    Using an e-bike isn’t cheating—it’s far more environmentally friendly than using a car, plus you get some exercise as well. And those climbs along the coast are much easier when you have a 750-watt assist. Big Sur Adventures offers a trio of e-bike tours for all levels of riders: 17-Mile Drive, the Old Coast Road, and McWay Falls. One of the best choices for intermediate riders is the Old Coast Road route, a dirt road that follows the original wagon trail into Big Sur. There are locals who haven’t been on this road, and the views are magnificent as they stretch along the coast, into oak and redwood groves, and across the Little Sur River. Trips include four to 12 people and typically last three to four hours. Sure, in a car, you can roll down the windows to smell the sea, but exploring the coast by bike gives you a full sensory experience: ocean and forest scents, warm sun on your arms, the sound of crashing waves and wind in the trees, and the feeling of getting a little closer to the wild coast.

I’m a fan of the heavy, funky stuff - the more mold the better - but I’m sure you’ll find something to suit your fancy under this roof. Don’t forget the bread.

    This West Hobart café has long been known for sourdough: stone-ground, organic fruit, fig and walnut—you name it. But the owners of Weston Farm took it over in 2013 and added new breakfast and lunch favorites that outshine the bread—from baked eggs over chorizo hash coated in saffron yogurt to pork and fennel meatballs smothered in spicy paprika sauce. Most produce comes from the farm, including the smoked paprika, which won gold in the 2017 Delicious Magazine awards. (The farm also rents out a cottage overlooking its olive groves.) A mini marble-bar bakery, Pigeon Whole Bakers, fronts Franklin restaurant and is run by the original Pigeon Hole baker, Jay Patey. This is now the place to get your sourdough bread and doughnuts.

    One of Napa Valley’s most iconic destinations, Auberge du Soleil got its start in the 1980s as a restaurant—a fine-dining destination in one of the most picturesque locales in one of the world’s most beautiful places. Needless to say, it was only a matter of time before the wine aficionados who frequented its scenic dining room clamored for a place to stay (so they could enjoy more wine, naturally). The hospitality experts at Auberge obliged, dotting the 33 acres of vineyard and olive groves with elegant, French Riviera–inspired maisons, as well as a luxury spa inspired by the bounty of the natural surroundings. The sun-soaked swimming pool has views that rival those of the restaurant (and come paired with Italian ices and the never-ending temptation of a cool dip in the water). Throw in a bistro and bar—more Mediterranean-inspired cuisine with, yes, that view again—and lush grounds that include an art gallery, and it’s no wonder that Auberge du Soleil is still one of the area’s top stays.

    Declared a UNESCO World Heritage site in 1985, the Jardin Menara was created in the mid-12th century by the Almohad dynasty. Since then, its gardens have been added to and embellished by varying degrees for other sultans but always centered around a huge, flat reflecting pool, which captures the Atlas Mountains in the most sensational way on a clear day and forms the focus of a space that covers nearly 250 acres. An elegant pavilion was installed during the Saadian rule of the 18th century and proved a popular summer escape from the heat among city dignitaries. Unlike other, more formal gardens of the city, Menara’s vast olive groves, orange orchards, and cypresses feel more natural and create a true escape from the fray. Although extremely popular with picnicking Moroccan families in the afternoons, the place is blessedly free of tourists and a lovely, peaceful place for a stroll.

At Robert Sinskey winery, cookbook author and Chef Maria Helm Sinskey pairs bites made with ingredients from their garden with the new releases of Pinot Noir and the excellent Abraxas, a blend of Pinot Gris, Pinot Blanc and Gewurztraminer. Round Pond Estate takes it a step further — the four-course lunch served on the terrace uses all biodynamically farmed produce, vinegar and honey from the estate as well as olive oil that is crushed by stone just a stone’s throw from the winery.

Book a guided tour to visit the historic cellars, the crushing area, and the wine bar, where you’ll get to taste some of the delicious homegrown products, including wines, olive oil, and Vin Santo. Wine-paired lunches in the bar or main villa can also be arranged, and if you’re there in the summer, take a glass onto the terrace, which boasts views out to Florence’s Duomo.

After Louisiana became a territory, the U.S. governor extended the requirement, also decreeing that pharmacists take a three-hour licensing exam in order to practice. And no wonder illness got such attention—the city was arguably the least healthy place to live on the continent; it was riddled with yellow fever, malaria, and dysentery. This dark but fascinating history is explored in this atmospheric 1822 town house, which was once the home and shop of Louis J. Dufilho, the first licensed pharmacist in the city—and hence in the country. Exhibits include apothecary jars, tools of the trade, and leeches. (Yes. Leeches.)

    A clifftop eco-hotel surrounded by 50 barely touched acres on the bucolic North Kohala coast, Hawaii Island Retreat feels as far away as it gets. There are no TVs in the guest rooms, no air-con, and Wi-Fi only in certain spots. Solar and wind power provide all the electricity, while much of the fruit and vegetables are grown right on the property. Resident goats and bees supply the cheese and honey. The inn has 20 simply-furnished bedrooms in the main house, overlooking groves of cedar and pine trees, plus seven yurts a stone’s throw away, so it’s possible—likely even—that a guest might spend days here and rarely see another soul. The owners, a local spa therapist and natural healer and her physician husband, opened the property in 2009 with the express purpose of creating a wellness-focused retreat, which is why guests can sign up for classes in yoga, tai chi, and meditation, as well as facials and massages. Outdoor massage tables, placed under a tent, overlook a deep green valley. There’s also a mediation rock. So health-minded is this little retreat that it’s become a popular spot for guests recovering from serious illness or simply in search of a detox. Various packages have a wellness or spiritual theme.
