    What’s Shakin’ is a fantastic local food spot located outside of Hilo, on the Big Island, along what is labeled the ‘Pepe’ekeo Scenic Drive.’ They are known for their fresher-than-fresh smoothies, but also boast a menu that’ll appease even the hungriest of visitors. Walk up to the window, order up some grub, and then sit at the picnic benches and enjoy the afternoon as the friendly staff prepares your order. We ate here on the first and last day of our visit, it’s really that good.

    In the heart of Morne Trois Pitons National Park bubbles this deep, flooded fumarole—the second-largest of its kind in the world. The hike to this dramatic, blue-grey cauldron traverses steep, rain-forested river valleys and skirts around mudpots veiled in steam. The 8.1-mile roundtrip is best navigated with a local guide. Heed trail closures and never swim in the lake. The temperature occasionally drops, but scalding water and harmful gases could erupt at any time with no warning.

They do serve Cusco’s local delicacy, guinea pig.

    To stay at the Verana, an eco-lodge outside Puerto Vallarta, guests take a 30-minute boat ride to the village of Yelapa. (Dolphins accompanied me on the journey.) Scattered on a jungle hillside are eight variegated cottages and stand-alone rooms. My cottage, Palapa, had no walls, which maximized the views of the Bay of Banderas. A gang of chatty wild parakeets provided my wake-up call.     It’s hectic, crowded, hot, and loud. But Piraeus port is an unforgettable experience—all modes of humanity coming together on this intersection of land and sea. Luxury cruise ships, bigger and whiter than you ever imagined, slowly approach, dock as if in slow motion, and unload their thousands for the day. Greek ferry lines like Blue Star or Hellenic Seaways efficiently shuttle locals to their weekend island getaways. Fisherman, cargo loaders, captains, and all kinds of other workers get busy doing their jobs. And lately, refugees from less fortunate lands are visible, looking for work, connection, or escape. There’s not much glamour in Piraeus Port, but there’s nothing quite like taking a bit of time as you wait for a ferry and watching life pass by.

    Located near Dundee’s now-thriving waterfront, the Michelin-starred Castlehill Restaurant serves sophisticated Scottish cuisine made with locally sourced ingredients. Just know that some shops open only when a ship is in port.

At the bottom, you can cool off in a tributary, then walk along the Layou River. Once you reach the Bells Schoolhouse, head left to the road where the hike began.

    Superstar chef José Avillez’s flagship dining destination is considered the country’s top restaurant. One of Lisbon’s Michelin two-starred affairs (the other is Alma) and fresh off a recent refurbishment, Belcanto is indeed the perfect place to enjoy Portugal’s rich bounty in the most wonderous, creative, and experimental of ways. The classic tasting menu (€165) nets you Avillez’s signature Garden of the Goose that Laid the Golden Eggs (egg, crunchy bread, and mushrooms), his most famous work of culinary art. More experimental is the Evolution menu (€185), where dishes such as sea bass with smoked avocado, pistachio oil, lime zest, and dashi push boundaries of tradition. It’s a tough choice, especially considering the classic menu ends with Avillez’s wicked cold citrus bomb of a dessert, Tangerine. Belcanto rang in at No. 42 on the coveted 2019 World’s 50 Best Restaurants list.

As its name implies, Jovanina’s Broken Italian breaks away from the traditional rules and expectations of Italian cuisine with the measured confidence of a master. Owners Jennifer and Jake Linzinmeir bring years of restaurant experience, both in the kitchen and in management, to Jovanina’s, which allows them to find an approachable balance of new flavors and classic dishes to the menu. The airy ground-floor space feels festive, with whitewashed brick walls along one side and a bar running the length of the other; a downstairs wine-bar dining area has a quieter, more intimate vibe. Try any of the handmade pasta specials or go with the favorite: a brick-oven pizza topped with fennel sausage, smoked mozzarella, and caramelized onions.
