    From its location in Denver’s Union Station, Mercantile Dining & Provision makes delicious and nutritious meals accessible to commuters and travelers passing through. This is the second eatery by Alex Seidel, a committed restaurateur who purchased a farm east of Denver to better understand the journey food takes from field to plate. The on-site market offers artisan-made provisions from spices and pickled beets to jams and jellies to coffee and potato chips. In the dining room, chef and partner Matt Vawter serves dinners so good you may miss your train—the spicy mussels (served in a tomato-butter broth perfect for mopping up with bread to console yourself after the shellfish and fennel sausage are gone), the housemade pastas, or the rotating selection of fire-roasted meat and fish entrees, can make the most fastidious traveler lose track of time.

    Every Wednesday morning in my neighborhood near Fatih Mosque, the traffic disperses, the roads are closed, plastic canopies are strewn from building to building, and thousands of stalls bursting with color and produce are set up across several blocks. It’s my favorite day of the week because not only do I get to rub shoulders with the locals, I can also grab a bargain of fruit and vegetables, cheeses, olives, herbs, spices, kitchen odds and ends, clothes, shoes, bags and haberdashery. Not all the fashions are geared to the western tastes, but wandering through the makeshift open-air markets is highly entertaining as vendors compete over offering the cheapest bargains with the loudest voice. It’s also an opportunity to better understand how the locals live—just keep in mind that the market is in a somewhat conservative neighborhood, so dress modestly to avoid becoming the main attraction.

    Rocky’s has been in business in Detroit since 1969. In its current form on Russell Street in the Eastern Market neighborhood, it’s a superstore for candy and nuts. However, it also offers spices, oils, specialty cooking items like gluten-free flours and mixes as well as ‘Made in Michigan’ products, such as McClure’s Pickles. Most items are only available in bulk. Some items are pre-packaged. Take your time exploring the aisles, Rocky’s is not small and hidden gems abound in its many aisles. It’s an ideal place to take the kids but travelers of all ages will find something to love. Products can also be ordered online and shipped to your home.

    From morning until late afternoon every day (except Sunday), this blocks-long outdoor street market in De Pijp district teems with locals and tourists shopping for everything from produce, fish, and spices to clothing, fabric, and household goods. Among the 300-odd stalls you’ll find a wealth of Dutch delicacies including its famed cheeses, freshly made stroopwafels (a crunchy caramel-filled treat), kibbeling (fried-fish bites), and, for the brave, raw herring. There are also plenty of souvenirs to be had (clog key chains, canal-house magnets, Amsterdam T-shirts), and it’s a great place to pick up for cheap anything you forgot to pack (chargers, adapters, and socks galore).

    Located in a former home built more than 100 years ago, this intimate restaurant excels in ambience and Caribbean specialties. Outdoor tables sit next to a pool and pretty tropical gardens, while the dining room boasts an array of European antiques. A son of the restaurant’s original owners, the current chef specializes in such dishes as bouillabaisse, crunchy okra, and cinnamon-and-brown-sugar sweet potato mash. Also on offer is seafood prepared with local spices and coconut milk. Whatever you choose, don’t miss the wine cellar, which once functioned as the home’s cheese room and now features nearly 2,000 bottles by 120 labels.

    This understated beach bar is one of Ambergris Caye’s best-kept secrets that is quickly getting out. Owned by “Wayo from Cayo”, Wayo’s has become my regular hang out spot over the past two years. Wayo and his wife Dee can be found at the bar every day, often sharing a drink with many of the regulars. They’ve developed longstanding relationships with countless locals and a number of tourists, many of whom come back every few months to see Wayo and the crew. The main bartenders, Ruby and Archie, will not only serve up some great drinks, they are a wealth of information on what to do and see in San Pedro. You’d be hard put to find a more chill spot to relax right on the beach. Be sure to try a local specialty — the Michelada. Made with beer and a mix of spices, this is Belize’s version of the Bloody Mary and the best cure for a hangover! Open daily, 10am to midnight.

