The makai pakka combines Mexican esquites with a similar dish from Kenya. The partner-chefs connect food and current events as well; they commit to a socially responsible work environment and the restaurant serves as a progressive events forum. Open for breakfast and lunch, plus Saturday-only brunch.

    Yes, it’s tiny—and no one knows its name—but this hole in the wall is a new favorite, simply because it’s like no other vibe we’ve seen in the city: an open kitchen and a rustic setting, both a lunch stop and a forum for learning about corn, the ingredient that lent form to Mexican cuisine as we know it today. The big idea came from taco-maker Paulino Martínez, founder of iconic Taquería El Parnita, who reasoned that to make a better taco, you had to get involved starting with corn. It translates to superior grain in everything from sopes and gorditas to atole and tejuino (a slightly fermented corn, brown-sugar and lime beverage).

Tucked away at kilometer-marker 7.5 lies Casa Jaguar, a haven for the best of both worlds. The restaurant emphasizes Caribbean flavors, using fresh, local ingredients and prepared food and drink with Mexican flair. Try the grilled aguachile seafood cocktail, or the sea bass with corn masa, and wash it all down with a drink of copal mescal, the perfect foil for intense local heat. Beyond being a great restaurant, Casa Jaguar is famous for its “Dinner and Party” concept: there’s a jungle-focused celebration every Thursday with artists and alternative live music.

    First established in 1945, in an odd no-man’s-land between Chapultepec and Polanco, Los Panchos calls up the Mexican restaurants you may have known in childhood, with a wide-ranging (laminated) menu, whitewashed walls, and potted plants (not an Edison bulb in sight), plus a garrulous, family-friendly set-up serving trough-sized platters of classic Mexican grub like enchiladas, gorditas, moles, and chicken taquitos, tortilla soup, and tostadas, multi-colored margaritas and, most especially, Mexico’s answer to confit, carnitas: utterly delicious, ferociously caloric chunks of pork, fried in their own fat. The restaurant is perfect for larger groups who make their own tacos seasoned with cilantro, chopped onion, and the full hot-sauce portfolio. Nostalgic and lively, nobody leaves hungry.

    In 1589, the Church of San Luigi dei Francesi became the official church of Rome’s French community, and with true Bourbon flair, the church’s decorations are a celebration of France’s power and wealth, with gilded stucco, lavish marbles, and detailed ornament. But it can feel as though no one is noticing, since visitors usually head directly to the Contarelli Chapel in the transept to the left of the main altar, where three incredible Caravaggio paintings reside: The Calling of Saint Matthew, The Martyrdom of Saint Matthew, and Saint Matthew and the Angel. Known as the Matthew Cycle, the beautifully detailed and dark oil paintings show off the best of the baroque painter.

Learn about this iconic figure at the Evita Museum, where photos, videos, and numerous personal effects (including dresses and even shoes) provide an intimate, in-depth chronological view of Evita’s life. The museum site was once the headquarters of the Eva Perón Foundation, which helped women who came to Buenos Aires from the provinces; the ornate structure, originally built in the early 1900s, is a marvelous backdrop to the small museum. Perhaps even more popular than the exhibits is the on-site restaurant, which serves delicious food on a gorgeous plant-filled patio.

For the thrill seekers, near the Grottos there is a series of waterfalls that flow into a crystal clear pool of mountain river water called the Devil’s Punch Bowl. People jump from 20 foot cliffs into borderline hypothermic cold water that takes your breath away when you hit it. Make sure you jump out far enough so you don’t hit the jutting rock bed on the way down. Some might think it is crazy but it is the ultimate adrenaline rush.

    Manifiesto Café is known for its wide-ranging menu of coffees and careful brewing methods. Order a cup with beans grown in Mexico, Colombia, Costa Rica, El Salvador, or a handful of varieties from Europe. No matter which coffee you choose, it will be freshly-roasted. Manifiesto doesn’t serve coffee that was roasted more than 48 hours earlier. But that’s not the owners’ only rules for the coffee they serve. They also prefer beans harvested at plantations that are about 4200 feet above sea level. If you’re looking for a quick cup of coffee, go elsewhere. Manifiesto takes its coffee very seriously and uses a variety extraction methods. The payoff? Quite easily the best cup of coffee you’ve had in a good long time.

All that, plus rigorous military training, are factors shaping his restaurant, serving favorites from various Middle-Eastern latitudes, all prepared methodically and painstakingly. For erstwhile warrior Guli the Great, “Cooking is logistics.”

The Tree House is one of Aguas Calientes’s best places to try alpaca steak, yet vegetarians find tempting options, too, like ravioli with goat cheese and mushrooms. The tight dining room, nestled in the boughs, is romantic and dreamy. Be sure to make reservations.
