Everyone eats here from senators to sanitation workers and all walks of life in between. On Sunday’s you can even expect some roast pork added to the menu.     Behind a discreet blue door in Cartagena’s walled historic zone, La Passion maintains its low-key ambiance with just eight rooms and a maximum of 16 guests. The distinctly decorated 19th-century building was designed by French film producer and theater designer Thierry Forte, who owns the property with his Colombian wife, and balances original elements like black-and-white-tile flooring with such antiques as brass gramophones and heavy wooden chests. Brightly painted accent walls, abstract art, and colorful decorative objects keep things from feeling too fusty, as does an indoor garden of tropical flowers, vines, and trees that soars through an interior courtyard. Best of all, the standout rooftop pool and restaurant are typically uncrowded, making the surrounding panoramic city views all the more stunning.

    Marrakesh’s legendary La Mamounia, which dates back to the 12th century, reopened in 2009 after a meticulous three-year renovation by noted French architect and designer Jacques Garcia. Step behind its fabled doors and a sensory feast awaits, from the gentle tinkling of the numerous water fountains and basins; to the fragrant waft of jasmine, orange blossom, and cedar; to the lush Arab-Andalusian interiors, filled with traditional Zellige tilework, sculpted wood, and carved plaster. There are 209 rooms and suites, with the largest topping out at more than 1,000 square feet. Views range between Koutoubia Mosque, the snow-capped Atlas Mountains, and La Mamounia’s own legendary gardens, which abound with 2,000-year-old rose bushes, 700-year-old olive trees, and flowering bougainvillea and jacaranda. Three secluded, standalone riads each feature three bedrooms arranged around a central patio and private pool, though guests would be remiss not to hang around La Mamounia’s dreamy central pool, lined with palm trees, loungers, and lanterns.

    La Carboneria is a special place. Unlike the tourist spots for flamenco, this feels alive. There is a buzz of energy, a sense of place as friends call out to each other before the show starts, the stone floored room smells of woodsmoke,and the performers have an authentic intensity that makes the evening soar. The performance doesn’t begin until 10:30, and your €5,00 ticket price gets you a €5,00 drink. The drink is not memorable, I dare you to take your eyes off the stage.

Ricard’s recipe and formula– star anise, licorice root; five volumes of water for one volume of Pastis - proved an instant hit back in the early 1930’s and is largely responsible for popularizing the aperitif-hour tradition in the south. Today’s experts can be found at La Maison du Pastis, a shop tucked deep in the colonnades of the Vieux Port specialized in 75 different varieties of Pastis and Absinthe. Be sure to ask for a taste before you pick up a bottle, the staff is more than happy to oblige.

    Bellagio’s newest restaurant, LAGO by celebrity chef Julian Serrano, overlooks the resort’s popular fountains. It’s a view to be remembered, especially when paired with one or many of the small plates on the menu. A lot of thought has been put into the cocktail menu at LAGO (down to the restaurant-branded ice cubes), and the bellini is one of the best in Las Vegas. LAGO’s menu features a variety of seafood and Italian-inspired items perfect for sharing, but dinner here certainly isn’t complete without ordering something off the dessert menu. Try to get a seat on the patio for the perfect Las Vegas backdrop to complement your meal.

    There’s a new wave of wine bars in Paris, ones that champion natural wine (a step beyond organic) and serve artful small plates. Camille Fremont’s La Buvette (not to be confused with Buvette restaurant) is considered one of the best; the place has won lavish praise and an award from Le Fooding. Like a cozy annex to Camille’s own home, the bar benefits from the inherent cool factor that a slightly out-there location in the 11th confers. Despite the compact space, it never seems to be much trouble to pack in throngs of wine fans and curious passersby. Guests must consume a little snack (or casse-croûte in local parlance) to be able to drink but your experience will be better for it. Put your trust in Camille for the wine—mostly natural and only from wine producers she personally appreciates—and choose any of the stellar bites on offer (aged Gouda, dry sausage from Aubrac, sardines, butter beans). Bottles are available for purchase.
