    Located in the former warehouse of the American Syrup & Preserving Company, Bastion offers customers a different experience depending on where they perch. On the bar side of the operation, one feels like a guest in the spacious digs of an artist, with mismatched furniture and lights strung from the rafters. Settle in and order craft cocktails and a platter of nachos gussied up with smoked meats. Or head to the other side, around the bar wall, where the staff prepares dinner in a warm, unpretentious space with chef Josh Habiger himself occasionally emerging from the kitchen to change the vinyl records. In lieu of menus, guests are handed bingolike cards with minimal descriptions (Monkfish Liver + Salsify or Black Sea Bass + Black Tea) and mark their choices there, placing their trust in the hands of Habiger and team cooking from an open kitchen.

It’s open for breakfast, lunch, and dinner, and there’s always an enticing selection of daily specials on the board up front.
  • The famed German naturalist and explorer Alexander von Humboldt was the first to document the ocean current that explains why the adorable, nattily plumed penguins favor this part of the Chilean and Peruvian coasts—the water brings oodles of anchovies, sardines, and crustaceans along with it. (Both the current and the penguins were eventually named for Humboldt.) The reserve includes three islands—Damas, Choros, and Chañaral. From the boats bound for Punta de Choros, visitors can catch glimpses of dolphins, whales (including humpbacks and blue whales, especially in January and February), and frolicking sea lions.

    Simplicity reigns at The Charter Oak, the gamechanging restaurant owned by Christopher Kostow (who also helms the kitchen at The Restaurant at Meadowood). The family-style menu by chef Katianna Hong features “elemental” cooking, with dishes that highlight only one or two ingredients at a time. The best representation of this is the crudités, raw vegetables from the restaurant’s farm, served on a bed of crushed ice with a side of fermented soy dip. Another example? Crudo of kanpachi with grilled Rangpur lime and herbs. Most of the menu’s larger dishes are seasonal and prepared in a hearth at the center of the restaurant. Highlights include roasted pork shoulder with spiced molasses and winter squash, and beef rib grilled over cabernet barrels and beets dried over the fire. The most Instagram-worthy part of the meal may be the moment the server explains where to find the silverware—forks, knives, spoons, and napkins are stored in hidden drawers on the side of each table. During warm summer evenings, precede your meal with a few rounds of handcrafted cocktails in the open-air courtyard out front. The happy hour of half-priced beers and $3 shots of Fernet-Branca can’t be beat.
  • Sitting right next door to the Basilica of Notre-Dame in the heart of historic Montréal, St-Sulpice Seminary is the second-oldest building on the island. (The oldest is the 1671 LeBer-LeMoyne House, roughly six miles from the center of the city, which now houses the Musée Lachine.) The seminary dates from 1687, and remarkably it is still used for its original purpose: to house and train Sulpician priests. Sadly, this means the building is rarely open to the public. (Rarely is not an understatement here—apart from some tours in 2017, the last time the general public was allowed through its gates was in 1967 during the Expo.) Though you can’t tour the building, you can admire its gray stone architecture from the street. Especially noteworthy is the clock on the façade, built in Paris and installed in 1701, making it one of the oldest such clocks in North America.

    One of Montréal’s most iconic landmarks was designed by an American, R. Buckminster Fuller. The Biosphere, an enormous geodesic dome, sits in Parc Jean-Drapeau on St. Helen’s Island in the St. Lawrence River. Now considered one of the most important examples of futuristic architecture of its period, it was originally built as the U.S. Pavilion for Expo 67, the world’s fair that took place in Montréal in 1967. It quickly proved to be one of the most popular attractions of the event. An acrylic skin originally covered the building, but that was destroyed in a fire in 1976 and never restored. The skeleton building remained intact, however, and it is arguably even more dramatic and elegant than before the fire. Today the Biosphere houses a kid-friendly Environment Museum, with interactive displays that introduce environmental concepts and address the issue of climate change.

