    Escape the bustle of the city by ducking into the quiet courtyard garden of Begijnhof. Located just a few minutes on foot from the Koningsplein and the Singel canal, this tranquil oasis dates back at least as far as the 14th century. Look among the row houses around the perimeter to find the city’s oldest home, the Houten Huys, built in 1420. And within the courtyard is the Engelse Kerk, or English Church, first constructed in 1390 and refurbished after a fire 100 years later.

Although Negreira was trained in the mountains of Spain, he gains a lot of inspiration from Taipei, especially the city’s many markets. Be sure to make reservations well in advance, as this popular restaurant fills up fast.

    Near the pontoon bridge in Handelskade in Willemstad, wooden boats from Venezuela dock alongside the canal, and vendors here sell just-caught fish and tropical fruits and vegetables (plantains, citrus, papayas, avocados) directly from the quay under the shade of tents. Mornings are the best time to visit, for the finest selection of produce, the cooler temperatures before the midday sun shines, and the pleasant ambience of the hours before the crowds arrive.

    Turtle Inn is one of two upscale resort properties in Belize owned by American movie director Francis Ford Coppola. (The other is Blancaneaux.) This inn is in the town of Placencia, but despite its proximity to the town’s services, the privacy afforded by the resort makes guests feel insulated and more isolated than they actually are. The cabana-style accommodations are luxurious and spacious, with high ceilings and exceptional attention to design detail. The architecture blends in with the environment, but inside the cabanas and villas, guests will feel as if they’ve been transported to another part of the world. The decor is inspired by Bali, with hand-carved wooden wardrobes and trunks and richly embroidered textiles and tapestries. These sit alongside ultramodern amenities and conveniences, such as Delonghi espresso machines and iPod docking stations. Common areas include a triangle-shaped, infinity-edge pool and a gift shop with pricey luxury goods, including handbags and clothing.

At the biggest market, San Pedro, just up the street from the Plaza de Armas, you’ll find fruits, vegetables, alpaca charqui (the Quechua source of our word jerky), pig’s heads, herbs, fruit juices, weavings, and much, much more. You’ll see a fair number of foreigners wandering here as well, so for an experience that feels more authentic, try San Blas Market or Rosaspata, both off the tourist track.

    When Mike Richardson exploded onto the fairly limited Fes dining scene in 2007, he took the medina by storm. Suddenly there was someplace where locals, tourists, and a handful of resident expats could convene. They came to view exhibitions by up-and-coming young artists, to hear Sunday sunset concerts featuring the likes of Houariyat—an all-female drumming band—and to tuck into the café’s legendary camel burger. All these attractions are still going strong, but Clock has expanded and begun offering excellent traditional-cooking classes, and holds movie nights in a screening room furnished with vintage cinema seats. It now also has a sibling in Marrakech and another soon to open in Chefchaouene, and a country cousin in the Scorpion House in Moulay Idriss, which you can book for private lunches. If all this doesn’t whet your appetite at least come at brunch for the best coffee and Berber eggs in town.

It’s a mix that keeps the restaurant’s high-end clientele exceedingly happy. More importantly, what comes out of the kitchen is always fresh and expertly prepared; you never sense the chefs are resting on their laurels. In the heart of the now-tatty Zona Rosa, lunch at Bellinghausen offers a glimpse of the neighborhood’s mid-20th-century heyday, when the surrounding blocks were the most bohemian and fashionable in all Latin America.

With its tight dining room and just a smattering of sidewalk tables, fans reserve, ask nicely, and beg—and, in one notorious case, threaten government action—to score a desired seat; those who pull it off choose from a highly selective menu (or do the tasting option) to sample recipes that blend French ideas and techniques with homegrown ingredients and Mexico’s warm, inviting approach to mealtimes. The delicacy of each flavor and the chef’s creativity in bringing it all together guarantee a very special occasion indeed. Even the restaurant’s fast-moving clientele seems to slow down and enjoy at Máximo, somehow sensing they’ve transcended the everyday.

