    Located in the center of Barbados in the highlands, the Harrison’s Cave underground system of rivers and caves is one of the Caribbean’s great natural wonders. Visitors tour deep inside the crystallized limestone caverns via small electric tramcars and are allowed to get off at certain points, including at a 15-meter-high (50-foot) “cathedral” and a “village” with multiple stalagmite columns. Lights illuminate the waterfalls, pools and magnificent geological formations.

    Three friends who found themselves thrown together in the New York of the 1990s—artist Gabriel Orozco, who has been featured at MoMA, the Pompidou Center, and the Tate Modern; Mónica Manzutto, who worked at the Marian Goodman Gallery; and José Kuri, who was completing an M.A. at Columbia—originally came up with the idea for what is now arguably Mexico’s most influential gallery. Kurimanzutto began with some ephemeral Colonia Roma events, often in nontraditional spaces. Today the gallery occupies a structure commissioned from renowned architect Alberto Kalach; its stable of artists includes Mexican creators of international stature like Dr. Lakra, Miguel Calderón, Carlos Amorales, and Damián Ortega, as well as global talents like Akram Zaatari, Apichatpong Weerasethakul, Anri Sala, Danh Vo, Jimmie Durham, Rirkrit Tiravanija, and Monika Sosnowska. Kurimanzutto’s shows—not to mention the openings—mark the pulse of the Mexico City arts scene.

    The Bonsecours Market is hard to miss, whether you are walking around Montréal’s historic center or looking at the skyline from the harbor. A silver dome caps the long building, which dates from 1844 and was modeled on Dublin’s Customs House. It looks more like a stately civic building than a market, and in fact it was Montréal’s city hall for a while, as well as the seat of Canada‘s parliament for one session. After serving as the central market of the city for nearly a century, it closed in 1963 and was largely abandoned until 1992, when it reopened as the home of a visitors’ center for Montréal’s 350th anniversary. Today it houses a dozen or so boutiques featuring works by local designers, as well as a few restaurants that make for good pit stops on a day of sightseeing.

    If you wanted to trace Scotland’s modern culinary renaissance, you would begin here, on Ashton Lane in Glasgow’s West End, where the late Ronnie Clydesdale opened Ubiquitous Chip in 1971. Even then, Clydesdale recognized that Scottish produce could serve as the building blocks of standout cuisine, with nary a chip in sight. Now run by his son Colin, the Ubiquitous Chip is still one of the standard-bearers of Glasgow fine dining, though the space itself is elegantly casual. The venison haggis with champit tatties (mashed potatoes with parsley) has been on the menu since the beginning, but also worth trying is the Caledonian ice cream with poached plums and honey oats.

    For nearly three centuries, workers serving the nobility at Castello Banfi in Tuscany lived in a small hamlet within the castle grounds. In 2007, however, the stone houses within their tiny village were completely renovated under the direction of Italian interior designer Federico Forquet, catapulting Castello Banfi into a new era of grandeur. Today, the property welcomes guests from November through March in two guest rooms and 12 suites, each with wood-beamed ceilings, countryside views, and bathrooms stocked with “vinotherapy” products made from the estate’s Sangiovese Brunello. A central garden with a pergola, a heated outdoor pool, secluded lounging spaces, and alfresco massage tents offer plenty of ways to take in the surrounding vineyards. If you’re feeling more active, take a cooking class with the chef (held a short drive away at the estate farmhouse), tour the Banfi winery, or venture out to nearby historic towns like Montalcino and Siena.

    While Aurland was once a hub for traditional shoemaking, the Aurland Shoe Factory is the only surviving company which still makes the Aurland shoe (aka “the original penny loafer”) by hand. Take a tour of the facility—part artisan workshop, part museum—and learn about the history and production of these iconic shoes, said to be inspired by the traditional moccasins of the Iroquois tribe. A pair of these famously durable slip-ons is a unique souvenir that will stand up to walking tours around ports—and far beyond.

    Established in 1989, Injalak Arts is a locally owned organization that supports the artistic production of the traditional Kunwinjku people. Works range from paintings on paper and bark to didgeridoos—thought to have originated in this region—to baskets and grass pandanus floor mats. Much of the symbolism is inspired by ancient dreamtime stories and images from the nearby rock art galleries that were left like instructions from the Kunwinjku ancestors. Three tour companies currently have permission to visit the center and surrounding rock art sites.

    This ice-cream-and-sorbet parlor has been a favorite among locals for over a hundred years. It’s a great place to try sweet and refreshing frozen treats made from various stars of the Yucatán’s exotic-produce bonanza, such as sapote, mamey, and tamarind. At night, families fill the tables. Champolas—beverages crafted from milk and ice cream or sorbet—are also a favorite. A signature version includes sorbet made from soursop (guanábana), a fruit that abounds in the Yucatán.
