    Although the Smoking Goat is credited with pioneering a culinary renaissance in a once-sleepy corner of North Park, nothing else about chef Fred Piehl’s flagship restaurant screams “culinary vanguard”—and that’s precisely what devotees love about the place. Regulars come here for the reliably exquisite staples: French onion soup with what’s essentially an open-face grilled cheese sandwich afloat in rich veal broth; duck fat truffle fries with pecorino romano and mustard aioli; beef cheeks à la Bourguignonne with carrots, cioppolini onions, cherry tomatoes, mashed potatoes, and braising jus; and other creations that blend traditional French tastes with sustainable, organic San Diego–sourced ingredients. While dinner at this rustic, romantic spot is hardly the time to eat lightly, if you want to go vegetarian, opt for the indulgent raclette au gratin with fingerling potatoes, cornichons, and toast, along with a salad of poached and raw pears with mixed greens, pistachio pesto, and champagne vinaigrette. And as befits the restaurant’s caprine theme, the goat cheese cheesecake with poached peach and whipped cream is a favorite dessert.

    North of the Yangtze, it’s all about wheat instead of rice. Named after China’s northeasternmost region, this beloved chain serves hand-rolled wheat dumplings stuffed with savory pork or fresh veggies and boiled until the center is juicy. As delicious as the pork jiaozi are, the vegetarian dumplings might be the real stars: Try the tangy mushroom and bok choy dumpling or the green pepper, cilantro, and white cabbage. Warning: Prices here are scandalously cheap, so you’re probably going to order...a lot. Locals also love the stir-fried eggplant and potatoes (di san xian) and smashed chicken (xiang su ji).

    One of Montréal’s most iconic landmarks was designed by an American, R. Buckminster Fuller. The Biosphere, an enormous geodesic dome, sits in Parc Jean-Drapeau on St. Helen’s Island in the St. Lawrence River. Now considered one of the most important examples of futuristic architecture of its period, it was originally built as the U.S. Pavilion for Expo 67, the world’s fair that took place in Montréal in 1967. It quickly proved to be one of the most popular attractions of the event. An acrylic skin originally covered the building, but that was destroyed in a fire in 1976 and never restored. The skeleton building remained intact, however, and it is arguably even more dramatic and elegant than before the fire. Today the Biosphere houses a kid-friendly Environment Museum, with interactive displays that introduce environmental concepts and address the issue of climate change.

    Liz Lambert has made a name for herself converting quirky motels into cool-kid haunts in Texas and beyond. With Hotel San Cristóbal, she brings her magic to a transcendent Pueblo Mágico in the Baja Peninsula. Now she’s bringing her magic to a transcendent Pueblo Mágico in the Baja Peninsula. Just outside of Todos Santos proper, on the small fishing beach of Punta Lobos, the whitewashed, cubist property houses 32 serenely chic rooms, complete with crisp Sferra linens and serape-inspired duvets, vibrant ceramic-tiled bathrooms, and windows that overlook sunny Pacific waves (keep your eyes peeled for migrating gray and humpback whales).

    Resist the urge to confine yourself to your Coco-Mat mattress, however. Adventure awaits in the form of surfing off nearby Playa Cerritos, learning to make pottery in an off-site class, or accompanying chef Edgar Palau on a trip to source fresh fish from local anglers. There’s also a beautiful central pool and lounge, a library, a seaside mirador, and a small retail shop on property. When hunger strikes, head to Benno, where biodynamic meals that fuse Mexican and Mediterranean flavors pair perfectly with small-batch mezcals and sustainably harvested regional wines.

    The centerpiece of Turks and Caicos is Grace Bay, on the island of Providenciales (known locally as Provo), where the miles-long sugar-sand shore routinely tops “best beach” lists for the Caribbean and the world. The inland area along this stretch of northern shoreline is where you’ll find most of Provo’s hotels, shopping, and restaurants. Grace Bay is part of the Princess Alexandra National Park. It has calm waters and a sandy seafloor with no rocks or corals to step on, making Grace Bay the perfect place for swimming, splashing along the shoreline, parasailing, and stand-up paddleboarding.

    The apéritif of choice in the Dordogne (and in many parts of France) is this sweet dark liquor called walnut wine, but there’s nary a grape in site. The vin de noix is made from young green walnuts harvested between La Fete de St. Jean (June 24) and Bastille Day (July 14), when the shells are still soft and green. Walnut wine is a typically home-brewed concoction. Think moonshine, with a sophisticated French flair. Though I have found it commercially, the best accompanies a good meal with friends around a kitchen table or at the region’s numerous Fermes Auberges (Farmhouse Inns), where all products are made on site. Walk in to any home and you’ll likely be offered a sip. There are hundreds of family recipes for this elixir, each claiming to be the best, bien sur! But most agree, the longer it sits in the cupboard, the better (6 months to years). But it’s worth the wait. Recipe: green walnuts, dry red wine, sugar, and some patience. Et Voila! I’ve often been asked what it tastes like, and my description usually results in a nose wrinkle. A blend of port and prune juice---and it’s delicious. My friend Roland, knowing my love of the apéritif and the memories it summons, sent me these two glasses he’d found in an antique shop in Perigueux, along with a small bottle of his homemade walnut wine. I set the glasses out on my terrace, poured in the chocolate-hued liquor, and toasted to the memory of my beloved Dordogne, and the people from there who have flavored my life.

