    The past is present at Quinta Real, a colonial-style hacienda set in a residential neighborhood 20 minutes from downtown Guadalajara. In keeping with history, the property features soaring stucco ceilings, stone archways covered in crawling ivy, and wrought-iron balconies overlooking manicured gardens and cobblestone walkways. The story is the same inside, where 76 spacious suites are decorated with ornate Corinthian columns, well-curated antiques, and a palette of soothing ochres and greens. Like other hotels in the area, the Quinta Real has a swimming pool, butler and valet services, and a business center, but it’s the international dishes at Tierra Mia restaurant that are truly worthy of the hotel’s five-star rating.

Prefer something stiffer? The cognateque offers tastings of its 9,000 varieties. The staff can arrange rolling lessons at the on-site cigar company, but if the way to your heart is through your stomach there’s also a culinary academy and a chocolatier. The restaurant has five dining areas, including a garden gazebo, plus private dining in the wine cellar and at the chef’s table. The chef’s secret recipes are masterfully prepared and take advantage of fresh local ingredients like conch and lobster. After the meal, you can take a cognac or a handmade cigar from the in-house cigar makers. Dinners at Graycliff have a dress code of no shorts or sandals, and jackets recommended for men.

Both are the sad realities of a dying tradition in France of sourcing provisions from neighborhood artisans. Young affineur Baptiste Yapar doesn’t let the disheartening takeover of corporate food business dull his passion. The firebrand cheese master focuses his energy on running his shops Au Coeur du Marché (at the Marché d’Aligre) and educating the public. At La Cuisine Paris cooking school, he takes a small group through a complete background of cheese (it didn’t begin in France!), methods of production and the various designations and families of cheeses available. A copious tasting of 7-10 different cheeses (with wine) follows the contextual debut and is, as my friend and I agreed by the end, the closest thing approximating cheese heaven on earth. It is a fascinating two-hour experience that will not only inform how you consider the nuances of cheese in the future but will have you excited to seek out your nearest independent cheese shop for more.

If you don’t have a partner, the resort has a pool of members who will gladly come play with you. There are paths throughout the 900 acres of the resort perfect for jogging, walking, and biking. Didn’t bring your bike? There are bike and surreys for rent. Lake Innisbrook is stocked with fish and fishing equipment is available to rent. Catch a bass? One of the restaurants will cook it up for you for dinner. The resort provides shuttles to nearby attractions including the beaches of Honeymoon Island. The Salamander Spa and Packard’s Steakhouse restaurant are open to guests from outside the resort with prior reservations.

The name Samphire is the name of a salty tasting water plant found nearby. Chef Garrison uses it frequently to ramp up the flavors in his straight-from-the-farm, forager, cheese maker, or fisherman, in his flavorful and fresh cuisine. Tip: Samphire is so popular, book a dinner seating when you make your hotel reservation. So head out to the gorgeous Oregon Coast soon and plan to stay here. You’ll be surprised and delighted. And may not want to leave.

Popular especially with wedding groups, the Harmonie Embrassee fills floors 10–23 of the Chaska Chayamachi tower and has a glass Sky Chapel on its top floor, with striking views of the surrounding Umeda neighborhood. It’s also where 450 couples tie the knot each year. The high-ceilinged lobby has giant glass windows, while rooms come in four schemes ranging from classically elegant to Asian minimalist with dark tones and padded leather headboards.
