    Iconic chef Roy Yamaguchi helped popularize Hawaiian-fusion food a generation ago, but at Eating House 1849 he takes a delicious detour with dishes inspired by Portuguese, Spanish, and Filipino flavors. This “plantation cuisine” evokes the immigrant dishes served in the mid-1800s, when the state’s first restaurant—a Honolulu establishment called Eating House—opened (according to legend). Yamaguchi brings some serious chops to the table: He trained at the Culinary Institute of America before serving as executive chef in Los Angeles‘s La Serene and winning a James Beard Award. The menu shifts seasonally, according to what farmers, foragers, ranchers, and fishermen produce. Expect delicacies like a beef-and-wild-boar burger and pork lumpia with green papaya. Cap it all off with cinnamon-dusted malasadas (Portuguese doughnuts) with Koloa Rum sauce!

    Hop on the free ferry from the city’s Central Station for the 15-minute ride to the NDSM wharf, an old shipyard that’s transformed into a hipster haven with restaurants, bars, and artists’ studios. The waterfront “beach bar” Pllek is a popular spot here; built out of old shipping containers, the soaring, dual-level space has an industrial vibe, with corrugated-metal walls warmed by bright artwork, an indoor fireplace, and huge windows looking out over the IJ River. But it’s the man-made beach that draws crowds in warm weather, with comfy beanbags and loungers where you can while away the afternoon. There’s a nice selection of beer and wine; the food is simple but surprisingly good, and it’s crafted with fresh, organic ingredients. Pllek also hosts live-music events, DJs, dance parties, films, and morning yoga classes.

    A high-end gastropub set in the green suburb of Karen, Talisman serves some of the best food in Nairobi. The ginger teriyaki tofu, in particular, is delicious, and the menu offers a wide variety to tempt all kinds of palates. Talisman is great for romantic dinners, especially those enjoyed in the pretty gardens lit by coal fire pits, lanterns, and candles. Be sure to book ahead—and note that the restaurant has a calendar of live music and events, so call in advance to see what’s on. An Escape Room experience just opened next door, so a perfect evening could mean a daring breakout followed by a candlelit meal.

    The Inca Trail is perhaps the most famous trek in Peru. This is the road to Machu Picchu, an ancient route that leads from the Sacred Valley into the heart of the Andes. You must obtain a permit and hire an official guide in order to hike the Inca Trail proper. There are plenty of tour operators in Cusco that offer trips up to Machu Picchu, so you should definitely look at reviews before you choose. For better or for worse, the tours are all-inclusive. The local tour operators employ porters to carry your packs and set up a camp. A team of local chefs will prepare three meals a day, and many hikers come back raving about the delicious meals. Keep in mind that the trek can be tough, especially in the first few days. The trail is often narrow, and it flirts with formidable heights. The mountains in this part of the Andes can rise well over 13,000 feet, and many hikers find themselves suffering from altitude sickness. Make sure to take a few days (in Cusco or the Sacred Valley) to acclimatize before you begin the journey. Finally: make sure to plan ahead! The Peruvian government limits trail access to 500 people per day, including porters. This regulation protects the local ecosystem and the delicate ruins, and it ensures that the trail won’t be too crowded. However, it also means that permits for the peak summer season sell out months in advance. If you aren’t able to get a permit for the classic Inca Trail, never fear: there are various other trails that lead to Machu Picchu.

It’s a great area to walk around in, and you can try coffee and pastries at the CIA Bakery Cafe. You can also eat at NAO, the award-winning restaurant at the CIA that’s also part of the student’s educational experience. Be sure to make a reservation.

    Who knew grocery shopping could be so photogenic? In summer, you’ll be tempted to photograph the piles of tomatoes; in winter, the tangles of greens. Wander around to get a sense of what is in season and what you will find on local menus at lunch and dinner. Rows of stalls sell meat, salami, fresh fish, pasta, cheese, and bread. If all that food makes you hungry, look for the Trattoria del Rocco inside the market, a diner that serves lunch created from produce sold on-site. The early bird gets the worm here: Everything is swept up and closed down by early afternoon.

