    Chef Normand Laprise’s impact on Montréal’s culinary scene starts with the dishes served at Toqué, but it extends to the many restaurants headed by young chefs who honed their skills in his kitchens. Among the most notable is Montréal Plaza, opened in 2015. Charles-Antoine Crête, who worked with Laprise for 14 years, presides over this contemporary brasserie along with Cheryl Johnson, a former sous-chef at Toqué. The choice of location—on the Plaza St-Hubert, an outdoor shopping street with 400 businesses linked by a trademark green canopy—surprised some given that it’s a high-end gourmet restaurant, but the 70-seat Montréal Plaza includes a number of small rooms that create a sense of intimacy in what could be a cavernous space. The menu consists of small plates intended to be shared, with dishes like baloney cannelloni and a Caesar salad with chicken livers embodying Crête’s approach to cooking: irreverent, fearless, and (almost) always surprisingly delicious.

    Even though you may have never been here before, Montréal’s Place St-Louis, in the Plateau neighborhood off of rue St-Denis, will probably look familiar thanks to the many tourism posters and guidebook covers that display its image. The graystone Victorian row houses, with details in pink, purple, and other eye-popping hues, embody a certain Montréal attitude—grounded in history yet with a playful, contemporary edge. The square was laid out in 1876 and has been described as one of Montréal’s most beautiful, with a European elegance thanks to its tree-lined paths and fountain. Students of poetry may want to pay homage to Émile Nelligan. A monument to the beloved Québecois writer sits in the southeast corner of the square near the house on avenue Laval where he once lived.

    The choice of whether to build a church following a Gothic Revival or neoclassical design involved more than just aesthetics in 19th-century Québec. The former tended to be associated with Protestantism, and so the construction of the Catholic Basilica of Notre-Dame in that style raised eyebrows. When the St-Jacques Cathedral was destroyed by fire in 1852, the architects who designed a new church for the site, the Mary Queen of the World Cathedral, opted for the neoclassical style that was more typical of Catholic buildings. Constructed from 1874 to 1895, it is a quarter-scale version of St. Peter’s in Rome, complete with coffered vaults and twisting columns in imitation of those of Lorenzo Bernini’s baldachin in the Eternal City. The building’s green copper dome makes a statement, too, looming as it does over the largely Protestant neighborhood. The stucco crucifix by sculptor Philippe Hébert is one of most important works of art in the church.

    Located in Old Québec, not far from the St. Lawrence River, the Musée de la Civilisation (Museum of Civilization) is an enormous (for Québec City, at least) museum with lofty ambitions. Exhibits cover just about every culture imaginable—at any given time you might find Greek sculptures displayed alongside totem poles, or an inquiry into Egyptian ideas of the afterlife juxtaposed with Australian Aboriginal artworks. Most of the time you can count on at least one exhibition focusing on some aspect of Québecois or Canadian culture, from the history of trapping to spotlights on individual Québecois artists and designers. Many of the exhibits, like a recent one focused on cats and dogs, are designed with kids in mind, with engaging, interactive installations. Even if you’ve been here before, every visit to the museum is, by design, a new experience.

    One of the most convivial Garifuna dining spots in Hopkins is run by the entrepreneurial Tina, born and raised in the village. Sample local dishes, such as the breakfast fry jacks, and Tina’s Garifuna hudut—snapper simmered in a seasoned coconut stew, with a side of mashed plantain. You’ll also find a variety of surprising daily specials, including curries and lobster cooked several ways, and small bites like quesadillas. Locals come in and out all day. There are Friday evening Garifuna drumming sessions in the open-air thatched restaurant.
  • Austrian painter Christiane Ritter reluctantly followed her hunter husband to Svalbard in 1933, a time when much less was known about the far north than today. Five years later, her memoir, A Woman in the Polar Night, did the same job of informing people about the realities of arctic life that Marco Polo did for the Silk Road and Mongolia. Located at the mouth of the Liefdefd Fjord, Gråhuken Mountain plays a starring role in the novel as the location for the couple’s tarpaulin-covered hut, more than 97 kilometers (60 miles) away from the next human—and the place where Ritter gradually learns to love the isolation and harsh yet inspiring environment.

