  • Suppose I told you there was a small, remarkably idyllic and fairly unpopulated island in the Caribbean just a short distance from the mainland United States, an island so immaculate, plans were in the works to make it a National Wildlife Refuge, an island with a beach rated one of the best beaches in the world, an island where you could basically do whatever you wanted along its iridescent shores with little chance of being interrupted by prying eyes.... What’s the first thing you’d do? Well, if you were the U.S. military back in 1901 and the destination in question was the island of Culebra, you’d blow it all to hell! For nearly 75 years, bombs pounded Flamenco Beach on Culebra, la “Última Virgen,” while the U.S. military used it for target practice. Protests drove the Navy away, but some relics remain on the once pristine sands as a reminder of how never to treat one of the best strips of beach in the world. During the weekends, Flamenco Beach can get fairly crowded with “mainland” Puerto Ricans taking the ferry over for a day in the sun, so I recommend you make time during the week for a more secluded experience. There are vendors nearby, but not too near, to make your stay a pleasant one with local cuisine and plenty of ice-cold beer.

    If you’re seeking that “shack on the beach” feeling without the actual shack, look no further than Laluna. At this Design Hotel, 16 romantic cottages overlook the ocean, each with an open-air shower, spacious deck, and four-poster bed surrounded by dreamy netting. A combination of Italian, Balinese, and Caribbean styles, the interiors come courtesy of owner Bernardo Bertucci, who served as a consultant for Prada and Armani in a past life. If you’d prefer something sleeker, the hotel also has several contemporary villas, which offer slightly less character but a lot more luxury, including multiple bedrooms, fully equipped kitchens, and private, full-size pools. Villa guests also have access to personal chefs, butlers, and trainers for an extra fee.

    Bertucci’s mix of European, Indonesian, and island elements carries over to Laluna’s thatched-roof restaurant and sunset lounge, which offers authentic Italian cuisine with a Caribbean twist. It’s also evident at the spa, where Balinese massages incorporate Comfort Zone products from Italy and guests can practice yoga in a beachfront pavilion. Flexibility is key here—you can book a cottage on a European plan (accommodation only), combine it with breakfast and dinner, or go all-inclusive. Regardless of which you choose, however, activities like water sports, daily yoga, and mountain biking are always included. For an extra fee, guests can also book Laluna’s luxury catamaran for a sunset cruise and snorkeling adventure.

    Building on Montreux’s growing popularity as a tourist destination in the early 1900s, two Swiss hospitality pioneers joined an existing hotel with a newly constructed palace section, creating what was then one of the most cutting-edge hotels around—with such “modern” touches as electricity, heating, and private bathrooms. Officially opened in 1906, Le Montreux Palace went on to host everything from glamorous masquerade balls to the signing of international peace treaties, and everyone from New York tycoons to Indian maharajas.

    The history lives on in today’s incarnation, which has been under the Fairmont umbrella since 2007. Following several years—and stages—of renovations, the Palace is as majestic as ever, with the 236 rooms and suites all featuring classic décor and balconies showcasing the lake or Alps. The hotel’s location at the edge of Lake Geneva is echoed in the seafood dishes at on-site restaurant MP’s Bar & Grill, where fresh catches (and fine cuts of meat) pair well with top Swiss wines. Modeled after traditional Polynesian fare houses, the bungalows reach out over the lagoon and include roofs woven from pandanus leaves, private jetties that provide direct access to the water, and terraces ideal for watching the sunset. When hunger strikes, head to the onsite Tiare Restaurant, which features an open kitchen and nightly Tahitian dance performances, or Le Lotus, which is set in an overwater building and gives off a romantic vibe with live piano, gorgeous views, and French cuisine. Although recording sessions still go on, Geejam is now a seven-room hotel, its guests often honeymooning couples acting out fantasies having nothing to do with rock and roll. Geejam’s cabins, especially, are very private, and guests sometimes spend days taking meals on their veranda and splashing in their outdoor Jacuzzi without being seen by anyone but the staff, who appear only when called. Of course, who wants to stay hidden forever when the Bushbar restaurant promises convivial chitchat, an occasional game of pool, and even live music? Not to mention that the hotel beach, in a cove across a road at the bottom of the property, promises four-poster sunbeds and, yes, Wi-Fi.

Changes aside, diners can still count on a six-section prix fixe menu, with each section home to multiple bites involving an astounding variety of local ingredients that even most Mexicans have never tasted, all exquisite enough to have placed Pujol on several best-restaurants lists for years running. And yes, you still get a taste of chef Enrique Olvera’s mole madre, well over a thousand days in the pot as of this writing.

    This incredibly innovative Catalan-inspired restaurant is led by world renowned chef Daniel Negreira, who learned his craft under the watchful eye of Ferran Adrià at the former Number 1 restaurant in the world, elBulli. DN innovación is a great example of how fine dining has recently exploded in Taipei, a city known as much for its food as for its tourist sites. Although Negreira was trained in the mountains of Spain, he gains a lot of inspiration from Taipei, especially the city’s many markets. Be sure to make reservations well in advance, as this popular restaurant fills up fast.

Pastrami from local Langer’s deli inspired her roast duck breast with pastrami jus and marble rye tuile; her Wagyu beef tartare seasoned with Aisoon sauce was named for her Korean grandmother. Enthusiastic waiters—many of whom go the extra mile by getting to know diners by name—may suggest favorites such as chestnut spaghetti with shiitakes and burrata, or even a secret item like a super-tender steak when available. As with Arrington’s cuisine, the 95-seat restaurant is approachable yet elevated, with rich honey-hued wood, brass, and a touch of marble. Don’t miss weekend brunch for the crazy-sounding but addictive kimchi latkes, as well as the coconut brown butter pancakes. Pro tip: If you can’t make it for a sit-down dinner, come to bar during Community Hour, daily from 5:30 to 7 p.m., and ask for the off-menu burger along with your rum-based cocktail Right by the Beach, served in a coconut.
