Set right on the Split—a narrow channel dividing the island’s north and south portions—Caye Caulker’s most social corner invites tourists and locals to gather for a swim off an extended dock, or to enjoy a cocktail and music. Lazy Lizard’s recently upgraded look includes a variety of umbrella-covered wooden picnic tables, seating under palapas, and a new beach extension with steps leading into the shallow sea areas for easy entry. On the menu, you’ll find typical bar bites: burgers, fish tacos, and full meals like a lobster plate. The bar holds occasional full-moon parties, live music, family-fun days, and beach volleyball tournaments.

    This coastal outpost juxtaposes rugged beaches with refined living. You can walk for miles and not see another sign of human development, because the waters surrounding Kalaloch Lodge are part of the Olympic Coast National Marine Sanctuary, and the land sits within Olympic National Park. The only crowds on these windswept beaches are starfish in the tide pools. The weathered-wood lodge and cabins, meanwhile, are comfy-cozy nests, and many offer pinch-me views of the waves. The lodge’s Kalaloch Room feels like a ship’s prow, with a semicircular wall of windows looking out to the water. And the Bluff Cabins sit right above the beach, with nothing obstructing their views over the Pacific. Ashley Miller, a Certified Chef de Cuisine, presides over the kitchen and showcases Washington seafood such as Pacific cod, and local oysters (the ooey-gooey macaroni and cheese features Dungeness crab and locally-made artisan cheddar). Washington labels dominate the wine list—the Kalaloch Label White Blend of Chardonnay, Semillon, Sauvignon Blanc and Viognier pairs beautifully with the menu’s seafood items—and tables overlook a driftwood-studded estuary where the winding freshwater reflects the sunset’s golden hues.

One of the west shore’s most photographed locations, the outdoor bar at Chambers is also one of the area’s biggest party spots on summer weekends. Arrive by boat or car, but if you’re the designated driver, steer clear of the infamous Chambers Punch, a lethal concoction of rum, orange juice, and pineapple juice.     A favorite among Hollywood royalty, the Big Island’s Four Seasons is more secluded than its sister property on Maui. It sits on 863 acres of palm-fringed coastline, with little else for miles in any direction, other than two exclusive golf courses and some of the most expensive vacation homes in the state. Yet, conveniently, the hotel is only a 15-minute drive from Kona International Airport, and it isn’t uncommon for guests to fly in, park themselves at the resort, and never leave. Why would they? It’s an immaculate, ingenious playground, shamelessly verdant against the area’s prodigious black lava. There are seven pools to choose from, including one rock-walled rectangle in the ocean, and another man-made lagoon stocked with thousands of reef fish for guaranteed snorkeling success. Kids can camp overnight in a rock amphitheater. Lovebirds can have candlelit dinners on the beach. Even the accommodations are a Polynesian fantasy, with tropical woods and large headboards. All that, along with a tiki torch–lit beachfront, a French head chef, a swank sushi bar, a staff that treats every guest like Hollywood royalty, and honest-to-goodness cultural cred (the on-site museum and cultural center are well worth visiting), and it’s easy to understand why one would happily pay a king’s ransom to spend a few days here.

    Vancouver’s serene waters serve as the perfect playground for kayakers and stand-up paddleboarders. Newbies can book two-hour “tasters” at Ecomarine’s Granville Island or Jericho Beach locations, while more adventurous paddlers—of any level—can jump right into tours, like the summer sunset excursion along the scenic shores of False Creek (a protected inlet) and English Bay (part of the Strait of Georgia). While most tours last a half or whole day, Ecomarine also offers more hard-core expeditions, like the weeklong trip to Haida Gwaii. This craggy, rain-forested archipelago is often referred to as Canada’s Galápagos for its vast number of endemic species. It also has a wealth of First Nations heritage sites just waiting to be explored.

You’ll find apparel and tobacco stores, jewelry boutiques, a supermarket, delis, and pharmacies. By night, the area turns into a nightlife hub.

(If you don’t feel like waiting for Queen Emma to reopen, you can take a ferry between Willemstad’s Punda and Otrobanda districts instead.) At night, the bridge’s lights cast a shimmering rainbow on the water.

    Hidden away at the end of small byway off Telok Blangah Road, Labrador Nature Reserve (also known as Labrador Park) is a quiet hillock where you can find the remains of Fort Pasir Panjang. It was one of about a dozen coastal artillery forts built by the British in the 19th century to defend the western passageway into Keppel Harbour. Military buffs will enjoy seeing the old gun placements, supply tunnels, and pillboxes of the former fort, while others will get a kick out of seeing cruise ships and giant yachts coming within a few yards of the seawall as they squeeze through the narrow passage into Keppel Harbour.

Stop in Scuba Nation or the Dive Shop in Sihanoukville to arrange a trip to the completely undeveloped island. Please note that Koh Tang is recommended only for experienced divers, however, the snorkeling is quite appealing here, too. The season between December to April provides the clearest views below the water’s surface.

As you walk into the lobby there are high-backed chairs that are white in front and red with white writing on the back. The carpet is a chaotic pattern of circles and bright color dots—it all seems like something out of Alice in Wonderland. This modern, hip motif is transferred to all the guest rooms.

Weekends bring crowds from Phoenix, just two hours to the south, but away from pavement, you can still get away into the elements.

    Situated roughly halfway between Da Nang and Nha Trang, Qui Nhon is a quiet coastal town with a curvy beach that is refreshingly low-key. It doesn’t get the hordes that visit Nha Trang to the south (the stretch of sand isn’t quite as alluring here), and certainly lacks the development that is a feature of Da Nang’s beaches, resulting in a city that is remarkably unaffected by the unstoppable reach of tourism—note the number of fishing boats that still dot the water here. There are some fine Cham ruins in the vicinity, including the Thap Doi (meaning Double Towers) and the Banh It Towers, as well as the Long Khanh Pagoda, constructed by a Chinese businessman in the 18th century.

The whitewashed, sun-dappled store on an upscale stretch of Sacramento Street inspires instant kitchen envy in all. Pungent spices are displayed in black glass jars with custom labels, hand-thrown serving wear is stacked in elegant totems on the wood shelves, and a fat-bellied AGA stove stands against a wall of spotless subway tile. If you aren’t a home cook, you will vow to become one after a visit to March. The proprietor, the perpetually chic Sam Hamilton, came from New York and a career in fashion before finding her way here. She even interned with Alice Waters for a spell at Chez Panisse, which helps explain Hamilton’s knack for curating items—like handwoven tortillero baskets, Parigi stemware, and fishmongering knives by Pallares Solsona—that aren’t just beautiful but also useful to cooks who actually put their kitchens to work.
