    Did you know that the world’s largest spring fed swimming pool is located in the high desert in West Texas? I’d heard of Balmorhea on a previous visit to Marfa, so when the weather got relentless this time, I drove north, in search of cold water to dive into.

    Arriving at Balmorhea after an hours drive through the arid high desert felt like a mirage. It’s almost like you don’t quite trust your eyes. The pool is huge and the water a deep color of turquoise. It’s paradise, except for those pesky little black fish that nobody had warned me about. As soon as you stop swimming those little buggers come to nibble at you like a swarm of underwater mosquitoes. It’s funny, and trust me, it keeps you moving!

    I only went to Balmorhea for the afternoon to cool off, but they do have overnight options there. Even if you’re only there for a few hours, bring some food–as the options to buy anything good are thin.

    Katara Beach: It’s only one mile long, and you must pay an entry fee, but this beach is located right in the middle of the city. This beach in the Katara Cultural Village features one of the highest concentrations of water sports that Qatar has to offer. There is a strict dress code precluding women from showing elbows and knees, but Katara remains a very popular weekend spot for locals and expats. The space offers a variety of activities, including fishing trips, parasailing, water skiing, wake-boarding, kneeboarding, and windsurfing. You will also find a bouncy castle in the water, along with banana boats, kayaks, sailing dinghies, and canoes.

    Ollantaytambo’s namesake archaeological site is one of the best examples of Incan architecture in the region. It’s easy to spend a half day exploring the temples and other structures there, especially if you factor in time to hike up beyond the ruins. Meanwhile, the quaint town itself remains much as it was in Incan times, with original houses, streets, and waterways. Some buildings are open to the public, offering a fascinating glimpse into a centuries-old way of life. Most Machu Picchu–bound trains leave from the station here.

    Netta Bottone, the force behind this rustic eatery, is everyone’s favorite Italian nonna. The cuisine at Cumpa’ Cosimo—enjoyed by celebrities from Gore Vidal to Mariah Carey, as well as locals and travelers—is straightforward and made with heart (and fresh ingredients). The day’s selections will be rattled off to you in place of a written menu and likely will include fresh soups, pasta, and grilled fish. An enormous platter of several different pastas, perfect for sharing, is a perennial favorite. The pizza oven turns out pies with both traditional and special toppings, such as shavings of white truffles.

    If Mandapa, “temple” in Sanskrit, feels more like a community than a hotel, that’s because it is. The resort occupies 24 green acres on a property previously owned by a group of neighboring families, who retain access to the land and its on-site temple. As a result, it maintains three acres of rice paddies and a traditional rice barn on stilts, and the villagers bring daily offerings to the temple, giving Mandapa a strong connection to local culture.

The Beaty also boasts Canada’s third-largest fish collection, all preserved in jars. Don’t miss the star attraction, a spectacular 82-foot skeleton of a blue whale, artfully suspended in the atrium. Hungry for more science? Hit the Pacific Museum of Earth across the street for geological gems like a duck-billed dinosaur fossil, or take the fantastic Greenheart TreeWalk canopy tour of UBC’s botanical gardens.

    A favorite among Hollywood royalty, the Big Island’s Four Seasons is more secluded than its sister property on Maui. It sits on 863 acres of palm-fringed coastline, with little else for miles in any direction, other than two exclusive golf courses and some of the most expensive vacation homes in the state. Yet, conveniently, the hotel is only a 15-minute drive from Kona International Airport, and it isn’t uncommon for guests to fly in, park themselves at the resort, and never leave. Why would they? It’s an immaculate, ingenious playground, shamelessly verdant against the area’s prodigious black lava. There are seven pools to choose from, including one rock-walled rectangle in the ocean, and another man-made lagoon stocked with thousands of reef fish for guaranteed snorkeling success. Kids can camp overnight in a rock amphitheater. Lovebirds can have candlelit dinners on the beach. Even the accommodations are a Polynesian fantasy, with tropical woods and large headboards. All that, along with a tiki torch–lit beachfront, a French head chef, a swank sushi bar, a staff that treats every guest like Hollywood royalty, and honest-to-goodness cultural cred (the on-site museum and cultural center are well worth visiting), and it’s easy to understand why one would happily pay a king’s ransom to spend a few days here.