    Vancouver’s serene waters serve as the perfect playground for kayakers and stand-up paddleboarders. Newbies can book two-hour “tasters” at Ecomarine’s Granville Island or Jericho Beach locations, while more adventurous paddlers—of any level—can jump right into tours, like the summer sunset excursion along the scenic shores of False Creek (a protected inlet) and English Bay (part of the Strait of Georgia). While most tours last a half or whole day, Ecomarine also offers more hard-core expeditions, like the weeklong trip to Haida Gwaii. This craggy, rain-forested archipelago is often referred to as Canada’s Galápagos for its vast number of endemic species. Built in 1888, “Our Swinging Old Lady” is supported by 16 pontoon boats and two motors. (If you don’t feel like waiting for Queen Emma to reopen, you can take a ferry between Willemstad’s Punda and Otrobanda districts instead.) At night, the bridge’s lights cast a shimmering rainbow on the water.

    A whole lot of history converges at the Fairmont San Francisco—as do all of the city’s cable car lines, which offer easy transportation to the Financial District, Union Square, and Fisherman’s Wharf. The hotel was built in 1906 but damaged in the Great Earthquake and subsequent fires before it even opened, so celebrated architect Julia Morgan was brought in to repair the building. Once it debuted, the hotel quickly became a city favorite, hosting more than its share of historic events, including the series of meetings in 1945 that resulted in the formation of the United Nations. The hotel’s storied bar, The Venetian Room, also featured big names, from Ella Fitzgerald and Nat ‘King’ Cole to Tony Bennett, who first performed I Left My Heart in San Francisco here in 1961 (Bennett still frequents the hotel).

    Today, the Tonga Room & Hurricane Bar is a draw for tourists and locals seeking a kitschy, iconic San Francisco experience, with live music, Polynesian food, and Mai Tais severed against a backdrop of occasional staged thunderstorms. You’ll literally be swimming with the sharks (and stingrays) this time. In Atlantis, don’t be surprised to find yourself feeding the rays next to a celebrity—this is one of the places they stay in Dubai.

    With only a couple of exceptions, you can’t soak in Yellowstone’s thermal features (this is for numerous reasons, not the least of which is that most are so scalding hot they’d burn the flesh off you). North of Gardiner, Montana, though, in the no-stoplight community of Pray, Chico Hot Springs has welcomed soakers to its spring-fed hot pools since 1900. Spend the night in one of the quirky rooms in the historic main lodge, originally built as a boardinghouse for miners, or in a refurbished caboose from the Northern Pacific Railroad. If at all possible, plan to be at Chico on a Sunday morning, when it serves the best brunch in Montana.

    When the Art family bought the struggling Chico Hot Springs Resort in 1972, some of the earliest improvements they made were to its dining room. The idea was to create one of the best restaurants in the state; if guests came for the food, maybe they’d spend the night. The family succeeded. Today the Chico Dining Room is so beloved it spawned a cookbook, A Montana Table: Recipes from Chico Hot Springs Resort. While ingredients are as fresh as can be—with produce from on-site greenhouses, meat from local ranchers, seafood flown in overnight from the coast—the menu includes some dishes that have been around for more than 40 years. The classic Chico meal is beef Wellington (service for two) and, for dessert, a Flaming Orange, which is exactly what it sounds like.

    Anguilla’s most social beach is full of local flavor. From visiting boats to residents who flock here for the best island-style bar-and-nightlife atmosphere—home to Johnno’s, Elvis’ Beach Bar, and the Pumphouse—there’s never a dull moment on Sandy Ground’s long, soft strand. The water here is calm, making it an ideal stretch of sand for families as well. Sandy Ground is also the site of Anguilla’s August Monday, the most important day of the summer carnival season, when the entire country seems to be in the same location to celebrate J’ouvert: some folks on the beach, some on boats blasting music. For the latter, nothing beats this remote 1947 compound of luxury “living units” designed by the Frank Lloyd Wright protégé, the only Lautner residence open to public bookings. All concrete, redwood, glass, and steel, the four flats, which sleep two adults each, are distinctly designed with vintage furniture, organic cotton pillow-top mattresses, Heath Ceramics–tiled showers, and contemporary kitchens. Spend the day sunbathing from your private patio and cooling off in the saline plunge pool, and stargaze from the skylight above your bed at night. The micro-resort is self-catering, but that makes it all the more special—instead of eating in a restaurant, up to 12 people can dine under a communal redwood pergola; arrangements can be made for private chef dinners there, too. A hidden speakeasy-inspired bar for guests of the Ranch House (this additional accommodation, not a Lautner, sleeps four) only fuels the retro fantasy. Plan ahead: Weekends fill up months in advance.
