    Situated roughly halfway between Da Nang and Nha Trang, Qui Nhon is a quiet coastal town with a curvy beach that is refreshingly low-key. It doesn’t get the hordes that visit Nha Trang to the south (the stretch of sand isn’t quite as alluring here), and certainly lacks the development that is a feature of Da Nang’s beaches, resulting in a city that is remarkably unaffected by the unstoppable reach of tourism—note the number of fishing boats that still dot the water here. There are some fine Cham ruins in the vicinity, including the Thap Doi (meaning Double Towers) and the Banh It Towers, as well as the Long Khanh Pagoda, constructed by a Chinese businessman in the 18th century.

    The Vietnamese banh mi offers everything you’d ever want in a sandwich. It is an explosion of flavors and textures: tangy, crunchy, spicy, and savory. Chef Tebi Nguyen creates this culinary alchemy in an East Austin trailer: He takes pork that’s been marinated in fish sauce, garlic, red shallots, and a touch of honey and pan-sears it, then applies a final char with a blast of a torch. The meat is tucked into a baguette that’s been swiped with mayonnaise, and then showered with a crunchy tangle of cucumbers, jalapeños, and daikon.

    Della’s, the breakfast-and-lunch-only restaurant at the Delano Las Vegas, prides itself on sourcing ingredients from local farmers and growers—yes, they really exist in the middle of the Nevada desert. The menu has options that can satisfy diners with all sorts of dietary restrictions: vegan, gluten-free, vegetarian, and more. For breakfast, you can taste the difference that comes with farm-fresh produce, especially in the egg dishes. At lunchtime, the off-menu ramen bowl features a savory mushroom broth with a pork shank, house-fermented cabbage, and a slow-poached egg. Della’s is also one of the only places on the Strip where you can get cold-pressed juice made to order. The overarching commitment to sustainability extends beyond the menu: Glasses here are created from recycled liquor bottles from Vegas clubs.

    Valley of Fire is the oldest state park in Nevada, and a great place to see 3,000-year-old Indian petroglyphs and explore the red sandstone formations created during the age of the dinosaurs. Bring your camera to photograph the landscape while hiking this rocky landscape formed over 150 million years ago. The red sandstone gives off an incredible light, which makes the grey rocks nearby appear turquoise. Great place to camp while watching incredible sunrises and sunsets! Photographers will go crazy for this place, especially in spring, when a variety of wild flowers bloom. Skip the Las Vegas strip and head straight to this magical place!

    Who would have expected that an ancient order of nuns would be generating buzz in Québec City’s restaurant scene? The Augustinian Sisters have been present in the city since the 17th century, devoted to caring for the poor and suffering. But as their numbers declined the nuns chose to venture in a new direction, and in 2015 they opened a wellness hotel and a restaurant. The menu is limited—soup, a salad bar loaded with grains and roasted vegetables, and a choice of a chicken, fish or vegetarian entrée. On a recent visit, a dish of chicken and wild rice in green curry sauce proved to be one of the most memorable meals in a city of excellent restaurants. The money raised by the hotel and restaurant helps support the nuns’ outreach programs—which makes eating well feel even better.

    Bufalina owner Steven Dilley once lived in New York City, where he taught himself how to cook pizza in his subsequently overheated apartment. He was a good teacher and a good student. The University of Texas alumnus became one of the early movers in the Neapolitan pizza game in Austin and now operates two Bufalina locations. The igloo-shaped stoves that turn out charred and supple pizzas never would have fit in that old apartment, but they have become the centerpieces of his Austin restaurants. The menus celebrate local bounty with a couple of fresh salad options, and the daily pasta is always a must. Dilley has also put together one of the city’s most intriguing wine lists, an unexpected page-turner for restaurants the size of Bufalina.

    Top Chef finalist Tiffani Faison showed off her versatility in opening Tiger Mama, her second restaurant, as an un-Americanized Asian-fusion concept—wildly different than Sweet Cheeks Q, her Boston barbecue joint. What’s similar is Tiger Mama’s Fenway location and its creative take on traditional preparations, in this case Thai, Malaysian, and Vietnamese dishes grouped under general headings (like Cold & Fresh, Crispy & Spicy, Rich & Earthy, and Noodles & Rice) to aid in navigating the maybe-unfamiliar names of dishes. The short-rib crudo is the go-to starter; “pig rice” is a typically generous portion of rice mixed with bacon, tasso ham, and Isaan sausage, sprinkled with pork floss; and the tiki drinks will flow as the sharing plates are passed.

