Ohel Moshe Synagogue, built in 1927 and one of two remaining synagogues in Shanghai (the other is Ohel Rachel in Jing’an). The museum’s exhibits showcase historical artifacts, among them a number of photographs, refugee passports, and copies of the newspaper Shanghai Jewish Chronicle.

    Pescheria Mattiucci is a fish store by day that transforms itself into a small standing-room-only restaurant a few nights of the week. Mattiucci is an old family operation, but this place is the brainchild of a young son, Luigi Mattiucci. Luigi speaks to me from behind the counter as he preps plates of fish. “There’s a tradition of eating raw fish in southern Italy,” he says. “But it wasn’t a restaurant thing. It was something fishermen did because they couldn’t store all the fish they’d caught.”

    He passes me a plate of raw red shrimp with the heads still on, slices of Sicilian tuna, and some amberjack, all of it topped with only a spray of lemon juice and some thick grains of sea salt.

    Mattiucci has expanded his family business, which began as an outdoor fish stall in the Quartieri Spagnoli. (Everything artisanal in Naples seems to originate from there, probably because only a poor neighborhood like that could supply the child labor that was the foundation of old-school artisanal culture.) Mattiucci expanded from that original location into this store in posh Chiaia and also bought fishing boats in Sicily so they could eliminate the middleman. He serves me a dish of baby calamari stuffed with friarelli, a distinctively Neapolitan bitter green. Then he offers me a sample of a new dish: the same seafood stuffed with sprigs of spring vegetables, just now in season. Mattiucci, I realize, is someone who’s taking an artisanal approach to the very traditional, and non-artisanal trade of fishmongering. He’s already expanded his restaurant to London and Milan, but Naples is still where he cooks himself. “The fish is freshest here,” he says.

    The plaza of Place Seffarine, dominated by the entrance to the al-Qarawiyin Library and a sturdy old tree, is one of the most pleasing areas in Fes. As you approach, you’ll hear the sound of the copper beaters tap, tap, tapping away. It’s well worth perusing the stalls to find high-quality cookware to take home, such as pixie pans for boiling milk for your coffee, copper tagines and teapots, and prettily etched bowls for use in the hammam. Stop at the café for seriously strong coffee and to watch the world go by, or scoot around the corner onto Derb Chouara for hot, sweet mint tea spiked with various other healing herbs at a hole-in-the-wall where you’ll rub shoulders with local craftspeople taking a break from their labors.

    “Are we still going to ride?” I ask, glancing at the storm rolling off the jagged peaks of the Absaroka mountains. Wrangler Dallin Maples, 25, responds by handing me a long, yellow raincoat as the first drops splat on the hard brim of my hat. “The trails up the hill will be too slick,” Maples says, “so we’re going exploring.” With that, he pulls his horse into the trees, and three of us follow. I’m visiting T Cross Ranch, a small, rustic guest operation in northwest Wyoming, with my wife and three daughters. As a schoolteacher about to start another busy year, I wanted to bring my family somewhere special before hectic schedules take over our lives — somewhere quiet, where we would be forced to turn off our toys and actually listen to each other. Holing up in a simple log cabin at the end of a remote mountain road seemed like just the ticket, and the old-fashioned family fun of a guest ranch seemed like the perfect level of excitement.     There are few places with as much ambiance as the Coffee House at McMurdo Station. When you drum up your ideas of what a coffee and wine bar in Antarctica should look like, this matches to perfection. I enjoyed my time there so much that I also spent numerous hours behind the bar serving up bottles of wine and lattes with an occasional biscotti to scientists, contractors, and several notables who traipsed through the Station as “distinguished visitors.” The building was once used as an exclusive Officer’s Club, but has since been opened up to the summer population of as many as 1100 people. After a cold day of work or weeks in a field camp, folks can warm up with a coffee or hot cocoa; often with a spot of Amaretto, Baileys, or whiskey thrown into the frothy mix. The fact that dry milk is the staple on station is usually secondary to the use of a ‘real’ espresso machine, and it also makes special deliveries of fresh New Zealand milk by friends in the Air Force all the more special. The coffee house culture runs deep here where people come to play a game of cribbage, socialize over knitting, chat with the bartender/barista, listen to live local music, watch a movie, or just escape from the weather.

    In 2014, Szczecin, a pleasant seaport town in western Pomerania, received a very welcome addition: the new Philharmonic Hall. Now the unofficial symbol of the city, the magnificent building appears to be built of light. Barcelona-based design firm Barozzi Veiga constructed the building on the exact site of the 19th-century Konzerthaus (which was destroyed by Allied forces during World War II), helping to resurrect Szczecin’s musical spirit. Bright and daring, the award-winning structure is still rooted in a neo-Gothic context, with beautiful interiors and flawless acoustics. In addition to the Szczecin Symphony Orchestra, the Philharmonic hosts a variety of top orchestras, ensembles, and bands throughout the year, as well as numerous festivals, competitions, workshops, and educational programs for children. When visiting Szczecin, the building is an absolute must-see—in fact, people have been known to travel specifically for the purpose of visiting the Philharmonic. Time your trip to a concert, or simply take one of the regular tours of the building.

