    Once upon a time, Europe (mostly Switzerland, France, Belgium, and the UK) dominated the chocolate market and through aggressive marketing and downright colonialist extraction methods, became erroneously known for being the world’s experts on cacao, yet cacao came from South and Central America and didn’t grow anywhere near Europe. Recent years have seen the best chocolate rightfully return to the source where it originated—Peru, Ecuador, Colombia, and Venezuela, where a boom of quality chocolate has replaced reimported European milk chocolate sold to those cacao producing countries for generations. But Switzerland is back in the game with this excellent new chocolate shop by local food expert Dieter Meier and his patented cold pressed extraction method that brings out the botanicals and nuances of these sourced cacaos in ways other chocolate manufactures cannot. The results are Cuban, Bolivian, and Guatemalan single bean bars ranging from white to 80% dark that are unlike anything else on the market. The tiny shop overlooking the Limmat River opened in December 2017 and is not cheap, but worth every rappen for its exquisite expression of flavors.

    Makati’s Salcedo Village is abuzz with the energy of Manila’s creative circle. The coffee at Commune, undoubtedly, fuels this buzz. The community-minded café is a hub of activity at all times: Mornings see neighbors schlepping in for their sleepy breakfast fix, lunch hour is packed with multi-taskers having a meeting while tucking into the local Filipino menu. By mid-afternoon, the space fills with freelancers typing away, rewarding themselves with custom cupcakes while in the background, fashionistas pose for selfies with Commune’s popular 3D latte art. The post-dinner crowd saunters in for a second caffeinated wind paired with warm, homemade apple pie and conversation. The vibe here is casual and friendly. But most importantly, the coffee is potent. Commune salutes its community by using locally sourced and roasted coffee beans. Meanwhile, their drinks are served up in beautifully handcrafted pottery mugs. (I wanted to smuggle one home. In every color!) When in Manila, get to know Salcedo Village, starting at Commune. Because when you’re here, though you may just be a visitor, you’ll feel right at home.
  • Although the city of Jeonju has been famous throughout Korea for centuries, it’s still not a commonly known destination for Western visitors. Recently designated as a UNESCO world “city of gastronomy,” Jeonju is definitely worth a several-day stay, and it’s an easy couple-hour-train-ride from Seoul. In addition to savoring local culinary specialties and wandering the traditional ‘hanok'-house neighborhoods with their galleries and boutiques, check out the chess and go-players on the benches just outside of the Gyeonggijeon shrine, on the corner about a block to the east of the venerable Jeondong cathedral. “Jang-gi” is the Korean version of Chinese chess, and “Ba-duk” is the local name of the game more widely known as “Go.” On sultry summer evenings, grab an ice-cream (red bean and melon are popular flavors) from across the street and then check out these neighborhood ‘haraboji’ (‘grandfather,’ the respectful term for older men), engrossed in strategy on the sidewalk of one of Korea’s most traditional cities.

    These large, thick tortillas are called “tlayudas” and they’re a Oaxaca specialty that you’re unlikely to find elsewhere in the country. They’re prepared by spreading pork fat and bean paste on the tortilla, then the Oaxaca string cheese called quesillo is added in, plus some shredded lettuce or cabbage to add a little crunch. It’s folded over and toasted on a grill until it’s crispy and the cheese inside melts, and served with your choice of meat. If you want yours without the pork fat, just ask for it “sin aciento.” Tlayudas are served in many places in Oaxaca. In restaurants they’re usually served open-faced, which is perhaps more attractive, but when you have it folded over like this, the cheese melts more and combined with the crisp tortilla, it’s really delicious. Tlayudas Libres opens at 9 pm nightly and closes at 3 or 4 am. They have grills set up on the street so you can watch how they’re prepared. This is a popular late-night stop after an evening of partying.