    First thing when we got out from the underground parking was to be hit by the smell and sight of street food, in the harbor area. They only take cash so I could not wait to find an ATM to get some of the delicious looking food. I have never had sea snails so they were the obvious choice for me and boy was I right to make that choice. They are delicious. Large and a bit chewy cooked like a soup with lots of vegetables. A bit salty and spicy, nothing crazy, just enough to give it a good kick, really yummy. I love trying new things and it looked like everybody was going for them too. There are two options of cooked snails, natur - in a clear soup - and in a tomato soup. The ingredients look the same and the spice is in both options. The only thing is, make sure the seagulls keep a safe distance, they are extremely bold and will come close enough to take it from your bowl, yes, from your bowl.

    Park View’s Call Your Mother leans on the “ish” in “Jew-ish Deli” by adding creative twists to their wood-fired bagels. Whether you opt for savory like “The Amar’e,” a middle eastern-spiced za’atar bagel with candied salmon cream cheese, crispy shallots, radish, and cucumbers, or sweet like “The Rashida,” a sesame bagel with apple, honey, and bacon peanut butter spread, Call Your Mother’s playful, carb-centric menu will satiate. While my gluten-free diet only allowed me to sample spoonfuls of their melt-in-your-mouth spreads and schmears, the constant line out the door confirms the food is geshmak. The team’s attention to detail extends from the kitchen to the kitsch decor, including a wall of framed photos of half-Jewish rapper Drake, a nod to founder Andrew Dana’s own half-Jewish upbringing as well as his love of hip-hop. Dana’s taste in music also powers the soundtrack and that, along with the bright turquoise and pink decor, keeps the energy in line upbeat. According to Dana, their success is due to an unyielding work ethic that they honed while opening and running Timber Pizza Company. They love what they do and will never stop giving their all to the community.

    This unassuming adobe house in Santa Fe is home to one of the world’s ‘top ten places’ to drink chocolate. (Seriously. It ranks up there with anything in Europe or South America.) Walk the few blocks from the city’s central Plaza, open the door and inhale the pre-columbian fragrance of the eight or nine ‘drinking elixirs’ that will be swirling and ready to serve. Free samples will tempt and educate you... My wife lingered over the “Spanish” blend, sipping on a blend of chocolate, floral essence, coconut sugar and spices, while I had their version of “atole,” a traditional hearty breakfast drink made with blue corn masa, chocolate, honey, Mexican vanilla, and local chimayó chile pepper. But there’s more to cacao here than just drinking; the handmade truffles, caramels and mendiants are arrestingly good! The house-made agave caramels dusted with chile powder (again, from the beloved chimayó peppers from their namesake valley just north of the city) or topped with nuts from the pinyon pines so common in the foothills of the Sangre de Cristo mountains--these are treats with a definite taste-of-place. Sip. Savor. Linger. Marvel.

    A trip on Oahu’s windward side to the North Shore is not complete without a stop at the yellow Shrimp Shack. Two wonderful women operate this truck and serve up locally sourced fresh shrimp and other delicious food. As a warning, the meals are usually loaded with garlic and spice, but oh so wonderful. Instruction are painted on every yellow table top: “Suck, peel, dip, and EAT.” Drinks (and other convenience-store items) are available at Ching’s Store next door. The truck is bright yellow and impossible to miss on the North Shore. Be sure to stop in and say hi and indulge in some amazing spicy shrimp!

