From the moment you touch down on the grounds of the 135-acre working cocoa farm, a stay at the Fond Doux feels like a step back in time. It begins in your suite, one of 15 cottages that have been lovingly restored by owners Lyton and Eroline Lamontagne in the colonial style, with traditional gingerbread trim, four-poster beds, and pastel walls. And nowhere does it flow more freely than at Nikki Beach, a club/restaurant on St Jean Beach where I found myself “stranded” when a friend’s flight was delayed. I blame this day on the rosé. After all, St. Tropez is in Provence, the world’s largest producer of the pink wine. And much like her sister beach club in France, Nikki Beach St. Barth’s uncorks the party at 11am and is packed in by noon with jet-setters. Bikini clad guests sun-tanned on the croissant-shaped beach and six pack abs strutted from the turquoise waters à la a James Bond film. Star sightings, I hear, are de rigueur but my eyes were on this group of about 10 men and women from New York. The magnums of rosé, hoisted on shoulders like summoned heros, arrived at their table every 15 minutes, and by 2pm, so had I. By 3pm we were ON the table. The thumping music from the DJ had us leaping to our feet at every song, and to quench our thirst—more rosé. The joie de vivre was as intoxicating as the wine. By 7pm, closing time at Nikki Beach, I was back in my hotel room, sleeping off the sun and my first day in St. Barth’s. I blame the rosé. No, actually, I thank the rosé.

If you go south along the shore, past Miraflores and Barranco, you will reach Chorrillos. While not part of many tourist itineraries, it’s a quaint, off-the-beaten-path seaside area offering marvelous ocean views and sandy strolls. It’s also great for real-deal ceviche, sold right on the beach at cute, family-owned stalls. You can’t taste fresher seafood, but since these kitchens are not the gleaming steel labs found in upscale eateries, be sure to patronize places where you see lots of locals lining up. Bird-watchers love Pantanos de Villa, a wildlife refuge in Chorrillos that’s home to more than 170 avian species.

Because it’s a major cruise port there are plenty of tacky restaurants on St. Thomas, but it doesn’t take a lot of effort to get under the skin of the island and find places where the locals eat. One such restaurant, Gladys’ Cafe, serves up traditional Caribbean fare and is known as one of the best on the island. Skip the a la carte menu and instead get one of the lunch plates including curried chicken or goat served with red beans and rice, mac and cheese and fried plantains.

Are there any nobler or more beautiful horses in the world than the gray-white Lipizzans who wow audiences with their high stepping at the Spanish Riding School? In the 16th century, the Hapsburg empire used Andalusian horses to create the breed in Lipizza (located in Slovenia). As they have for centuries, the Lipizzans perform their acrobatic haute école dressage in the Hofburg Palace’s Winter Riding School arena, an all-white baroque hall designed by Fischer von Erlach. Riders still wear the traditional uniform of bicorne hats and tailcoats, part of the reason UNESCO granted the Riding School its Intangible Cultural Heritage status. In addition to watching the performances, visitors can also tour the stables and sit in on morning training sessions set to classical music.

When it opened in June 2021, Resorts World Las Vegas became the newest casino resort on the Las Vegas Strip—a title it will hold until the Fontainebleau Las Vegas opens at the end of 2023. The hotel, owned by a Singaporean company, has established a reputation for its food and beverage options. The star of the show is Crossroads Kitchen, the first fully plant-based fine-dining restaurant in town, with such highlights as a “foie gras” made of chestnuts and a vegan caviar made of kelp. Located near St. George’s University, the all-inclusive True Blue Bay Boutique Resort is also right on a marina and just a five-minute drive from the airport, putting it at the center of all the action. Though it doesn’t have its own beach, it does offer shuttles to Grand Anse, which is a mere 10 minutes away, plus there’s plenty else to do on property. There are four small but well-maintained pools; a spa that uses local ingredients like chocolate and nutmeg for its treatments; an open-air yoga studio with treetop views; and a top-notch dive school that offers quick courses as well as multi-day PADI certifications. Guests already certified to dive can take advantage of four dives per day included in their stay, while landlubbers can opt for rum and chocolate tastings, cooking classes, non-motorized watersports, and fun kids’ activities.

When hunger strikes, head to on-site restaurant Dodgy Dock, which regularly hosts theme nights like Street Food, Romantic BBQ, and Cocoa Thursdays. Should you prefer to cook for yourself, accommodations here, which range from rooms to suites to villas, include kitchenettes and outdoor seating with epic views. Villas can even sleep up to six people and feature private plunge pools for added luxury.

Having been raised on National Geographic magazines, I have always been fascinated by western landscape of America. The jagged peaks of Tetons have been on my to-see list ever since I have known the works of Ansel Adams. Last labor day weekend, my husband and I could finally make a trip to Grand Teton National Park in northwestern Wyoming. We started our trip by flying into Salt Lake City, Utah and then drove about 5 hours north to Jackson Hole in Wyoming. The roads are beautiful, the landscape mind blowing. We were in the Jackson Hole area for about 4 days and one of the days we left our car behind and instead rented a bike to go back and forth between the Teton National Park and Yellowstone Nat Park. It was worth every single aching muscle :)
