    One of Napa Valley’s most iconic destinations, Auberge du Soleil got its start in the 1980s as a restaurant—a fine-dining destination in one of the most picturesque locales in one of the world’s most beautiful places. Needless to say, it was only a matter of time before the wine aficionados who frequented its scenic dining room clamored for a place to stay (so they could enjoy more wine, naturally). The hospitality experts at Auberge obliged, dotting the 33 acres of vineyard and olive groves with elegant, French Riviera–inspired maisons, as well as a luxury spa inspired by the bounty of the natural surroundings. The sun-soaked swimming pool has views that rival those of the restaurant (and come paired with Italian ices and the never-ending temptation of a cool dip in the water). Throw in a bistro and bar—more Mediterranean-inspired cuisine with, yes, that view again—and lush grounds that include an art gallery, and it’s no wonder that Auberge du Soleil is still one of the area’s top stays.

Today, they serve as the inspiration for the Drovers Inn, a hotel and pub just north of Loch Lomond. Nestled near the banks of the River Falloch, the property offers a rustic setting for filling meals, frosty pints, and drams of malt whisky. Come for bar-food favorites like steak-and-Guinness pie, fish-and-chips, and venison casserole, and stay for the live musical acts that play every weekend. As the inn has been in operation for some 300 years, tales of various hauntings are part of its appeal.

    With its medieval churches and soft rolling hills covered by vineyards, Kakheti is Georgia’s answer to Tuscany. Among the region’s most charming places to stay is Chateau Mere, located near Telavi, the largest city in Kakheti. The place calls itself a chateau, but the quaint, turreted, rough-hewn stone complex feels slightly like a ramshackle estate of an eccentric, over-hospitable uncle who treats hotel guests like friends. Owner George Piradashvili is gregarious (even by Georgian standards) and is the entrepreneur behind the excellent Winiveria winery. He opened the hotel in 2011 because he wanted a place for his friends, who are mostly Georgian musicians and actors, to stay in. The living room is crammed with photos of Georgian celebrities who usually stay here, along with a piano, antlers galore, Georgian textiles, and an antique gramophone that all create a homey feel. The 15 guestrooms have pine floors and tasteful, minimal furnishings. Most guests prefer to hang out by the pool or on the terrace, taking in the romantic views of the lush Alazani Valley and the dramatic Caucuses mountains beyond, drinking the owner’s juicy Saperavi wines or the aromatic white Khikhvi, and tasting his house-cured meats and stringy, briny artisanal cheeses. The hotel also arranges grape-picking and crushing activities, cheese-making and bread-baking demos, and horse riding. Piradashvili also owns the romantic lakeside Royal Batoni hotel.

Bostonians have been slurping down oysters at America’s oldest continuously operating restaurant since 1826, and while you won’t find Union Oyster House on any haute dining lists, it’s well worth a stop when you’re walking the Freedom Trail or exploring the area around Faneuil Hall. Sidle up to the semicircular oyster bar right inside the front door just like Daniel Webster once did, or feast on a classic New England shore dinner in the upstairs dining room, away from the crowds. There you’ll find a plaque marking the booth where JFK liked to scarf baked beans and clam chowder—one of the restaurant’s many reminders of its long history of catering to celebrities.

    For much of its history, the western edges of Manhattan neighborhoods like the West Village and Chelsea consisted of small manufacturing buildings and warehouses that served the piers on the Hudson River. Over time, those factories were replaced with residential developments, and shipping largely moved out to Brooklyn and New Jersey. What remained, however, was an abandoned light-rail line, located above street level. After 10 years of lobbying the city, state, and federal governments, the first section of the High Line park opened in 2009. It now extends for 1.45 miles, from Gansevoort Street in the south to 34th Street at its other end. An innovative design by James Corner Field Operations uses native species to preserve some of the feeling the old rail line had when it was overgrown with weeds. It has quickly become one of New York’s most popular attractions, both with residents and visitors who stroll the length of it, as well as a model for other cities attempting to find new uses for old infrastructure.

Guests are encouraged to hike around the grounds (the hotel can also arrange for excursions farther afield), visit the resort’s Ecocenter, or relax in a naturally heated spring-water pool while listening to birdsong.

    The superior casitas are the simplest accommodations, but still come with plush robes, hand-crafted Andean slippers, and a separate dining area. Superior deluxe rooms feature fireplaces, while suites offer terraces with garden views. The most lavish option, the Villa Inkaterra includes an open-air shower, plunge pool, and 24-hour butler service. When not luxuriating in your room, visit the glass-walled restaurant, which has stunning views of the river, or head into Agua Calientes, which is just a few minutes away and offers several other dining options.

    John Gaw Meem is considered one of New Mexico’s most influential architects—and that fact alone makes this ranch, designed in 1932 by the so-called Father of Santa Fe style, worth a visit. But Meem isn’t the only big name associated with the property: Landscape architect Rose Greeley designed the gardens and artist Peter Hurd painted a mural on the property. The hotel is set on 25 acres of lavender fields, first planted in 1999 and now used for a line of in-house spa products. There are organic gardens, too, which provide the kitchen with Chimayo chilies, casaba melons, big cheese squash, and other seasonal produce. The look here tends toward clean lines, neutral hues, and quiet elegance over fussiness, though the historic rooms tend to have a bit more New Mexico flair—kiva fireplaces, exposed ceiling beams, local art—than the newer farm rooms. The latter are located in 1930s-style dairy buildings, carefully constructed to feel both of the era and of the place.

Guests can spot wildlife from the lounge, then be completely surrounded by the bush in their air-conditioned rooms. Have breakfast under the shade of an enormous weeping boer bean tree, while away hours at the pool with a book and your favorite drink, and indulge in a fireside dinner, surrounded by lanterns and candles. During their stay, guests even enjoy a dedicated vehicle and tracker team to guide them on twice-daily drives, bush strolls, and walking safaris. Its curatorial strategy starts with staples like vinyl LPs and midcentury barware, then drills down to men’s and women’s clothes and footwear that walks a line between Bettie Page, lumberjack, and future shock. Once you’ve loaded up on Hawaiian shirts and skinny-girl jumpsuits, as well as tattoo-inspired and other Mexi-kitsch artworks, retreat to the upstairs café and restaurant, whose airy industrial vibe complements a menu of delights like herbal teas, artisanal brews, and light Japanese fare.

The experience combines picking up staples, hard-to-find cheeses, baked goods, and charcuterie with popping down here or there for a quick gourmet taco, torta, burger, or bit of barbecue. The sweet-tooth set does not leave disappointed, and a retro midcentury vibe makes the market’s shared tables particularly pleasant; the top-floor terrace is a perfect retreat on late afternoons for artisanal beers, mezcals, and a full range of cocktail options.
