Central Jordan is bisected by the King’s Highway, which runs south between the Dead Sea and the desert. The undoubted highlight of traveling this route is the massive Crusader castle of Karak, with its immense fortifications looming over the provincial town that bears its name. Built in 1140, it was one of the last outposts held by the Crusaders after Jerusalem was recaptured by Saladin in 1187. It fell to the Arab-Kurdish armies the following year after a long, drawn-out siege and continued to change hands—and shape—over time. The Mamelukes widened the moat and added more towers, while the Ottomans built a massive entry gate.

Today, Karak remains the largest, best-preserved castle in Jordan. Inside, there are tunnels, dark chambers and dungeons, and vast, arched-roof stables to explore. If you head east out of town, past the Cairwan Hotel, there’s a lookout point where you can get a spectacular view of the castle in its entirety.

From the moment you touch down on the grounds of the 135-acre working cocoa farm, a stay at the Fond Doux feels like a step back in time. It begins in your suite, one of 15 cottages that have been lovingly restored by owners Lyton and Eroline Lamontagne in the colonial style, with traditional gingerbread trim, four-poster beds, and pastel walls. Though some cottages have private plunge pools, you’ll want to make your way to the cascading main pool, which overlooks a verdant rain-forest glen. If all this sounds a little sleepy, don’t fret: A free shuttle is available to whisk guests to nearby Sugar Beach, and frequently rotating minibuses pass the hotel on their way to restaurants and shops 10 minutes away in Soufrière.

Eschewing a grand lobby in favor of intimate nooks and hideaways, thoughtful design marries the Chesapeake Bay’s nautical heritage with modern touches throughout the inn. The spacious rooms are casually luxurious in calming shades of white and blue; when combined with Belmond’s unparalleled service makes for a truly relaxing getaway. Spend the day on the water with the resort’s fleet of Alerion yachts before sinking into a waterfront Adirondack chair with a glass of wine in hand to watch the sunset over the bay.

Located a few blocks from Courthouse Square and Whiskey Row in downtown Prescott, about 100 miles north of Phoenix, the Motor Lodge is ideal for a retro road trip. The 13-room lodge began life around 1910 as summer cabins. After a century of serving as all manner of accommodation, it was purchased in 2008 by Joe Livingston and Brian Spear, who set out to prove it had at least one more life as a modern boutique hotel, complete with comfy beds, tastefully eclectic decor, flat-screen TVs, and free Wi-Fi. One of the few hints that this is no longer an old-fashioned motor court is the bright yellow exterior doors and other splashes of color that suggest a more modern era. Still, there are throwbacks—some delightful (the room porches which are close enough together, and few enough in number, that chats with people who might otherwise remain strangers seem the neighborly thing to do) and some not so much (the tiny bathrooms in most of the rooms that would have passed without comment in earlier decades). Mostly, though, the two hosts seem to be striving for, and achieving, a hospitality that often becomes a guest’s strongest memory.

Accessible only by boat, and with a daily rhythm determined by the tides, this beach resort co-founded by Scottish fashion and costume designer Ellis Flyte sits on the southwest part of Pemba Island, a 30-minute flight from Unguja, the main, more touristy island of the Zanzibar archipelago. The 18 thatched-roofed, canvas-walled rooms and suites are set directly on the white-sand beach, shaded by the surrounding mangrove forest, or perched on the hillside above, providing panoramic Indian Ocean views. A wooden jetty extends over a long, shallow drop-off, enabling guests to swim in front of the hotel at low tide. But the best beaches and snorkeling are 15 minutes away by speedboat off Misali Island, a conservation zone with more than 300 fish species, giant sponges, sea fans, and fields of old-growth cabbage corals. More sites reachable by boat offer a variety of reefs and drop-offs for experienced divers. Other activities include sunset dhow cruises, kayak trips through the mangroves to the ruins of an Omani fort, windsurfing, water skiing, wake- and knee-boarding, dolphin watching, and deep sea fishing. The resort’s informal vibe encourages guests to go barefoot even at the dinner table, but bring wading shoes to protect your feet against sharp coral and sea urchins.

Spending a day at a spa was something that never crossed my mind until I heard about the day spa at the Meritage Resort and Spa just outside Napa, California. I decided to give it a go and emerged a believer. Spa Terra is built in a cave under a vineyard behind the resort. The facilities are new, and everything seems perfectly tailored to make the guest feel comfortable. I loved hopping from the hot tub to the steam room and then back again. After relaxing with a cool glass of cucumber water, it was time for a massage, then a shower, and back into the hot tub, after which came wine-tasting in the adjacent Trinitas tasting room and time doing nothing at the outdoor pool. At the day spa, guests choose what they want to do when. Besides the massage appointment time, there is no schedule. I ended my day with a light meal from the resort’s cafe and an invigorating hike in the vineyards above the spa. As a busy writer, teacher, and mom, I felt like I could forget about my day-to-day concerns and just focus on being there in the moment.

Technically part of Tahaa in French Polynesia, Vahine Private Island Resort is an escape from reality. The hotel features three beach bungalows, three self-contained beach suites and three overwater bungalows, all with beach views and designed using only natural materials in such a way as to make you feel like you’re in a traditional Polynesian home. Moreover, the resort is set on a 23-acre private island lush with coconut trees and white sand beach.