    Chile en nogada is a poblano chile pepper, stuffed with peccadillo (shredded meat, aromatic diced dried fruit and spices), topped with a walnut-cream sauce and pomegranate seeds. This dish from Puebla is not often found on menus of Mexican restaurants in the U.S. It’s not even that common south of the border, except during the August-September season surrounding Mexican Independence Day. If you’re in downtown Tucson, however, you can try it at Penca. In a repurposed space with exposed brick and hip cocktails, this restaurant is also a worthy destination for brunch or late afternoon tacos. Choose from carnitas, fish, lengua, cabeza, nopales, carne asada, and more. The corn-tortillas are handmade right after you place your order. (The tortillas alone are almost worth the trip.) Mexico City is the inspiration. The food is fresh, and the scene is full of optimism: downtown Tucson is reinventing itself with a new streetcar for a live-work-play vibe. Taste and see how this desert city continues to evolve. (Penca has recently been named one of the best bars in the country. Start your meal here with a creative cocktail!)

    Curaçao definitely runs on “island time,” but it’s worth getting to this café early so you can eat lunch or dinner on the colonial building’s second-floor veranda. Gaze across the bay at Punda’s colorful houses, then savor the gourmet menu. A top pick is the keshi yena, Curaçao’s national dish: cheese stuffed with spiced meat, olives, capers, pickled onions, and prunes. Wash it down with a glass of awa di lamunchi—lime juice with a dash of brown sugar. Other favorite dishes include the fresh fish, the coconut braised-goat curry, and the braised-beef stew (karni stoba).

    Had the tastiest Laing Pizza during a trip to CamSur (Camarines Sur), Bicol Region, Philippines. This is a great example of fusion food which combines an Italian pizza with a very local Filipino dish called Laing. Laing is a dish made of gabi (taro) stem and leaves and coconut milk, which originated from the Bicol Region. Since Bicol is one of the few regions in the Philippines that love to eat spicy food, Laing is heavily spiced with siling labuyo (red hot chilies). Different versions have come about adding a bit of bagoong (fermented shrimp) or meat to the dish. With the Laing Pizza we ate, the spicyness of the Laing combined with the gooey cheese of the Pizza simply wakes up those taste buds! I would definitely want to go back for more :-) You can try this at the cafe inside Camsur Watersports Complex (CWC) in Camarines Sur, which is a popular venue for several world events involving wakeboarding. You can also do some wakeboarding yourself or get some lessons if you’ve never tried it. It’s fun! There are several accommodation options inside the complex from budget to high end.

    Dornier’s modern cellar and production facility is quite different from the traditional 18th- and 19th-century buildings you’ll see in the winelands. For example, a pool above the cellar regulates the temperature of the wines in an eco-friendly way. Its reflective surface also helps keep the entire subterranean building cool. The cellar’s overall design pays homage to the Dornier family’s history in the aviation industry. Contact the winery in advance to arrange a tour of the facility, then enjoy a tasting of award-winning wines like the Dornier Donatus White (a blend of chenin blanc and rich sémillon), the Dornier Merlot (with hints of plum, mint, and roasted nuts), and the Cocoa Hill Sauvignon Blanc (featuring notes of mulberry, roasted oak, vanilla, and spice).

    Visiting the 17th-century Büyük Valide Han in Eminönü is my all-time favorite experience in Istanbul. It’s an Ottoman inn that accommodated traveling merchants over 350 years ago and also stored the Oriental and European wares from the wooden ships moored in the Golden Horn. The han is hidden away in the backstreets of the Spice Bazaar, though got some big-time exposure when featured in a montage in the 007 movie Skyfall. Artisans still make and repair some of Turkey’s well-known handicrafts in the timeworn workshops upstairs, but my favorite feature is the view from the roof. To experience this you need to locate the building off Çakmakçılar Yokuşu. Then go up the steep stairs and say, “Merhaba” (hello) to the craftspeople. If you’re lucky, the caretaker will agree to unlock a door that hides a secret staircase to the roof. Do give him a tip for his kindness and time because the view of the Bosporus, dividing Europe and Asia, is spectacular. A little word of warning: The roof is flat (with some domes), and there are no safety rails—so watch your step. Please respect the history of the building too and collect only memories and leave only your fondness for Istanbul to waft away in the Bosporus breeze.