    You’ll hear no highway traffic at these twelve lakeside cabins and 3 bunkhouses, which sit beyond roads’ reach and are accessible only by boat. Supplies are delivered via barge, and even the accommodations float upon the water: Initially built to house logging crews, the resort’s wood-shingled cabins and docks sit right on Ross Lake, supported by massive red cedar float logs measuring more than 3 feet in diameter. Azure waters lap against your front porch, where deck chairs face a row of mighty mountains (the largest, Snowfield Peak, reaches 8,347 feet). You can spend your days gazing at those views, or you can use the resort as a base for exploring North Cascades National Park and Ross Lake National Recreation Area. Rent one of the resort’s motorboats, canoes, and kayaks to access trailheads sprinkled along the lakeshore, or just hike from your cabin: The Big Beaver Trail winds past the resort. There’s no onsite restaurant, but all accommodations include kitchen facilities, so pack in all your own food and beverages. After the 2.5-hour drive from Sea-Tac, you have two options for reaching the resort: You can hike about a mile to Ross Lake, where the resort will pick you up by boat ($2 per person), or you can catch a ferry/truck combo from Diablo Dam ($14 per person, ferries run twice daily at 8:30 a.m. and 3:00 p.m.). Just don’t wait till the last minute to make your booking, since reservations typically fill a year in advance.

    Stock up on sake, wasabi, and high-end soba noodles at this Japanese supermarket chain, the largest in the U.S. It stocks adorable prefab sweets, like Pocky chocolate-coated biscuit sticks, along with Honolulu‘s hottest new donuts at MoDo. Made with mochi—a sticky-sweet rice flour—these fresh pon de ring pastries sport thick glazes like kurogoma (black sesame) and hojicha-roasted tea, alongside more familiar flavors like chocolate, strawberry, and lilikoi (passionfruit). Owner Chris Watanabe spent three years in Japan, swooning over his local Mister Donut shop, before recreating these delicacies back home. Other kiosks in the mini-food-court peddle sushi, ramen, rice balls, and tempura.

The food is traditional Creole, served with pride in homes-turned-dining-rooms, while the rhum distilleries are considered the best in Guadeloupe.

    One of the most popular spots on the island, Cisco Brewers began as a winery 25 years ago and has now grown into a destination that showcases offerings from the Nantucket Vineyard, Triple Eight Vodka, and the Cisco Brewers beer label. Summer weekends there is a lively crowd listening to music and taking advantage of the food carts and raw bar. For a tour and a more intimate view of the production, visit during the week. There is a seasonal shuttle available and the new bike path makes Cisco all the more accessible.

    The woodblock prints from ukiyo-e artist Hokusai first introduced me to Japan’s most iconic volcano. Between 1826 and 1833, Hokusai traveled to many provinces in Japan to see Mount Fuji from different vantage points as represented in his works Great Wave off Kanagawa, Watermill at Onden, and Nihonbashi bridge in Edo in order to produce the famous “36 views of Mount Fuji” series. I have always loved these graphic prints and was determined to get at least one view of this magnetic mountain in my lifetime. During my stay at Hoshinoya Fuji, I was able to get the same view that Hokusai etched almost two centuries ago in print number #35 of the series: Mount Fuji reflected in Lake Kawaguchi.

    Set northeast of Lake Kawaguchi, Hoshino Fuji is the destination for those interested in “glamping” and exploring Japan’s natural side. Barely a year old, the resort rises like concrete tree houses among the red pine forest. Upon check-in you’ll be given a backpack with headlight, water bottle, snacks and portable blanket to urge you on for nearby adventures. Around the resort, camping elements are incorporated with hammocks between the pines, open camp-fires at the Cloud Terrace, and portable in-room coffee kit. Each cabin has a plush bed, minimal furniture and a balcony for panoramic views of the lake and Mount Fuji.

    You can “rough it” with nature outside, but I couldn’t resist pampering myself with the amenities provided by the resort. My perfect morning started with a bath scented with hinoki and flowers before a wholesome breakfast with fresh baked bread on my private balcony. During the day you can go out for a hike or kayak or learn how to smoke food from one of the members of staff. In the evening, learn how to cook over an open fire from the chefs before you enjoy the best dinner with local meat and vegetables. The staff at Hoshinoya Fuji thought of all the details that would create a great camping trip and combined it with the attentiveness of a luxury hotel to create a truly unforgettable experience. A work of art led me here and I can’t wait to return and experience this level of hospitality again.

Glass elevators spirit you to the top—hardy souls can take the stairs part of way—where in addition to unparalleled panoramic views of Paris, you can toast your arrival with a glass of bubbly at the Champagne bar. Evenings there’s a grand light show: every hour on the hour, the tower sparkles for five minutes with 20,000 bulbs.

    Home to Mexico’s largest concentration of artisans, Tonalá—just 10 minutes from Tlaquepaque—is known for its pottery, hand-blown glassware, textiles, miniatures, and more. On Thursdays and Sundays, the town hosts an open-air market, or tianguis, in its main plaza—and has since Prehispanic times—during which visitors can shop stalls from more than 400 craftspeople. If you can’t make it on market day, you’ll miss the hustle and bustle but can still visit the stores and family-run workshops where the artisans produce their unique wares.
