    Just southwest of Astoria, Fort Clatsop replicates the encampment built by Lewis and Clark’s Corps of Discovery soon after they reached the Pacific. From December 1805 to March 1806, they hunted and gathered food, distilled salt, traded with the local tribes and documented their surroundings. The center includes the log fort (staffed by costumed rangers), an exhibit hall, a gift shop and films, plus trailheads for the Fort to Sea Trail and the Netul River Trail.

    Since 1983, food lovers in the know have headed to Santa Barbara’s renowned Paradise Café. Housed in an early 20th-century brick and stucco building with a relaxed atmosphere, the café’s oak wood grill is fueled by Santa Maria live oak—also known as California live oak—a wood that’s essential for the area’s regional style of barbecue. The flavors brought out by the oak in steaks, pork chops, roast chicken, shrimp and sausage, ahi tuna, rainbow trout, and salmon keep added seasonings to a minimum, so fresh ingredients remain the focus of the menu. The crowd favorite, the half-pound signature Paradise Burger, is grilled over oak, topped with Tillamook cheddar cheese, and placed on an onion roll—and best enjoyed with a glass of Paradise syrah, sourced from local vineyards. If you sit on the patio, give the historic mural more than a glance. It features Leo Carrillo, an old-Hollywood actor best known for his role as Pancho in the television series The Cisco Kid; he is locally beloved for his involvement in preserving and conserving California open spaces.

    Restaurants abound in the heavily touristed Gothic Quarter, but few of them are particularly good. Irati is one of the exceptions, a bustling spot popular with locals thanks to its excellent pintxos, traditional Basque tapas served on bread and speared with a toothpick. There’s seating in the back, but you’re really here for the experience of eating pintxos, which means standing shoulder-to-shoulder at the bar and helping yourself to the buffet of bite-size offerings. A sure bet is the jamón, lightly drizzled in olive oil, and the blue cheese topped with quince paste and walnuts. Save room for the hot snacks, like ham-and-cheese croquetas, which are brought out at regular intervals from the kitchen. And don’t toss your toothpicks—that’s how the bill is tallied.

    Chiang Mai residents tend to think that their city beats Bangkok when it comes to bohemian spirit. And the presence of occasionally experimental venues such as the North Gate Jazz Co-Op does much to strengthen that case. There’s a blissfully uncommercial freedom to this spot. The shophouse interior is crammed with musicians and patrons, while the party busts outdoors to the tables set on the sidewalk. As you might expect from the name, jazz is the order of the day here. Local and visiting instrumentalists come to play sets and to stretch out in jam sessions. The results aren’t always music to everyone’s ears, but the variety of genres encapsulates the loose, fun ethos of the place.

    Another Hong Kong “who knew?"—you can surf right off of Hong Kong Island at the aptly named Big Wave Bay Beach. Follow the local surfers to the scenic eastern end of the island near the Dragon’s Back hiking trails. It’s considered the best spot in Hong Kong for beginners; there are board rentals and lessons, too. Expect weekends to be crowded. While you’re there, check out prehistoric rock carvings nearby that depict animals and geometric designs, similar to other carvings found along the shoreline of Hong Kong. To reach the beach, get out at the MTR Shau Kei Wan Station, Exit A2, and then take the red mini bus marked Shek O.

At Shell Works St. Kitts, you’ll find shell jewelry and artwork made from local materials like driftwood, sugar cane, sand, and tree roots. Spend time browsing the beautiful selection and you might even see craftspeople making new pieces for the shop.

Martha’s draws resort guests out of their comfortable rooms and creates a delicious detour for those on their way to visit nearby Sulphur Springs. Plates—heaped with breadfruit balls, fish cakes, panfried chicken or pork, or creole shrimp, and accompanied by at least three to four sides—are served at picnic tables. The prices are quite reasonable.

