    The beloved Cambodian breakfast dish of nom banh chok is a love-it-or-hate-it dish for most foreigners, who would probably prefer to have this cold to luke-warm noodle dish served hot. The process of making these rice noodles is depicted in bas reliefs on Angkor temples, suggesting that the dish dates back to the Khmer Empire and traveled to Thailand at the end of the Angkorian era. In Thailand, there is a similar noodle dish called kanom jeen. In Siem Reap it’s typically served at street-side stalls and by roaming women vendors who carry baskets of ingredients on their shoulders. Like anything in Cambodia, you can expect to find an array of versions but a favorite comes with a yellow kroeung curry, a mound of thinly sliced banana blossoms, pickled cucumber, and fresh fragrant green herbs.

    “Café con piernas”, or coffee with legs is an institution in downtown Santiago. Founded originally as Italian-style espresso bars decades ago, bar maidens serve steaming cups of frothy “cortados,” pumped out by macho men manning the coffee machine. While many patrons are men who must enjoy the mini-skirts, today, office workers and those running errands stop in to experience this classic coffee--Santiaguino style.     Louise Loubatieres’ gorgeous light-filled little concept store on increasingly hip Hap Guan Street is one of those stores you can easily lose hours in. The fascinating shop is located in self-styled Kandal Village, a compact neighborhood of three parallel streets wedged between the French Quarter and Old Market area that has become an emerging shopping, eating and drinking district. The lovely Louise, who can often be found out the back of the shop baking or making a pot of tea, is of Cambodian, French, British, and Vietnamese heritage, and her ancestry is reflected in her impeccable taste and passion for arts, crafts, textiles and design objects from Southeast Asia, and her carefully curated selection of beautiful things. Unlike some of my favorite shops, Louise doesn’t limit herself to ‘made in Cambodia’ products, and won’t hesitate to source pretty things from places like Chiang Mai or the Mekong Delta if she discovers something special. Louise largely stocks homewares, from colorful lacquer bowls to textiles that can serve as table runners.

    Our guide warned us about the freezing water before we left the warm surround of our tour bus. That was of course after he had also told us that the ‘Fountain of Youth’ so sought after my humanity since time immemorial, was just outside our window in the form of the River Sligachan on the Isle of Skye, in Scotland. Scandinavian blood may run in my bones but freezing cold water is not my “cup of tea”, so I merely exited to take photographs whilst others in my group did in fact dip their hands and faces in the rushing river. How did Sligachan come to be known as the ‘Fountain of Youth’? The story goes that a poor Highland maiden was horribly disfigured by a clan rival to her own but then was saved by a faerie queen. The queen immersed the girl in the Sligachan River and when she emerged, she was beautiful and scarless once more. Whether you believe the stories or not, and the Scottish have many, the area around the river is stunning in its wildness and subtle colour. It’s an incredible place to stop and take photographs but do leave yourself at least 35 - 45 minutes. Hike up and down the river, away from the bridge that is so well known [and where visitors are normally dropped off], and make sure to get a few landscape photographs that don’t have hordes of tourists in them!

    With its lanes of thatched-roof, old-Irish bungalows fronted by flowering gardens, lovely little Adare is beloved by a certain subset of Irish grannies as the prettiest village in Ireland. It’s easy to see why: An hour south of Shannon Airport on the river Maigue, the town has charm to spare (although it’s quite touristy these days). Adare’s crown jewel is east of the town center, where the 19th-century Adare Manor lies with its pergola-covered stone walls, turrets, and gables on 840 acres of manicured gardens and wild woodlands.

    Designed in grand Gothic Revival style and completed in 1862, the manor took 30 years to build—and provided valuable industry for villagers during the potato famine years. Inside, it’s a castle with some quirks: 365 stained-glass windows and 52 chimneys, for instance, for each day and week of the year. Rooms have four-poster or carved-mahogany beds, sitting areas, and semi-chintzy drapes.

    Wat Phra Kaew, the Temple of the Emerald Buddha, is revered as the most sacred Buddhist temple in Thailand. The temple is located on the grounds of the Grand Palace at the historic center of Bangkok, and it is a highly important site to the Thai national identity. The Emerald Buddha itself is a 26-inch-high statue hewn from a single piece of deep-green jade stone, and no one but the Thai King is allowed to touch it.