    Set in a gorgeous space with high ceilings and a relaxed colonial vibe, Cookhouse operates under the guidance of renowned chef Jean-Georges Vongerichten. The focus is on intense flavors and textures from vegetable juices, herbal vinaigrettes, and broths, with lots of fish and veggies on the extensive menu. Much of the wide-ranging Continental fare has an Asian twist, from the lightly fried calamari with a citrus dipping sauce to black-truffle-and-fontina-cheese pizza; roasted cod with spicy herbal coconut broth; and kale salad with lemon, mint, and green chili. Cookhouse occupies one of the huge old buildings of the former Tanglin Barracks, a base built in the 1860s for Singapore-based British soldiers that in the past decade has become an upscale dining hub.

    Mandarin Oriental’s first Caribbean resort has all the amenities you’d expect from the luxury brand—with the price tag to match. Nestled within lush greenery overlooking the white sands of Godahl Beach, the 26 suites and villas, which sit on the grounds of a 1,200-acre estate on the island of Canouan, are elegantly appointed with modern furnishings, marble baths, and rosy accents befitting the hotel’s name. Here, though, it’s all about the public spaces, including a Jim Fazio–designed golf course overlooking sparkling blue waters, a hilltop spa specializing in island-themed treatments, and four elegant restaurants serving every kind of cuisine, from pan-Asian to Italian. At Turtles, a cocktail lounge straight out of the Hamptons, opt for the Pepper Bliss, made with rum, bell pepper syrup, and pineapple juice.

It’s one of my favorite spots in the city for beautifully cooked fish, always fresh and expertly seasoned. The kind of place you’ll want to return to again and again.

    Starting in 2014, this collection of historic buildings was reinvented as a gastronomic hub—helping to revitalize the city’s downtown in the process. An early 20th-century citrus packing warehouse became the Anaheim Packing House, a virtual United Nations of food: Walking through the 42,000-square-foot hall, you’ll find citrusy ceviche at Urbana, fried chicken sandwiches at Sweetbird, garden-fresh hot pot at Rolling Boil, organic curry at ADYA, and matcha shaved snow at I Am. Craft beer—quickly becoming a signature of Southern California—is in no short supply, thanks to bars like Anaheim Brewery, housed inside a 1925 mission revival building. A circa 1917 marmalade factory became the MAKE Building, where you can linger over a flight of California reds at Pali Wine Co. or a plate of pulled pork at Jav’s Barbecue. The compact district is distinctly Californian, from the succulents and air plants inside to the palm trees and olive groves of Farmers Park outside—a grassy knoll where, at any given time, you might happen upon a free yoga class, a gardening demo, or a live acoustic band playing under the sun.

    Conch is as ubiquitous on Turks and Caicos restaurant menus as palm trees on the beaches, and at Da Conch Shack, you’ll find it prepared any way you can imagine. Of course, there are the classic dishes of conch fritters, conch chowder, and conch salad, but you’ll also find entrées such as curried conch and conch creole. The breezy beachfront restaurant on Provo also serves fresh catch, local lobster, and non-seafood items like steaks and burgers.

    After laying abandoned for more than 20 years, a historic Art Deco swimming pool and health club in the 16th Arrondissement has been reborn as one of the most unique hotels in Paris—one that even locals check in to when they want a quick getaway. Now part of the MGallery by Sofitel collection, the property feels much like an urban resort thanks to its location—while the city center and typical tourist sites are a metro ride away, the block-long hotel sits right in the middle of attractions like the Jean Boulin stadium, Parc de Prince, the Roland Garros tennis center (home of the French Open), the Auteuil racetrack, and Bois de Boulogne Park. Design-hounds also love the place for its eye-catching, very Insta-worthy spaces, including the vibrant reception area (with its graffitied Rolls Royce installation) and the lobby-level brasserie and bar (done up in restored Art Deco elements, a mix of contemporary and flea-market furnishings, street-art-inspired murals, and colorful modern artwork).

    It took a 1920s cotton magnate and a 1980s oil heiress to create the city’s most iconic stay, the former incorporating hallmarks of European design into a 10,000-square-foot house the likes of which had never been seen in Dallas—think Italian marble columns, 19th-century Spanish cathedral doors, and a ceiling inlaid with 2,400 separate pieces of wood. The latter transformed it into the Mansion Restaurant, which remains an award-winning favorite, adding a new wing with 143 guest rooms and suites and establishing the first property in the now-global Rosewood chain. Past the signature peach facade, the since renovated accommodations mix modern technologies with gracious amenities, historic touches, and residential-style décor—a combination that’s proved a hit with visiting dignitaries, international business travelers, and privacy-seeking celebs. A small pool, fitness center, and massage treatment rooms round out the facilities in the new wing, while meeting rooms and event spaces are located in the mansion’s gorgeous former living quarters. Young professionals flock to the leather-walled Mansion Bar for after-work craft cocktails and live music on weekends, while the brunch crowd heads to the Terrace restaurant to dine around outdoor fireplaces and oak trees hung with lanterns. Just don’t pass up ordering the legendary tortilla soup at The Mansion.