Snorkel in their vibrant coral gardens, kayak to nearby motus or to natural sting-ray pools, take in a coconut show, learn how to tie a pareo or weave palm leaves, paddle a traditional Polynesian outrigger canoe or take an excursion to the nearby mainland of Tahaa (the “Vanilla Island”) or a private motu. Guests love their food and beverage program, with French dishes crafted using local cuisine and cocktails infused with local fruits and juices.

Tip: Don’t leave without having a traditional massage with scented Monoi oil on your deck, where you’ll hear nothing but the billowing palms and gentle crashing of waves.

Nestled between pristine beaches and lush forest, the peaceful town of Watamu is ground zero for water sports in Kenya. One of Kenya’s most renowned kite-surfing schools, Tribe Watersports, is based here and offers three–day courses to get you skimming the warm waves of the Indian Ocean in no time. If you’re happier underwater, Watamu will also appeal. A maze of rich coral reefs skirts the shoreline, so giant turtles and exotic fish can be seen year-round, and at certain times of the year majestic whale sharks pass through this region, making it a snorkeling and diving haven. Located on seven-mile-long Estero Island, Fort Myers Beach is precisely the sugar-sand playground you come to Florida’s Gulf Coast to enjoy. Named among the best in America, the beach is long and wide, making it perfect for a stroll or bike ride—especially at low tide. Vendors here sell everything from umbrella and chair rentals to parasailing adventures and eco tours. A 10-minute drive from Buffalo Niagara International Airport, this swanky property is named for Frank and Dolly Reikart, a vaudevillian couple who became the nearby town of Amherst’s “first family of hospitality” in the 1900s. A Tribute Portfolio Hotel, it won “Hotel of the Year” from its parent company, JW Marriott, in 2018. The 92 guest rooms and 12 suites blend classic decor with distinctive style. While no two are alike, each one features some mix of wood and leather furnishings; a neutral palette of white, beige, and brown accented by bold blue; and 50-inch flat-screen TVs wired for streaming content. Guests can also expect complimentary bicycles and a warm welcome for pets, though a surcharge does apply if you want to bring your furry friend.

When not in your room, explore the lush, campus-style grounds; work up a sweat in the club-style fitness center; or browse the on-site gallery, which features original paintings by local artist Peter Fowler. There’s also the Main Lobby restaurant for breakfast, lunch, and dinner, and the Fireside Lounge for drinks. The onsite restaurants are top notch, easily keeping your calorie intake therapeutic. The bars offer a wonderful mix of island cocktails to melt away any residual tension from your stand up paddle board lesson. The little bay on the south end of the resort is home to a healthy group of huge sea turtles, easy to paddle up to in a kayak or board. Walking everywhere is easy and entertaining. Whaler’s Village is just a mile up the beach on a paved path the takes you through some of the other resorts in the neighborhood. Rooms are crisp, spacious and have some ocean views. The resort is medium-sized so you don’t feel overwhelmed by the physical plant. Speaking of plants, there are hundreds of native flora dotting the grounds. Also wondering about are flocks of flamingos and penguins. The Hyatt is a first-class operation leaving you free to relax to your heart’s content.

This region of China is known for textiles and embroidery, so it isn’t a surprise that Chongqing has a huge selection of tailors. They can make clothing in 2–3 days, for very low prices. Some tips for tailoring clothing in Chongqing: —You usually get what you pay for. Most tailors close to Liberation Square are a little pricey, but the quality is good, they usually speak some English, and they’ll even deliver to your hotel. The tailors down in Ciqikou will be cheaper but more of an adventure. —Chinese tailors seem to make suits and qipaos (a traditional form of dress) the most. That doesn’t mean they won’t make anything you want, but you’ll probably have the most luck with a copy of something you own—a photo might work, but it’s hit-and-miss. —A tailor will ask you to choose a fabric, then take your measurements. At the end, they’ll give you a price; most people don’t haggle over this. A simple shirt can cost around 80–120RMB, to give a you an idea of cost. You must pay part of it as a deposit, then the rest on pick-up. —Specify as many details as possible, especially with formalwear. I usually buy my own buttons, zippers, and even thread in advance, because the materials the tailors use are often cheap and not good quality.

On a hopping night, Noorderlicht (Northern Lights) blazes with colorful lights visible clear across the IJ River—hence its name. For those drinking and jamming to live music on a waterfront terrace warmed by a roaring bonfire, the setting is more intimate. We’ve reached Noorderlicht, a “cultural café” in Noord-Amsterdam, via free ferry from Central Station. Destination: NDSM yard, a revitalized shipyard that belies its maritime/industrial heritage with warehouses and shipping containers transformed into nightclubs, hotels and student housing. Dotted with fishing villages, condos and restaurants, the eclectic neighborhood calls itself “Art City.” With its airplane hangar shape and greenhouse-like architecture, Noorderlicht enhances the funky landscape. The popular café draws creative types who come for waterfront dining, drinking and dancing. Inside, warm-hued wall hangings, wooden flooring, tables ornamented with polished driftwood and a disco ball contribute to an inviting ambiance. Seasonal lunch and dinner menus feature organic and regional dishes, plus casual fare like frites and burgers. Noorderlicht’s grassy terrace offers a spectacular view of Amsterdam city center from the other side of the Ij River. Dine on wicker chairs, cushioned couches and picnic tables as musicians perform overlooking the waterfront. A roster of events ranges from campfires and poetry readings to DJ nights that usually inspire some pumping and grinding in a young, energetic crowd.

Being in a busy Asian capital like Taipei can easily make your stress levels skyrocket, leaving you in need of a serene haven.