    There’s a new wave of wine bars in Paris, ones that champion natural wine (a step beyond organic) and serve artful small plates. Camille Fremont’s La Buvette (not to be confused with Buvette restaurant) is considered one of the best; the place has won lavish praise and an award from Le Fooding. Like a cozy annex to Camille’s own home, the bar benefits from the inherent cool factor that a slightly out-there location in the 11th confers. Despite the compact space, it never seems to be much trouble to pack in throngs of wine fans and curious passersby. Guests must consume a little snack (or casse-croûte in local parlance) to be able to drink but your experience will be better for it. Put your trust in Camille for the wine—mostly natural and only from wine producers she personally appreciates—and choose any of the stellar bites on offer (aged Gouda, dry sausage from Aubrac, sardines, butter beans). Bottles are available for purchase.

    Le Buzz is the place to hang out and caffeinate on Tucson’s northeast edge. They roast their own coffee, bake their own pastries, and they’re on the way if you want to pick up something for a picnic on your drive up to Mount Lemmon above the desert. Don’t let the strip-mall location fool you. This institution is a beloved “third place” for the local community. Sit here among TV-anchormen, novelists, horse-trainers, students, biotech-spandex-clad-cyclists, couples on dates, crossworders-content-to-be-alone... Pastries are just the beginning—the quiches are killer, you can get carnitas skillets, reubens, and buckwheat pancakes—and the coffee is among the best in all of Arizona. Take a bag of beans with you... ...and if you’re here mid-week, breakfast pastries (if there are any left) are half-off after 3 p.m. The almond croissants are perfect for dipping into an afternoon latte...And be warned: Saturday mornings, you’ll have to compete with the cycling-spandex-crowd for a table.

    This lodge bears the distinct honor of being the only “in-park lodging” at Zion, Utah’s first—and extremely popular—national park. Designed by noted architect Gilbert Stanley Underwood in the 1920s, it’s also on the National Register of Historic Places. Here, you’ll find 40 cabins and a main lodge that, after burning down in 1966 and being rebuilt shortly after, was restored to its original Underwood design in 1990. Cabins feature a more rustic look, with exposed wooden beams and stone fireplaces, while the 82 rooms and suites in the main lodge are outfitted with modern amenities, including flat-screen TVs and satellite reception. At the bright and airy Red Rock Grill, Southern-accented dishes like bison-jalapeño cheeseburgers and black-bean-and-quinoa-stuffed bell peppers compete with views of soaring red rock cliffs from the restaurant’s large windows.

    In October 2014, Chef Enrique Olvera opened his much-anticipated New York restaurant Cosme, which offers an inventive dining experience in the Flatiron District. The spacious restaurant is a short walk from Langham Place, Fifth Avenue, and features modern Mexican dishes with locally sourced ingredients and housemade tortillas. But guests should not come expecting standard chips and guacamole, Chef Olvera is known for utilizing creative and sometimes surprising ingredients in his dishes. Menu items include burrata, salsa verde and weeds, and occidental purple corn pozole, pork jowl, lettuce, radish, Mexican oregano. The eclectic menu items are meant to be shared, and certain Mexican specialties, like dried chiles, beans and heirloom corn are imported from Mexico. Chef Olvera’s Mexico City restaurant Pujol has gained world fame for his fresh take Mexican food, and Cosme offers more stellar options. The bar also pours a wide variety of mezcals and tequilas.     Good breakfast spots are on the rise in San Pedro, but one of the most beloved places to grab a bite will always be Estel’s Dine by the Sea. Aside from its perfect beachfront location where you can eat with your toes in the sand, the food is pretty darn good as well. At Estel’s, you won’t find menus on the table; you must walk inside to check out the board. Don’t be surprised to find a crowd on the weekends, especially Sunday mornings. Just follow the smell of Charles Jr.’s famous BBQ specialties cooking on the grill, and you’ll understand why people are ordering plates of ribs first thing on Sunday! Aside from some impressive barbecue, Estel’s has a number of dishes that might leave you feeling the need to return once or twice more for breakfast. Personal recommendations include the Mayan Eggs, which is scrambled eggs with tomatoes, onions, bell peppers, and sausage, served with a side of refried beans and fry jacks, or try the breakfast burrito. Don’t forget the Marie Sharps hot sauce on top! Breakfast is served all day. Closed Tuesdays.

