The largest luxury hotel in the city, the Charleston Place takes up a full city block with entrances on King and Meeting streets; the latter leads to the grand lobby, with its imperial open-arm staircase, 12-foot crystal chandelier, and Italian marble floors. Its 433 large guest rooms have old-fashioned Southern details like mahogany and damask furnishings. The hotel’s lower level houses fine-dining restaurant Charleston Grill, an attractive hotel bar, a large indoor saltwater pool with a retractable glass roof, and a shopping arcade with designer stores. The beach may be the magnet that draws crowds to Trancoso but its the Quadrado that is the heart of the town. Jasper National Park recently received a solid boost to its tastebuds when Jasper Curry Place opened its doors. It’s the first indian-inspired restaurant in Jasper and its been a booming success it opened its doors in June 2015. The lunch menu is a series of entress from Butter Chicken to Korma Masala, while the dinner is served buffet-style with a rotating selection of mains.

Centrally located on Parque de los Novios, Ouzo serves the city’s best Mediterranean dishes, including brick oven pizzas, seared octopus and roasted lamb with orzo. The chef and owner, Michael McMurdo, began his culinary career in New York City at the Michelin-starred Greek restaurant Anthos. On a visit to Colombia, however, he was charmed by Santa Marta and decided to make his home in the city, opening Ouzo in 2011. The result is a celebrated Greek restaurant in an unexpected corner of the Caribbean.

This scenic and flat 20-mile round-trip bicycle route follows the waterfront promenade that wraps around Tolo Harbour, which makes a ride an excellent way to combine an easy bit of exercise with sightseeing. Enjoy views of the eight peaks of the Pat Sin Leng mountain range as you pedal and soak up the ultramodern architecture of the Hong Kong Science Park. At the Tai Po Waterfront Park, climb the 105-foot lookout tower to snap photos of panoramic harbor and park views before heading back the same way you came. The full round-trip ride takes two to three hours, depending on how often you stop for photos. Join a guided tour, or go solo and rent bikes by the Shing Mun River at Sha Tin Park near the Sha Tin MTR station.

The resplendent Raffles Hotel reopened in late 2019 to great fanfare after two years of restoration. Inishmaan is one of the Aran Islands of the west coast of Ireland—one of the most unspoiled spots in the country—and Inis Meáin restaurant uses the good things that come from the pure earth and sea around it. The garden and greenhouse grows salads, herbs, and vegetables, while the fish is wild caught from the Atlantic, and meat is homestead reared. The restaurant has large windows overlooking the ocean and island and seats just 16 guests for a four-course dinner. The menu changes nightly, based on what’s available and in season, and each dish prepared by chef and native son Ruairí de Blacam has just two elements, a unique dining experience indeed.
