  • Coba, Quintana Roo, Mexico
    Cobá holds what remains of a large pre-Colombian Maya civilization located on the Riviera Maya. Lesser known than Tulum, the name Cobá means turbid (cloudy) waters—probably having to do with the five cenotes (underground rivers) in the region, which played an important role in agriculture during the development of this region. At one time the city is believed to have had 50,000 inhabitants. Much of the area is still unexcavated, although recent excavations unearthed a stele, which is unique to the Maya world, as it is covered in hieroglyphics. A restored ball court confirms that the popular ball game was practiced here. Bloodletting rituals traditionally followed Maya ball games at Cobá and slaves were forced to participate. This differs from what was practiced at the later site of Chichen Itza, where the captain of the winning team was beheaded after the game.

    I walked into my hotel room and there on the bed was my personal invitation to rock. Full of island ambiance, it’s very casual spot located just a few feet from a deserted white sand beach, and a classic Barbuda experience. Just make sure to book in advance and bring your swimsuit and a towel so you can relax on the beach with a cocktail after dining.

  • Karawari Lodge is one of the most remarkable places I’ve ever stayed in what is the most incredible country I’ve ever visited. There’s no AC at the lodge, no WiFi, and very little hot water. But what there is is a real sense of adventure. Stationed on a ridge some 300-feet above the Karawari River, deep in remote Arambak country, the lodge serves as a gateway to the dense lowland rainforest that is home to a staggering array of flora and fauna and what seems like an endless number of spectacular villages. After days of exploring via riverboat, the lodge is a great place to return home to – watching the sun set over endless expanses of jungle with a cold South Pacific beer in hand is my idea of a good time.     The Exumas are a stunning archipelago of remote islands and cays strung between Nassau and Long Island, and around a dozen of these tiny islands are protected within the Exuma Cays Land & Sea Park. Established in 1958 as a preserve where no fishing is allowed, it was the first marine protected area in the Caribbean. It has been highly successful at maintaining the fragile beaches and marine life found in the area. Visitors can take boat tours to the park to go diving and snorkeling on the many healthy reefs and to explore the secluded tropical islands, where endangered Bahamian iguanas roam the beaches. On Big Major Cay, you can go swimming with the pigs at Pig Beach and give them fresh water, as their water supply is limited.

    From its perch on Travis Park, just three blocks from the Alamo, The St. Anthony hotel has witnessed a lot of San Antonio history. First opened in 1909, the hotel was technologically-advanced for its day (think private bathrooms and automatic doors and lighting), and soon became known as one of the most luxurious hotels in the country, hosting everyone from the local elite to visiting royalty, presidents, and movie stars. Now on the National Register of Historic Places, the 10-story landmark emerged from a multi-million-dollar renovation in 2015, when it was e-launched as part of the Starwood Luxury Collection. The history is celebrated in details like 12-foot ceilings, antique piano, and gold leaf-topped columns found in the emerald-hued Peacock Alley lobby space, and the marble and bronze figures of the Sculpture Garden, while a contemporary style and jewel toned colors are featured in the 277 guest rooms and suites, many of which have park views. (If you’re interested in learning more about the hotel’s past—and hearing some legendary stories—schedule a tour with a staffer.) The light-fill Loggia restaurant is an elegant spot for breakfast and lunch, while the dramatic Rebelle features Texas farm-fresh produce and coastal seafood in its shareable dinner menus. Drinks and light bites are served at the seasonal Pool Bar, set around the outdoor swimming pool and featuring views of downtown; and at Haunt, a sleek indoor space playfully named for the rumored resident spirts. Once a private club for the city’s movers and shakers, The St. Anthony Club now welcomes all with signature drinks like the Triple S.

    Cacao beans’ scientific name is theobrama cacao, which translates into “drink of the gods.” Casa Cortés in Old San Juan will truly please any god with its Cortés chocolate concoctions. This welcoming café fuses modern style of its seats and dishes with the antique charm of walls covered in Cortés chocolate molds and a short history of chocolate on a collage of artwork that exudes nostalgia. The menu features mouth-watering items such as a baguette filled with Brie, chocolate, and a hazelnut spread; a blood orange and passion fruit cheesecake topped with a chocolate mousse; and an Argentinian ice wine. I opted for the mallorca (a sweet bread dusted with powdered sugar) stuffed with Ibérico ham, Manchego, chocolate, and a guava spread, accompanied by a European hot chocolate that was to die for. My meal was perfect, but I’m sure everything I didn’t get to taste was just as amazing. That’s what you get when your chocolate comes straight from a nearby farm. While I waited for my food, I watched a video on chocolate production. There’s also a museum (unfortunately, I was unable to see it, but you can bet I’ll be back there next time I come home to my beautiful island) and some products for sale. Make sure to take a little piece of Casa Cortés with you for future indulgences—they advertise one chocolate tablet as being enough for two beverages.

    This coastal outpost juxtaposes rugged beaches with refined living. You can walk for miles and not see another sign of human development, because the waters surrounding Kalaloch Lodge are part of the Olympic Coast National Marine Sanctuary, and the land sits within Olympic National Park. The only crowds on these windswept beaches are starfish in the tide pools. The weathered-wood lodge and cabins, meanwhile, are comfy-cozy nests, and many offer pinch-me views of the waves. The lodge’s Kalaloch Room feels like a ship’s prow, with a semicircular wall of windows looking out to the water. And the Bluff Cabins sit right above the beach, with nothing obstructing their views over the Pacific. Ashley Miller, a Certified Chef de Cuisine, presides over the kitchen and showcases Washington seafood such as Pacific cod, and local oysters (the ooey-gooey macaroni and cheese features Dungeness crab and locally-made artisan cheddar). Washington labels dominate the wine list—the Kalaloch Label White Blend of Chardonnay, Semillon, Sauvignon Blanc and Viognier pairs beautifully with the menu’s seafood items—and tables overlook a driftwood-studded estuary where the winding freshwater reflects the sunset’s golden hues.