The city says there are more than 40 that are at least an acre in size and together they account for seven percent of Westminster’s land area. City Park Lake and Standley Lake are two of the more popular ones. You’ll find interesting birds and other wildlife there.

    I hadn’t been awake for longer than a minute. I peeled back the tarp door to my room, walked out onto my deck, and leapt. It was an abrupt but purifying way to start the day. The cool, brackish water instantly defogged my mind, and my eyes opened to see the surrounding Tatai River and dense Cambodian rain forest. A lone sampan, anchored along an islet, was the only man-made object to interrupt the natural scenery. My chic bungalow lightly swayed on the calm water behind me, an incongruous encampment against the wild jungle backdrop.

    Located on the southern tip of the Cardamom Mountains, near the Gulf of Thailand, the 4 Rivers Floating Lodge lives up to its name. The retreat’s 12 landless suites all float on their own buoyant platforms, moored to the riverbank. Outfitted with a ceiling fan, armoire, and wood-paneled shower, each of the towering, safari-style tented rooms also provides a nearly 360-degree view of the tropical landscape. A boardwalk connects the rooms to a central lounge and dining area decorated in a muted variety of Miami Beach sleek.

    At first blush, getting to this secluded outpost might seem daunting. Guests can arrive by boat, drive, come by cab or take a bus from Phnom Penh: I took a five-hour bus trip from Phnom Penh, followed by a half-hour longboat ride from the village of Tatai. But the journey is well worth the peaceful reward. The Cardamom Mountains contain the largest and most intact evergreen rain forest in mainland Southeast Asia. For decades, the region was largely off-limits to developers because of land mines and fighting between government forces and the Khmer Rouge militia. This very isolation protected the area’s natural habitat, which is now home to scores of endangered species, including Asian elephants, hairy-nosed otters, and Siamese crocodiles.

    Mine-clearance efforts and the end of hostilities have made travel here safe for more than 10 years, but it remains a sparsely populated frontier. The area’s remoteness is remarkable in and of itself. In the afternoon, I took a boat ride to the Tatai waterfall with several other guests. Even our skipper, a young Cambodian man who leads visitors on these trips every day, was still in awe of the lush surroundings. “So quiet and beautiful,” he said, looking at the palm trees along the river’s edge. After we arrived at our destination, I spent the rest of the day sitting beneath the waterfall’s forceful but soothing cascades, letting nature’s masseuse relax my muscles.

    I returned to the lodge for dinner beneath an orange and purple sunset. On the restaurant’s uncovered patio, the only sound accompanying the clang of my utensils was the soft splash of kingfishers swooping to pluck fish from the river. I was less delicate, digging into skewers of mozzarella, watermelon, and fresh shrimp and a plate of steamed river fish topped with a basil cream sauce. In the lingering twilight, I sipped a gin and tonic on my private terrace before easing under my bedsheets. As the gently undulating waters rocked me to sleep, any illusions I had about roughing it in the wilderness drifted away. —Brendan Brady

Try Rive Gauche for modern French cuisine like côte de bouef with Béarnaise sauce and spiced pigeon with red plum jus, or Fu Chun Ju for authentic Cantonese fare, including dim sum like steamed chicken feet with black bean sauce and deep-fried shrimp spring rolls. Tea lovers will do well with a trip to the Tea Room, an urban escape offering private tasting spaces, a tea lab, and a retail area for souvenir shoppers.

    The Heladería de Lares, a 45-year-old family business, sells about 50 unusual flavors of ice cream up in the mountains. Salvador Berreto, known to the locals as Yinyo, founded the shop to commemorate the Grito de Lares, a battle for freedom that had taken place exactly one century before. Yinyo started with corn, a flavor at the heart of the Puerto Rican diet and the current bestseller. Other flavors are cod, coquito (the Puerto Rican version of eggnog), and rice and beans. Fortunately, you can taste two flavors before deciding what to buy, and the ice cream is cheap, so you can stock up. Every weekend, people form what locals like to call lines, but are really boisterous blobs extending half a block down from the shop’s entrance. While eating, people skim through newspaper clips about when Denise Quiñones, a girl from Lares, won a Miss Universe pageant, or study photos of the 1945 Fuego de la Candelaria (a fire in Lares). After reading about the history behind Lares’s anthem and running their hands over the guiro (a musical instrument played by scraping its serrated surface), people often wander outside to the Plaza de la Revolucion. Here, on a typical Sunday, artisans sell paintings of the three magi (the Puerto Ricans’ second Santa) and of flamboyanes (the national trees with orange flowers). If you have doubts as to whether it’s worth it, just ask Bill Clinton and his daughter Chelsea. In 2008, Clinton forced $100 into the hands of Yinyo’s son for a mango ice cream.

    The David Sheldrick Wildlife Trust rescues orphaned baby elephants from the wild, nurturing and raising them through the grief of losing their families, and then eases them back into their natural habitat when they are old and strong enough. The animals are not forced to return to the wild—at around four years old, they are moved from the Nairobi nursery to a new home near Tsavo National Park to help them gain the independence to move on. The baby elephants can be visited every day at 11 a.m., where you’ll see them playing in the mud and guzzling gallons of milk. Guests who choose to adopt an orphan can return at 5 p.m. to watch the babies enjoy an evening snack of leaves before being put to bed.