    Who would have expected that an ancient order of nuns would be generating buzz in Québec City’s restaurant scene? The Augustinian Sisters have been present in the city since the 17th century, devoted to caring for the poor and suffering. But as their numbers declined the nuns chose to venture in a new direction, and in 2015 they opened a wellness hotel and a restaurant. The menu is limited—soup, a salad bar loaded with grains and roasted vegetables, and a choice of a chicken, fish or vegetarian entrée. On a recent visit, a dish of chicken and wild rice in green curry sauce proved to be one of the most memorable meals in a city of excellent restaurants. The money raised by the hotel and restaurant helps support the nuns’ outreach programs—which makes eating well feel even better.

    Dining at the Grizzly House is an experience. As soon as you walk in, it’s obvious the place hasn’t changed much since it first opened decades ago. The interior is dark, and the wood-paneled wall is lined with taxidermy trophies. But the novelty of cooking at your own table makes up for it all. The food ranges from decadently simple—cheese, oil, and chocolate fondues—to exotic, like rattlesnake or alligator meat. The only thing more novel than preparing your own food is the rumors of the restaurant’s history as a swingers’ joint. Whether the stories are urban legend or not is hard to say, but telephones at each table that allow you to call any diner in the room seem to suggest there’s some truth to the gossip.

The river helped form what is now the Sacred Valley, and along the way you’ll not only sense its power, but also get a feel for some less visited corners of the region it created. You’ll pass towering eucalyptus trees and the ruins of Inca terraces and more as you make your way down river, ending with a picnic lunch before returning to the hotel by car.     Superlatives reign at this massive Palm Beach resort. Among the outsize offerings? The biggest casino in Aruba, with more than 500 slot machines and 26 gaming tables, as well as the island’s largest spa. Its 414 accommodations aren’t lacking for space either: Each room has a walk-in closet, double-sink bathroom, and private balcony; the highest-end suites are so palatial their balconies alone measure up to a sprawling 500 square feet—with ocean views to sweeten the deal. When you’re not playing roulette or indulging in a moisturizing coconut-milk wrap, kick back in one of the beachside palapas, or practice your breaststroke in the free-form pool, complete with cascading waterfalls and a volleyball net (a serene adults-only pool features a swim-up bar if that’s more your speed). In keeping with the more-is-more theme, guests are spoiled for choice with seven on-site restaurants, bars, and cafés, including a Ruth’s Chris Steak House, where the 500-degree plates ensure another best—the hottest meal in town.

    Charco Azul, in the north of the island in Vega Baja, Puerto Rico, is one of the most well known swimming holes on the island, and accessible by a short path from the parking area. The hole is 15 feet deep in places, and ideal for swimming while enjoying the small waterfalls that feed into it.

    The beauty of the island doesn’t get more mesmerizing than this! Bring lunch and plan to stay for a while.

    Opened by local restaurateur Lisa Wong in 1992, Rosario’s started as a neighborhood café, where San Antonio residents came to satisfy their Tex-Mex cravings. Today, it’s a city institution, known for its south-of-the-border specialties and house favorites. Don’t miss the tantalizing albondigas con arroz (Mexican meatballs braised in a spicy broth and served with rice and queso fresco), or the flavorful enchiladas Mexicanas (three queso-filled enchiladas smothered in a fragrant chile-infused sauce). And be sure to wash it all down with a perfectly crafted margarita.

    There’s almost always a wait at this Mexican eatery, but it’s worth it. Located just off the northwest corner of downtown and within easy striking distance of a number of hotels, the flagship location serves around 700 hungry guests a day. When Ramon and Maria Cardenas opened the restaurant in 1985, it seated only 18 guests, but that location eventually burned down. After reopening in its current location to great fanfare, they’ve since opened a second location, the Red Iguana 2, just a few blocks away. Most recently, they launched “Taste of Red Iguana” in the new City Creek Mall, serving their classic meals food-court style.

    It’s not surprising that many Québec City chefs have been trained in classic French cooking. But a number of them are taking those skills in unexpected directions, incorporating unusual ingredients and devising their own signature preparations. One admired member of this new generation is Christian Lemelin, the innovative chef and owner of Le Restaurant SSS (Simple Snack Sympathique) and restaurant Toast! at Hôtel Le Priori. Sadly, Toast! is indefinitely closed following a fire in December 2017 (though hopes are that it will reopen soon). In the meantime, the more causal Le Restaurant SSS continues to serve its signature salmon and beef tartares, foie gras with fig spiced mustard, and mushroom risotto to Lemelin’s loyal patrons and curious visitors to Québec City. There’s a five-course tasting menu at dinner that highlights the best of Québec’s bounty, both from the Atlantic and the province’s farms, and even a young taster’s menu for kids, including croque monsieur and poutine among the options.
