    Any list of cheap eats in Amsterdam would be remiss if it didn’t include FEBO, the Dutch culinary tradition of eating from a wall of fast food vending machines. With 20+ outlets in Amsterdam, it’s easy to find a FEBO de Lekkerste (literally, FEBO the Tastiest). If it’s past midnight, chances are you’ll bump into a handful of Dutchies there, trying to inconspicuously grab a late night frikkandel (minced meat hot dog) or kroket. At the push of a button, out comes a hot snack for munching on while peddling home over cobblestone streets. No one knows exactly how long those mayo-laden burgers are allowed to sit there under heat lamps in FEBO windows. But no one seems to care, especially at 3:00 in the morning, after the bars and nightclubs have closed and there’s no other option for a before-bed snack.

    Escape the bustle of the city by ducking into the quiet courtyard garden of Begijnhof. Located just a few minutes on foot from the Koningsplein and the Singel canal, this tranquil oasis dates back at least as far as the 14th century. Opt for the upper level lounge and you can watch from above as dykes, belly dancers and aerial artists perform. Don’t worry about crumbs in bed; get into the act while the drag queens vamp and the dancers swirl. Between courses, enjoy a Lavender Love or Leap of Faith cocktail in the Chapter 21 bar. Or venture to the downstairs smoking room that doubles as a gay toilet. While puffing on a joint, don’t be surprised if spontaneous music erupts or locals engage you in conversation. There are supperclubs in Istanbul, London, Los Angeles and San Francisco, but this is the original. And there’s nothing conventional about it!

    The atmosphere is heavy, the decibel level very low, and the wooden decor both comforting, and inviting. People in this café are either locals reading the newspapers while sipping a cappuccino, or, like me, tourists who just visited the Anne Frank House - which is just around the corner - and need a down time to collect their thoughts. The Café de Oude Wester is a natural stop after an emotionally-draining couple of hours, which puts in perspective everything we know about the atrocities of World War II. How some lucky people live through it, how the city was affected by it. Was this very café the scene of nazi meetings, did it participate in hiding Jews? What these walls must have seen and heard throughout these years. The warm smiles of the staff and the aromas emanating from the kitchen are a welcome invite back to the 21st century - as if they knew exactly what was on the minds of customers.

From Nassaukade, there’s no access, but you can see the buzzing venue across Singlegracht canal: Waterkant, a tropical-themed bar and restaurant serving casual fare on the waterfront behind the twin towers of the parking garage. The brainchild of the catering team that brought popular Bukowski Bar, Café Kuijper and Maxwell to Amsterdam, Waterkant debuted to instant success in August 2014. Seemingly overnight, the trio transformed the dilapidated night shelter behind the Q-Park into a canal-side bar and restaurant perfect for a romantic date or evening out with friends. At colorful tables on an expansive terrace, you can watch boats passing by and the Nassaukade street scene over beer, snacks, lunch or dinner. Looking to Amsterdam’s colonial past, the new hotspot features a Suriname-inspired menu with specialties like peanut soup, curried duck spring rolls, fried dumplings and roti roll. If you’re starving, order the Jamaican Jerk ribs—a whopping 16 barbecued bones served with coleslaw and fries. Or blow the budget on a whole Canadian lobster for €25. Wash it all down with traditional Parbo beer or a local craft brew.

    This sprawling 19th-century former gasworks complex west of the Canal Ring was a polluted site for decades after its closing in the mid-1960s. It was cleaned up and reopened in 2003 as a park, and its architecturally significant red-brick buildings were turned into cultural venues, restaurants, bars, nightclubs, and shops. The Gashouder, a massive circular structure measuring more than 27,000 square feet, hosts mainly techno parties, while the nearby North Sea Jazz Club is an intimate space for live jazz performances. You’ll also find TonTon Club, a restaurant and arcade with video games, air hockey, and table tennis; Pacific Parc, a café with live rock music and DJs; and a three-screen art-house cinema.

    We had been to Gollem for a drink and a snack (note: the meat platter is hearty) the evening before, but when we found ourselves on Overtoom after visiting Vondelpark, with Gollem just opening for lunch, we went for it again. After all, it was our last day in Amsterdam and there was beer to be drunk. The servers are very knowledgeable and helpful, and will guide you to specific styles or rhapsodize over undiscovered breweries. Fries, fried in beef tallow, were wonderful. Sweetbread croquettes tasted mostly like any other croquette, with perhaps a whiff of sweetbreadiness. The ham and Chimay cheese sandwich was good. It was all fresh, and all went very well with the wide selection of Belgian beers they offer. And for dessert? Gueuze.

