    Separating the islands of Maui and Molokai—at little more than eight miles at its narrowest point—the Pailolo Channel is one of the windiest in the Hawaiian Islands. This means swimming and water sports in and around the channel are only for the very experienced. Some believe that Pailolo combines pai (lift) and olo’olo (shifting), while others say the name means “crazy fisherman,” in reference to the rough sea conditions. The annual Pailolo Challenge, held in September, is a 26-mile course from D.T. Fleming Beach Park on Maui to Kaunakakai Pier on Molokai—one of Hawaii’s best downwind runs.

    The elegant, grown-up Compound Restaurant on Santa Fe’s Canyon Road caters to devoted locals and tourists alike with a Southwestern-meets-Mediterranean focus. James Beard Award–winning chef Mark Kiffin scores with entrées like roasted rack of lamb, salmon with crispy pancetta, and wild mushrooms with organic stone-ground polenta. At lunch, the bar menu is less pricey and offers a chance to sample the famed Compound Burger, made with local Lone Mountain Ranch Wagyu beef, and wash it down with a cold beer. Even with the fantastic cuisine, the best parts of this white tablecloth and custom furniture institution remain the clean adobe arches and folk-art decor created by artist Alexander Girard.
  • Cooked in an open pit over pimento wood, the jerk preparations here are all authentic and—according to most locals—the best on the island. Traditionally spiced chicken and pork, as well as a less fiery fish version, served in a tin container along with rice and peas and festival bread (akin to hush puppies). Getting your order to stay means eating while perched on wooden barrels, which certainly adds local flavor. While enjoying the delicious meal, you’ll get to observe the seemingly endless line of customers, and perhaps get a ringside view of a lively and noisy game of dominoes.

    The Huaxi Night Market ((華西街觀光夜市), also known as ‘Snake Alley’ is famous for selling various snake-based goods such as medicine, soup, and wine. It’s best known, however, for the shots of snake blood that one can take. Pictured, from left to right, are snake blood (mixed with liquor), snake bile, and snake venom ‘antidote’. Of course, there are plenty of other traditional Taiwanese dishes available for the less adventurous. If you’d like to see somebody actually drink the snake blood shot, you need not visit Taipei. The restaurant’s colorful umbrellas have lined the River Walk since 1946, providing a postcard-perfect backdrop for sampling enchiladas, flautas, fajitas, and, of course, icy-cold margaritas. The oldest restaurant on the riverfront, Casa Rio is beloved for its authentic Tex-Mex cuisine, but its real charm lies in its ambience. Request an outdoor table and let your worries float away with the river. Just be sure to decide between frozen and on the rocks first.

    Pho Ga (chicken pho) is traditional to northern Vietnam and is served all day. The best time to get it from a local vendor is early in the morning because it’s SO fresh and makes for a perfect breakfast. As a side note about this photo, I love spicy food so I thought that this was the perfect amount of chili peppers. As they warmed up however they spread a layer of hot chili oil over the soup making it very very spicy. While the colors make for a pretty picture, I had a stomach ache later. Stick to about 3 slices and then see how it tastes in 10 min.

    Award-winning chef Nobu Matsuhisa spent most of the 1990s and 2000s growing an empire of Japanese restaurants around the world. These days he’s expanding his global portfolio of hotels, too. This ultra-luxurious property, which occupies a separate tower inside Caesars Palace, was the first Nobu Hotel in the world when it debuted in 2013. It set the tone for the hotel group’s signature Japanese-inspired aesthetic that feels simultaneously traditional and modern. Refreshed in 2022, the 182 guest rooms draw design inspiration from kintsugi, the Japanese art of repairing broken pottery with gold epoxy. Corridors feature carpets with patterns inspired by suminagashi —the Japanese art of paper marbling. For those who favor smaller-scale boutique hotels, this hotel-within-a-hotel concept here makes the place feel intimate—not unlike a Japanese ryokan.


    The over-the-top design experience begins at check-in, which happens in a diminutive stand-alone lobby decorated with hand-hewn wood blocks. Elevators automatically read your floor with a scan of a room key, a nice touch that surprisingly hasn’t caught on elsewhere around this hospitality-minded town. Of course, adjacent to the lobby, there’s also a Nobu restaurant—the largest in the world. The restaurant offers teppanyaki-style dining where chefs prepare every course right in front of you, along with classic Nobu dishes such as miso black cod and yellowtail jalapeno sashimi.

    With award-winning restaurants such as the rustic Italian Esther’s Kitchen and epic dive bars like the Silver Stamp, the Arts District has emerged as the place for locals looking to unwind and visitors who want to live the way actual Las Vegans do. (Needless to say, most locals avoid the Strip.) The adults-only English hotel, named after founding partner and celebrity chef Todd English, offers the area’s swankiest accommodations. Visitors who aren’t into gambling will appreciate that there’s no casino here, and for points travelers, the hotel is part of Marriott’s independent Tribute Portfolio collection. All 74 guest rooms are minimalist with neutral tones; each has a stocked bar cart and an open chifforobe for hanging clothes. Bathroom showers have an ingenious hole in the glass wall so guests can turn on the water without getting soaked.


    One of the Arts District’s buzzier restaurants is the English’s own Pepper Club. Since chef English set the place in motion in the spring of 2022, the upscale Japanese and Mediterranean restaurant (English was careful not to call it “fusion”) is now under the auspices of chef Roman Allen Sarmiento, who specializes in sushi platters with fish flown in fresh multiple times each week. Sarmiento also has his own sake business—ask for a taste of his special dry elixir at the bar.