    Verspertine isn’t so much a restaurant as an experience—a collaboration between chef-owner Jordan Kahn and architect Eric Owen Moss. The futuristic four-level structure, wrapped in undulating steel with glass walls and minimal design elements, sets a dramatic stage for the art on the plates. The restaurant serves dinner only—and by reservation only. Pull up to valet parking and they already know who you are. Wait briefly on the garden’s heated benches for the elevator up, where chef Kahn—whose bona fides include French Laundry and Per Se—is the first to greet each guest by name. Tables seat four people at most, keeping things intimate for a sensorial multi-course meal that’s unique each night. Sculptural dishes could include delicate snowy white asparagus with sword fin squid and macadamia nut, or hirame (fish) served in a glittering black bowl that appears empty at first glance. (They do accommodate dietary restrictions and can offer modifications.) Essentially, get ready for a lot of surprises. One thing that doesn’t change: the layered, effects-heavy original score created by the band This Will Destroy You specifically for Vespertine. Pro tip: Opt for the I beverage pairing option (III features nonalcoholic juices and infusions), which offers a libation for each course.

    Using an e-bike isn’t cheating—it’s far more environmentally friendly than using a car, plus you get some exercise as well. And those climbs along the coast are much easier when you have a 750-watt assist. Big Sur Adventures offers a trio of e-bike tours for all levels of riders: 17-Mile Drive, the Old Coast Road, and McWay Falls. One of the best choices for intermediate riders is the Old Coast Road route, a dirt road that follows the original wagon trail into Big Sur. There are locals who haven’t been on this road, and the views are magnificent as they stretch along the coast, into oak and redwood groves, and across the Little Sur River. Trips include four to 12 people and typically last three to four hours. Sure, in a car, you can roll down the windows to smell the sea, but exploring the coast by bike gives you a full sensory experience: ocean and forest scents, warm sun on your arms, the sound of crashing waves and wind in the trees, and the feeling of getting a little closer to the wild coast.

    As a rule, Bermuda’s sense of sophistication includes a certain level of old-school formality. With the opening of this namesake eatery from the internationally renowned and somewhat hipster chef Marcus Samuelsson, the island’s approach to haute cuisine has taken a chic turn. Housed in the Hamilton Princess hotel with its landmark pink facade, the restaurant boasts a vibe that’s contemporary and airy with an emphasis on the turquoise sea. All tables have excellent views of Hamilton’s harbor, and the menu is—as might be expected—seafood-heavy, with dishes like Oysters with Black Rum Mignonette and grilled salmon. The local catch of the day and island-grown onions, along with other dishes, are prepared on a wood-fired grill that’s visible from the dining space.

Here you can find everything that is characteristic about the Portuguese culture in objects, which belonged once to someone, who made it a part of their life for a number of years and now they are almost giving it away. I remember on one of my first trips I managed to grab a beautiful vintage 1940’s white linen hand braided table cloth that was custom made for the Henrique Family’s new dining room table. I got it from a middle aged woman, who went by the name of Maria Henrique who was selling a few pieces that had belonged to her grandmother. The hand sown H for the initial of the family’s last name approved for the authenticity of the item and I had no problem dishing out the incredible amount of…5 Euros.

    Spa lovers will enjoy spending a morning or afternoon getting acquainted with traditional Moroccan bathing and beauty treatments at a hammam. Traditionally, these public bathhouses and steam rooms were where both men and women would go for their weekly ablutions: to be first enveloped in olive oil–based soap infused with herbs, then exfoliated with a specially designed mitt, and finally slathered in a full-body clay mask mixed with rose water (hair washing optional). And while this is still an important part of the local culture, ultra-luxurious variations have crept in, especially at places such as the Royal Mansour, where you can bask in sensational interiors before forking out $350 for a hammam and massage fit for a king. The pool at La Mamounia’s glamorous hammam is one of the highlights, so allow plenty of time to make use of it before indulging in their luxury Evasion treatment, which includes an orange-infused olive oil scrub and amber-honey facial exfoliation for $130. If you want to try something a bit more local that still feels like a treat—at a fraction of the cost of the above—head for the Bains de Marrakech, which offers great value for what you get. A 45-minute hammam, including a ghassoul clay body wrap costs $24. Understandably, it gets extremely busy, so book ahead.

At Robert Sinskey winery, cookbook author and Chef Maria Helm Sinskey pairs bites made with ingredients from their garden with the new releases of Pinot Noir and the excellent Abraxas, a blend of Pinot Gris, Pinot Blanc and Gewurztraminer. Round Pond Estate takes it a step further — the four-course lunch served on the terrace uses all biodynamically farmed produce, vinegar and honey from the estate as well as olive oil that is crushed by stone just a stone’s throw from the winery.