    Eating raw herring is a right of passage for many who visit Amsterdam. Order yours from the friendly Dutch matrons in blue and white-striped aprons at Stubbe’s Haaring, a herring stand with a view on the bridge over Singel Canal, just off Haarlemerstraat. For decades, this local institution has satisfied the fish cravings of Dutchies and visitors with lightly brined herring, smoked eel and other delicacies from the North Sea. Unless you want bragging rights, there’s no need to eat your buttery snack Dutch style, grabbing it by the tail, throwing your head back and lowering the fish whole into your gaping mouth. Most locals eat it in a less flashy way: cut up into small pieces, covered with onions and sweet pickles, topped with a Dutch flag. It’s served on a waxed paper plate, sans bread or cutlery. Use the flag-festooned toothpick to stab the soft, mild-flavored morsels and bring them to your mouth. For a more filling meal, order a broodje haring (herring sandwich) on a soft, white bun, filled with fish, pickles and onions. Eet smakelijk!

    Step inside the Eye Film Institute to discover an homage to international cinema replete with interactive displays and perched like an ivory spaceship ready for launch on the northern bank of the IJ River. The striking facility, accessible via a free ferry from the main train station, houses four movie-screening rooms, a museum shop, and an exhibit space showcasing the works of masters like Fellini and Kubrick. Topping the contemporary structure is the eye-popping Eye Bar-Restaurant, where you can wash down a plate of bitterballen with beer on tap while musing about cinematography. On sunny days, a spacious terrace beckons.

    Dutch restaurants are not renowned for their customer service. But at Yumi Sushi off Max Euweplein, you control when and what you’re served because you fetch your own selections from a rotating conveyor belt. Plates are color-coded according to price and the bill is calculated by counting plates. At €2.25‒6/plate, you can rack up quite a bill if you’re not careful. But the food is fresh and delicious (nothing stays on the belt for more than two hours), and you can be in and out quickly if time is an issue. The concept is not new, but it’s especially nice in Amsterdam, where hospitality personnel are paid more than servers in America, thus typically don’t exert themselves for tips. Here, you’re on your own at the bar, where fresh offerings come around immediately after they’re prepared by Dutch and Asian sushi chefs as you watch. The interactive component adds to the fun. The sleek, contemporary restaurant is adjacent to Leidseplein, so you have an overview of the people parade through big windows that keep the place bright. It’s not the most gezellig dining option in this bustling area, but it’s a great spot for a fast, no-frills (if somewhat pricey) meal. At tables, €12–40 menus come with miso soup, rice, dumplings, 12–40 pieces of sushi, and fried bananas with ice cream—a better deal than the rotating sushi if you don’t mind the chef’s selections. Hot dishes like chicken yakitori, breaded shrimp, gyoza dumplings and grilled asparagus also can be ordered at the bar.

    Wynand Fockink founded his namesake distillery on this narrow alleyway off Dam Square in 1724 (and the building is even older, dating to 1679); some 70 varieties of jenever (Dutch gin), fruit brandy, and liqueur are still produced here today. In the small, beautifully preserved tasting tavern you can learn about—and more importantly, sample—both oude (old) and jonge (young) jenevers, as well as classic Dutch liqueurs like Bruidstranen (bride’s tears), an orange-flavored cordial with flakes of silver and 22-karat gold. Let the bartenders guide you on the traditional method: Bend down and slurp from the tulip-shaped glass—no hands allowed! You can also sign up for a one-hour tasting session and tour of the distillery; the cost is €17.50 (about $20).

    Founded in 1519, In’t Aepjen is one of the city’s oldest brown bars (the Dutch version of an English pub), and the cozy room regularly draws a large crowd given its proximity to the main train station. It’s also curiously decorated with monkeys—monkey statues, stuffed monkeys, monkey posters—a nod to its name, which translates to “In the Monkeys.” The legend goes that sailors returning from the Dutch colonies were cash-poor, so they settled their bill with exotic pets (namely monkeys) acquired on their journeys. You’ll have to pay with euro, but the beer selection is decent and you can also try the local spirit, jenever.

    If visiting a miniature version of a country the size of a postage stamp makes no sense to you, stay away from Madurodam, a top tourist attraction in Den Haag featuring historic Dutch towns, ports, canals, roads and monuments re-created on a 1/25 scale. On the other hand, if you fancy learning about the history of a nation that would be underwater were it not for Dutch ingenuity, by all means visit this interactive park that tells the story behind the battle against water, as well as many historic venues that still exist in Holland today.

    Rembrandt purchased this sizable former merchant’s house in 1639, when he was at the peak of his fame as a portraitist of the city’s elite. He lived, painted, and taught in the multistory building for nearly 20 years, and on the topmost floor—the site of his studio and workshop—crafted what is considered his masterpiece, the Night Watch. The home’s interior is not original but rather a faithful re-creation, based upon a room-by-room inventory conducted after the artist declared bankruptcy in 1656 and was eventually forced to leave. Be sure to catch the free daily paint-preparation and etching demonstrations; the former is particularly interesting to understand how difficult—and expensive—it was to acquire and process paint in that era. Though there are no Rembrandt paintings at this museum, you will find a large number of his superb etchings on view in the ground-floor exhibition space.
