Deep in the red-rock country of central Southern Utah, this hidden gem of a national park doesn’t draw much attention to itself, making it a great place to avoid the crowds. It’s situated along most of the nearly 100-mile-long Waterpocket Fold, a classic geologic monocline created by a shift in the rock layers. The majority of guests here drive the main road through the north-central section, where the visitor center is located, but there’s lots to see in Cathedral Valley in the far north and Strike Valley in the far south as well.

Shipwreck is a classic Caribbean beach bar with umbrellas (in both the sand and the drinks), snorkeling off the shore, and live music on Sundays from “4ish to 6ish.” Don’t miss the fish tacos, claimed to be the best you’ll ever taste. And bring your phone—the photo to get is one of the local monkeys that frequent the beach.

A modest entryway opens onto a bright, colonial Mexico fantasia, complete with blue tiles, crisp white linen, colorful pottery, and would-be-viceregal artworks. Since 1912, Café de Tacuba has opened early and stayed up late to serve classic Mexican fare like enchiladas and chalupitas, excellent tamales, hearty breakfasts, a wide variety of soups, and even more-ambitious entrees, attracting an amenable congress of families, foreigners, work groups, and confidence-exchanging senoras. Order the café con leche for a smart jolt of showmanship; Spanish troubadours serenade the proceedings most nights and weekends. Maybe it’s your grandmother’s Mexico, but the old girl knew a thing or two.

Among the most lauded hotel openings in recent years, Dunton Hot Springs is a glitterati mainstay, with its batch of former mining community cabins that look straight out of a Ralph Lauren catalogue. You don’t have to book a pricey stay at this Relais & Chateaux property to be part of the experience, however—the spa is open to the public. Make an appointment for the indulgent, only-in-Colorado Dolores hot-stone massage, which uses heated stones culled from the Dolores River to work out your kinks. Then, take a soak in the on-site sulfuric hot springs, which were once a restorative playground for the Ute Indians.

Sure, it’s a bit rustic and the pebbled beach is small, but this beach club has reached legendary status with Amalfi Coast travelers for its charm. And its food. Everything served is fresh and local, and made in a tiny kitchen built into the rocks at a precipitous height. One suggesion for a long and leisurely lunch: Start with grilled mozzarella served on lemon leaves before moving on to the zuppe de cozze, a giant bowl of mussels drenched in a garlicky, tomatoey stew. If friggitelli (sweet Italian chili peppers) are on the menu, by all means order them. A pitcher of cold white wine with peaches is also recommended. Call ahead to reserve a chair on the beach and a table for lunch, and at the ferry jetty in Positano, your ride to the beach club is the boat with the red fish on its mast.

Curaçao definitely runs on “island time,” but it’s worth getting to this café early so you can eat lunch or dinner on the colonial building’s second-floor veranda. Gaze across the bay at Punda’s colorful houses, then savor the gourmet menu. A top pick is the keshi yena, Curaçao’s national dish: cheese stuffed with spiced meat, olives, capers, pickled onions, and prunes. Wash it down with a glass of awa di lamunchi—lime juice with a dash of brown sugar. Other favorite dishes include the fresh fish, the coconut braised-goat curry, and the braised-beef stew (karni stoba).

At Chat ‘N’ Chill, a beach bar on Stocking Island in the Exumas, you can enjoy cold drinks with your feet in the sand and eat your fill of local fare like BBQ ribs and grilled fish. The menu also has burgers, hot dogs, and made-to-order conch salad. This laid-back spot is a classic island beach bar, and you can even wade into the clear water to feed the conch scraps to the local stingrays. Chat ‘N’ Chill is also famous for its Sunday pig roasts, a lively event with a whole, slow-smoked pig, drinks, and island music on the beach.

Just as Rome has the Colosseum and Paris the Eiffel Tower, so Switzerland has the Matterhorn. Located above Zermatt, this 48,195-foot wonder attracts hordes of visitors, eager to see the morning sunlight beam off its four faces, ski its neighboring mountains, or even attempt to climb the beast itself. The Matterhorn, however, is not for the faint-hearted and has claimed the lives of more than 500 people since it was first scaled in 1865—an average of 12 per year. It’s also been replicated at Disneyland in California as a rollercoaster.

In San Pedro, a town on Belize‘s northern island of Ambergris Caye, the Mestizo traditions are strong. The Mestizo people are descendants of the Maya and the Spanish, and when those two cultures mixed, a new one was born. You’ll find many Mestizo people in San Pedro, but you’ll hardly find a better Mestizo restaurant than El Fogon, a spot owned by a local woman known as Miss Suzanna and run by her daughter. All of the food is cooked in a traditional outdoor oven (fogon means “kitchen hearth”), and everything is delicious. Try the salbutes, a tacolike dish made with fried tortillas, with a texture that’s somehow both soft and crunchy, or the pig tail with split peas. And the coconut rice is to die for.

A welcome departure from the classic Negril resort scene, this stylish boutique hotel—opened in 2018—melds local flavor, a vintage Havana feel, and a contemporary sensibility in a way that speaks to the curious, independent traveler. Set along 220 pristine feet of Seven Mile Beach, the hotel features a clean-lined, mid-century modern-inspired aesthetic throughout, accented by bright textiles, artwork, and a curated soundtrack that celebrates the history of Jamaican music.

Room options range from studios set on the second floor of the accommodation wing, to options with patios or balconies looking out at either the garden or the ocean. All have air conditioning, USB outlets, Bluetooth radio, free Wi-Fi, and mini-bars. Skylark is big on encouraging guests to explore the area, whether that means taking advantage of the direct beach access (the hotel provides loungers, paddleboards, snorkeling gear, and beach games, plus food and beverage service), going for a boat ride, hiking to a waterfall, or zip-lining through the jungle.

Two Florentine brothers were inspired by the history of radio communication to name their cushy bar Mayday—and outfit it with vintage radios (set on the tables and hanging from the ceiling), black-and-white photographs, and tons of other vintage memorabilia. The drinks, too, feel of another time, with their focus on handcrafted preparations, small-batch liquors, and organic and locally grown ingredients. Sample everything from unfiltered brews made from Tuscan barley and wheat, to a rare Scottish whisky or a green tea–infused cocktail. The atmosphere is one of collaboration: There are nightly lively music performances, the walls are lined with art installations and exhibits, and patrons are encouraged to leave their own vintage mementos. More than 250 artifacts of the RMS Titanic are on display at this 25,000-square-foot space at the Luxor. Among the truly incredible mementos excavated from the wreck of the sunken ship: an unopened bottle of champagne, a floor tile, a window frame, and a giant piece of the ship’s hull. Perhaps more impressive than the artifacts themselves are the full-scale re-creations of what guest quarters looked like on the ship—attending the exhibit gives you a sense of the difference in the experiences of a first-class passenger and a third-class passenger. Since it opened in the late 1990s, the exhibit has been seen by more than 25 million people, which makes it one of the most popular attractions in Las Vegas history.
