    If one is going to throw around the word “iconic,” let’s make sure it’s used appropriately. As with Zuni. The awkwardly shaped restaurant—it’s in a narrow storefront with wider spaces on the mezzanine—was opened in 1979 by Billy West. West’s best move was hiring chef Judy Rodgers in 1987. She put in a brick oven—and thus the Zuni roast chicken was born. This dish, more than any other (except perhaps the Caesar salad), defines Zuni. The chicken is roasted in the brick oven and served over a bread salad: greens with chewy bread croutons. Simple, perfectly cooked, and seasonal. Rodgers died in 2013, but the restaurant soldiers on without her. The menu changes with the season and with what the local farms are growing, and will doubtless explain the provenance of your meat. Rodgers, along with her peer across the bay, Alice Waters, pioneered California cooking, and the cooks who have passed through here have gone on to define today’s vibrant restaurant scene.

    It’s no surprise that the opening of this beloved gastropub back in 2007 coincided with Orlando’s rise as a culinary hot spot. While its owners James and Julie Petrakis have not stopped opening other ventures around the city (including at Disney Springs), this local favorite—known for its Cask & Larder beers and sophisticated Southern fare—has hardly waned in popularity. Start with the charcuterie platter (a spread of rillettes, dried sausage, and salami), then choose from favorites like shrimp and grits and the enormous Pub Burger, which comes topped with caramelized onions and buttermilk blue cheese. Whether you come for happy hour, dinner, or something in between, expect a lively atmosphere that’s perfectly suited to groups.

    Situated closer to Cambodia than Vietnam in the Gulf of Thailand, Phu Quoc has arguably the best beaches in the country. An international airport opened in 2012, raising the island’s profile and bringing in droves of visitors. Despite this, the island retains a laid-back, underdeveloped charm, and its coast is still dotted with small fishing villages with brightly painted boats. The interior of the island includes plenty of forest, while some of the land is earmarked for growing black pepper—pepper from here is famous throughout Vietnam. The best beach lies to the west of the town of Phu Quoc; it’s a 13-mile long straight stretch with golden sands, coconut palms, and clear turquoise waters. The An Thoi Islands, south of Phu Quoc but still part of its marine park, offer excellent snorkeling and diving during the dry season from December through May.

    The name of this restaurant gives a fairly big clue as to its culinary specialty—i.e., fish. But the market part of the name is equally important, since the kitchen espouses a commitment to fresh ingredients, which are usually purchased from local farmers and fishermen. Spread across two floors inside one of central Reykjavík’s oldest buildings, this smartly decorated spot is run by head chef Hrefna Rósa Sætran (part of the Icelandic National Culinary team), and serves not just fish and seafood but also meat and vegetarian dishes, all prepared in an open kitchen that boasts the country’s only robata grill. There is a separate raw bar serving up sushi and sashimi, and a surprisingly funky cocktail and craft beer menu.

    The centerpiece of Turks and Caicos is Grace Bay, on the island of Providenciales (known locally as Provo), where the miles-long sugar-sand shore routinely tops “best beach” lists for the Caribbean and the world. The inland area along this stretch of northern shoreline is where you’ll find most of Provo’s hotels, shopping, and restaurants. Grace Bay is part of the Princess Alexandra National Park. It has calm waters and a sandy seafloor with no rocks or corals to step on, making Grace Bay the perfect place for swimming, splashing along the shoreline, parasailing, and stand-up paddleboarding.

    The thermal hot springs in Rincón de La Vieja at Rio Negro (Black River) may not be as well known as those in the Arenal area, but we had the pools and surrounding forest to ourselves. From where we stayed at the Hacienda Guachipelin Rincón de La Vieja, the springs were accessible by horseback or vehicle, followed by a short hike and crossing a rather dubious hanging bridge. The pools are heated by the Rincón de La Vieja Volcano, so you definitely want to test the steaming water. There are seven pools to sample of different shapes, sizes and temperatures. The first pool was too hot to plunge more than our toes into. And the pool that was “just right” was the last one, which happened to be ideally situated next to the churning river. After two days of horseback riding, hiking, canyon ziplining and rappelling, it was great to unwind at this private oasis. If a rainforest/volcano adventure beckons you, I recommend staying at Hacienda Guachipelin Rincón de La Vieja and getting an adventure pass from Adventure Tours--both are at Rincón de La Vieja National Park.

    Poschiavo is one of the last stops along the UNESCO-listed Rhaetian Railway before it descends towards Tirano, Italy. It’s also one of the few Italian-speaking villages in Switzerland outside of Canton Ticino. The seemingly untouched medieval town is a jolt back in time, with a full-on baroque piazza boasting a stone campanile and a museum stuffed with 16th-century furnishings and antiquities. Don’t leave without stopping for a nibble at its Wednesday market: Local specialties include pizzoccheri (a buckwheat pasta), burrata, local truffles, anise-flavored bread, wine from Campascio in the surrounding valley, and cheese from Caseficio Valposchiavo, a nearby organic dairy. The market is held every Wednesday on Poschiavo’s main piazza.

  • Among the three Cayman Islands, Brac is the most topographically endowed, thanks to its distinguishing feature: the Bluff, a limestone cliff rising along the length of the island and topping out at about 140 feet at the eastern end. Between that and the island’s densely forested interior, the local hiking options have a lot to offer—one of the best cases in point being the Lighthouse Footpath, a trail that runs two and a half miles (one way) along the bluff’s edge and that serves up endless sea views and likely encounters with the absurdly adorable brown boobies and soaring frigate birds. Try to go in the morning or late afternoon, and of course, take along plenty of water: You’re looking at a two-hour outing to the most beautiful of boonies.