    Another food-truck-made-good in a permanent location, Molly Moon’s now has five locations around town, but still sends out its iconic baby-blue truck for special events — just follow your nose to the heavenly scent of their freshly made waffle cones. Flavors range from classics like vanilla bean and strawberry to local specialties like Theo Chocolate or Stumptown Coffee (pro tip: get those two swirled together), with more adventurous rotating seasonal flavors (current offerings include blackberry bergamot and watermelon mint sorbet). Locally sourced, organic ingredients are the emphasis here. They also have vegan options and pints to go, as well as plenty of merchandise featuring their goofy-cute pug mascot, Parker Posey.

    Krua Apsorn is an award-winning, royally patronized everyday Thai food restaurant. Expect a clientele made up of fussy families and big-haired, middle-aged ladies, and a cuisine revolving around full-flavoured, largely seafood-and vegetable-heavy central Thai dishes. This is one of the most famous restaurants in Thailand and is a must for every visitor to The Siam. At a minimum you must order: Green Curry With Fish Balls, Stir fried Crab Meat with Yellow Chili and String beans, Crabmeat omelet, fried giant river prawns, mushroom larb. I recommend taking the Siam boat (5 minutes) to the Wat Rachathiwat Pier and making the short walk through the beautiful old Bangkok neighborhood. After lunch head back down to the river and walk back to The Siam stopping at the 199 year old Chinese temple just before you walk under the bridge.

    To immerse yourself in the life of a Moroccan housewife, take a stroll through the fresh-produce market of R’cif, which winds through the lower part of the Fes medina. Plan to arrive by 10 a.m. when the market really gets going (by 11:30 a.m., it’s packed). In addition to browsing stalls of plump fruit and vegetables from farms in the Middle Atlas, you can snack here, too: hot trid—a gossamer-thin pastry baked over a rounded clay pot or “egg”—and irresistible meloui (multiple layers of dough that become soft and flaky as they are cooked) stuffed with spiced onions. Don’t miss seeing the infamously grumpy camel butcher whose signage is a real camel’s head hanging from a hook. Around lunchtime, mastermind your way deep into the souks to find the Achabine area, where the city’s best street food vendors ply their trade. The dishes served up here built this city and continue to do so every lunchtime: comforting bessara (split-pea or broad-bean soup) and harira (a Moroccan staple of chickpeas, lentils, and lamb broth); sardines doused in charmoula and deep-fried until crunchy; hard-boiled eggs dipped in cumin. Come in the evening if you crave bite-sized brochettes of tender lamb and spiced liver.

    Surfers have long favored the legendary breaks at Poipu Beach, on Kauai’s south coast, but honeymooners and romance seekers have staked a claim at the beachfront Ko’a Kea Hotel & Resort, a boutique-style getaway in a revamped 1960s lodging that offers a peaceful alternative to the island’s big-name hotel chains. Arranged around an umbrella-dotted pool area, the intimate 121 rooms have private balconies and lanais and island-appropriate decor (think shell-themed artwork and carpeting and coral-embellished drapery framing the sliding doors). Order in to sample sushi prepared with the day’s fresh catch, or head down to Red Salt, helmed by Kauai native Noelani Planas, whose savory vanilla-bean mahi-mahi and lemon-pineapple soufflé pancakes earn rave reviews.

    The Riviera was a refuge for many artists during the war, and when the owners of La Colombe d’Or in St-Paul-de-Vence exchanged meals for works of art, they eventually found themselves with a world-class collection. Today, pieces by Fernand Léger, Pablo Picasso, and Joan Miró adorn the cozy dining room where guests savor regional specialties.

    Opened in 2012, Hattie B’s is the new kid on the block for hot chicken, Nashville’s most iconic dish. Still, what the restaurant lacks in history it makes up in flavor, proven by the long queues that don’t seem to diminish until the kitchen closes at midnight. The hot chicken, made in the traditional style with a hot cayenne paste, comes in a variety of forms, from wings to dark meat; order the half bird if you want to try a little of everything. Then decide how much you want to crank up the heat, which ranges from mild to “Shut the Cluck Up: Burn Notice.” Half the fun is choosing the sides, which include pimento mac and cheese, Southern greens, baked beans, and extra pickles.