    Named for the overnight train that served Santa Barbara from 1910 to 1968, the Lark restaurant showcases the Central Coast’s seasonal bounty. Located in the Santa Barbara Fish Market Building, in the heart of the city’s Funk Zone, the innovative restaurant combines a farm-to-table ethos with a family-style approach. During most months, the outdoor courtyard seating is as convivial as the tables in the dining room. The menu of small plates is organized by their ingredients’ places of origin (farm, ranch, or ocean): crispy brussels sprouts include sweet medjool dates as well as spicy serrano chilies; pickled fennel and compressed Granny Smith apples accompany the grilled Kurobata pork belly; and passion-fruit vinaigrette and fried avocado enhance the flavor of Japanese hamachi collar. Larger platters are meant to be shared, and restaurant regulars often choose one or two (the Baharat spiced cauliflower and Israeli couscous is a favorite) along with several smaller plates. Pro tip: While it’s tempting to fill up on the herbed popcorn that’s delivered to your table the instant you’re seated, slow down, order a craft cocktail, and make sure you save room for the main event.

    Before moving to Paris to train in prestigious restaurant kitchens, Chef Julien Bousseau grew up on a farm, so he brings an understanding of the value of fresh produce to his cuisine. Now living in the charming alpine village of Tourettes sur Loup, the chef’s quaint little restaurant, with stone walls and wooden beams, offers a surprisingly affordable Michelin-starred meal. He sources vegetables from local kitchen gardens in dishes like veal roasted with celery and coffee, smoked mackerel with dried fennel, or a risotto made with cèpe mushrooms harvested in the forest nearby. Those with a sweet tooth will enjoy the pistachio financier cookie with orange cream and quince sorbet dessert.
  • The ancient city of Messene, about 60 kilometers (37 miles) east of Pylos, dates back to 369 B.C.E. Much of it has been preserved; the city was never destroyed or built over by later settlements. Today it’s a World Heritage Site and a testament to early urban planning, with its many stone buildings and other structures laid out on a grid. Massive fortification walls, as high as nine meters (30 feet) tall, wrap 9.5 kilometers (six miles) around the city and Mount Ithome, where religious shrines once stood. The site’s archaeological excavations, now restored or reconstructed, extend downhill from the modern village of Mavrommátion; among them are the agora (gathering place), a theater and the temple of Asklepios, the Greek god of medicine. Messene’s ancient Greek stadium is amazingly intact—look for the VIP seats, with legs that end in carved lion paws. Messene’s archaeological museum displays vases, statues and other items of historic interest found here.

    Just as taking in some of the iconic sights—Mayan temples and rivers—is a must for visitors to Orange Walk, so is stopping for a meal at Nahil Mayab. The restaurant, the name of which translates to “House of the Maya,” is owned by a respected Orange Walk family. The garden restaurant serves a variety of typical Mestizo and Caribbean-inspired dishes in an inside dining room or outside on the patio under an umbrella. Sample the popular tacos arracheras (skirt steak), the pork salpicón (a chopped hash that’s an Orange Walk specialty), fried fish, quesadillas, or a variety of burgers, salads, steaks, and pasta. The atmosphere is casual and lively, particularly on the weekends, when many Orange Walkeños gather here to catch up.

    It’s not yet Brooklyn, but the Spittelberg quarter in the Neubau district is arguably Vienna’s newest trendy spot. As neighborhoods go, Spittelberg is tiny, made up of old working-class blocks with an unsavory past. But Spittelberg lies in the shadow of the mega-successful MuseumsQuartier, and the bars and restaurants tucked into leafy courtyards behind Biedermeier buildings are hopping now. Thankfully, a village feel remains on the quiet pedestrianized streets and alleys where, in warm weather, Schanigartens (Vienna’s version of outdoor restaurant seating) appear. Amerlingbeisl, Bohème, and Witwe Bolte are three of the most popular bistros, along with newcomer Das Spittelberg. The neighborhood’s Christmas market, with its glühwein kiosks, is perhaps the top one in the city.

    Anguilla is blessed with numerous talented artists, but Cheddie Richardson has long been a standout on the island for his carvings. A craftsman since his childhood days and with no formal training, he grew famous over the years—both locally and internationally—for his unique pieces depicting various types of Anguillan flora and fauna, including birds, fish, and turtles. His studio is filled with them, fashioned from driftwood, mahogany, walnut, coral, or stone; there are a few bronze pieces as well. In 1994, one of Cheddie’s carvings was given to Queen Elizabeth II during her official visit to Anguilla, and it now sits in the Royal Collection.