Gone are the days when the average toss-it-in-the-oven pie was the only option; today, there are fun local pizza eateries, high-end gourmet pies and even hidden alcoves housing some of the very best bites in the city. Locals love Metro Pizza, which has a handful of locations throughout the city, and Rocco’s Deli, which is all about keeping pizza simple and fresh. Despite that it’s meant to be a secret, one of the best known pizza places is tucked down a hallway in The Cosmopolitan. Five50, located in ARIA, has a menu of interesting pizzas, and the chefs serve from the front counter late into the night.

    Named for the beach it sits on and famous for its views, Moonstone Grill is set at the junction of Little River and the Pacific, with a patio and large windows overlooking both. Given its full bar and specialty cocktails, many visitors like simply to enjoy a drink and take in the sunset. That’s a shame, because the food is good, too. The menu consists of local appetizers, seasonal seafood plates, and top-notch steaks. It’s not cheap, and you’ll want to make a reservation: Word has gotten out about this high-end, low-key Humboldt classic.

    A church—or, at least, a small chapel—has stood on the site of the Basilica of Notre-Dame since shortly after Ville-Marie (Montréal’s predecessor) was founded in 1642. The current building, however, dates to 1829 and was constructed in a soaring Gothic Revival style. At the time, that aesthetic choice raised some eyebrows—Gothic designs were associated more with Protestant churches than Roman Catholic ones. (Perhaps the fact that the architect was an Irish-American Protestant didn’t help the situation.) Whatever initial resistance there was evaporated in the face of the beauty of the completed building. In the decades that followed, Gothic became the popular choice for churches in Canada of every denomination in large part because of Montréal’s basilica. In the 1870s, in what was perhaps a case of gilding the lily, the basilica became even more stunning when its interiors were painted in bright colors to resemble Paris‘s Ste-Chapelle.

    The Grand Place in Brussels is the magnificent main square in Brussels. The square is the main tourist attraction in Brussels and is surrounded by numerous cafes and shops. Most of the buildings were constructed in the late 17th century, although market activity in the square dates back to the 12th Century. It’s a great place to hang out, grab a coffee or a liege waffle, and people watch.

The water of the garden’s Diamond Falls is a unique rustlike color due to the minerals picked up along the stream’s path past a volcano, two miles upstream. The waterfall’s colors change according to the recent rainfall. Though you can’t swim in the falls, you can relax in hot mineral spring baths. Visit early in the morning, and avoid cruise-ship days so you can have the place to yourself.

After dinner, grab a nightcap in the Liberator Bar, which stocks an ever-growing collection of more than 110 gins and 250 whiskies from around the world. The next day, visit the lodge’s falconry (home to eagles, falcons, hawks, and owls), or have the concierge arrange a local activity, from deerstalking and fly-fishing to hiking, boating, and pony trekking.

    The W Vieques Island is a luxury boutique waterfront hotel located on pristine Vieques Island, located eight miles off the southeast coast of mainland Puerto Rico. What’s interesting about the island is that despite being so close to the mainland, it still has a very raw, untouched feel, with tourism weaving itself into the landscape instead of taking it over. Guests of the hotel can explore ecotourism on the island through kayaking tours of the bioluminescent bay, beach trips, scuba diving, mountain biking, fishing, horseback riding, outdoor yoga, farm-to-bar social hours at sunset, and visits to the the local farm to see where the restaurant’s ingredients are sourced and even to create a meal for themselves. There’s also a sumptuous spa. Inspired by the holistic nature of the surroundings, the spa seems to blend into the landscape, with rivulets and canals flowing throughout the space, front-row views of the Atlantic Ocean, vine-covered treatment rooms, a reflection pool, and a spa pavilion surrounded by lush gardens.

    Teshima’s Restaurant is a historic Japanese diner on the west coast of Hawaii Island in Kealakekua. Welcoming and reasonably priced, the diner serves Hawaiian Japanese comfort food. The set meals are the best value, a sampling of small dishes that might include sashimi, sukiyaki, fried fish, rice, and sides of cucumber, cabbage, and miso soup. The ahi is excellent (and the wasabi so soft and fresh), but the restaurant is really known for its shrimp tempura: Every local we asked about Japanese food told us to try it here. You can get it on its own, or as part of the “deep sea trio” of shrimp tempura, fried fish, and sashimi.