    Wine is an integral part of life on the Dalmatian Coast, a region with many indigenous varietals; a visit to Dubrovnik shouldn’t go by without a glass of local wine. Tucked away on Palmotićeva Street off the main Stradun, D’Vino offers cozy interiors as well as atmospheric seating at tables set on the narrow thoroughfare outside. Try a glass of something new from the impressive selection of local producers—the knowledgeable staff can help guide you in choosing one. D’Vino features several tasting experiences that highlight the region’s star wines: the Konavle Valley’s refreshing Malvazija, potent Plavac Mali reds from the Pelješac Peninsula, and Korčula Island’s fruity Pošip whites. Pair the wines with a platter of prosciutto and Croatian cheeses for a wonderful welcome to Dubrovnik and its wine region.

    The thermal hot springs in Rincón de La Vieja at Rio Negro (Black River) may not be as well known as those in the Arenal area, but we had the pools and surrounding forest to ourselves. From where we stayed at the Hacienda Guachipelin Rincón de La Vieja, the springs were accessible by horseback or vehicle, followed by a short hike and crossing a rather dubious hanging bridge. The pools are heated by the Rincón de La Vieja Volcano, so you definitely want to test the steaming water. There are seven pools to sample of different shapes, sizes and temperatures. The first pool was too hot to plunge more than our toes into. And the pool that was “just right” was the last one, which happened to be ideally situated next to the churning river. After two days of horseback riding, hiking, canyon ziplining and rappelling, it was great to unwind at this private oasis. If a rainforest/volcano adventure beckons you, I recommend staying at Hacienda Guachipelin Rincón de La Vieja and getting an adventure pass from Adventure Tours--both are at Rincón de La Vieja National Park.

These are the Dutch equivalent of Irish pubs, cozy spaces where people gather to relax over beers and comfort food. And Café Papeneiland is a classic. Stop in for a sip of jenever and a slice of Dutch apple pie.

    When you’re staying at this historic property, it’s worth waking up early to watch the sun rise and turn the sky pink against the San Jacinto Mountains. Romance suffuses this upscale three-acre resort of low-slung bungalows, designed in 1952 and later refreshed by acclaimed designer Steve Hermann. The light-drenched Fireplace Junior Suite Bungalow—once Marilyn Monroe’s room of choice—is a favorite for couples, with its private outdoor shower and wood-burning copper fireplace, plus Frette robes and L’Horizon-branded eye masks. The property’s restaurant, SO•PA, is equally alluring, thanks to a linear fire pit and fountain outdoors and sparkling modern metallic chandeliers inside. While the menu of New American fare is inspired—try the honey mussels paired with an Infinity Paloma cocktail—the chef will also create, with advance notice and upon request, a personalized tasting menu riffing off the day’s best produce and in keeping with any dietary restrictions. Pro tip: The deep-tissue rubdown at the indoor-outdoor spa is unparalleled, but pampering doesn’t need an occasion here—hit the poolside sun beds early for complimentary back and foot massages.

    If you find yourself on Middle Caicos, don’t miss one of the most dramatic shorelines on the islands, along Mudjin Harbor. The three-mile-long stretch has tall limestone cliffs that drop directly into the water, interspersed by sandy coves. The ocean here is often too rough for swimming or snorkeling, but there are excellent walking trails, including the historic Crossing Place Trail that provides great views of the coastline. Mudjin Harbor also has two large sea caves that you can explore from the beach.

    Nobody, not even its biggest fans, would claim that Do Son was Vietnam’s most attractive stretch of coastline. Nevertheless, this rambunctious town near the city of Haiphong is probably the closest (and certainly the busiest) beach to Hanoi.     It’s taken awhile for Marrakech‘s industrial quarter to establish itself as home to the best design workshops and ateliers in the city. It’s easy enough to get to, but petit taxis tend not to frequent its wide, blocky avenues, so getting back into town can be a pain. (Securing a driver who is prepared to wait or come back for you helps.) That said, it’s well worth the trip to shop with local tastemakers for furniture and housewares at flagship stores. Don’t miss Chabi Chic for groovy pottery sets; Le Magasin Générale for bigger items, such as the midcentury modern chairs and sideboards; and LRNCE for hand-painted vases that merge cubism with artisan savoir faire. Take in the ateliers of textile and garment makers, too, such as Angie Linen for gorgeous bespoke bed linens, and Salima Abdel Wahab and Topolina for a contemporary spin on traditional kaftans and must-have housecoats. Stop at Le Zinc, the neighborhood’s buzziest lunchtime bistro, before hitting Voice Art Gallery to peruse superbly curated exhibitions of North African and Middle Eastern contemporary artists.
